SALMON PASTA SALAD
Steps:
- If using canned salmon, pick the salmon meat from the bones and skin and set aside. If using cooked fresh salmon, break into large, bite-sized pieces.
- The cooked pasta will be added to the dressing while it is still hot so make the dressing and prepare the vegetables before cooking the pasta.
- Make the dressing in a very large bowl by combining the mayonnaise, sour cream, mustard, vinegar, sugar, celery salt, pepper and garlic powder.
- Measure out and prepare the rest of the ingredients.
- Place a large pot of salted water on to boil and cook the pasta to al dente.
- Just before pouring the pasta into a colander, add the frozen peas to the water then immediately pour the pasta and peas to drain into the colander.
- Shake off as much water as possible and dab the pasta with paper towels to soak up any last drops.
- *Pour the hot pasta and peas into the large bowl that has the dressing and gentle toss to combine.
- Add the red bell pepper and the onions and toss again.
- Finally add the cooked salmon and gently fold to combine without breaking up the salmon too much.
- Pour the mixture onto a sheet tray in a single layer* and place in the refrigerator uncovered for a quick cool down.
- After an hour, remove the tray from the refrigerator and pour into a large serving bowl and refrigerate again until completely chilled, about 1-2 more hours.
- Serve as a cold entrée over a bed of lettuce or as a side dish with a grilled meat.

- Boil 1 1/2 cups frozen shelled edamame as the label directs; drain and rinse under cold water. Toss with 1 cup each chopped tomato and cucumber, 1 minced red jalapeno and 1/4 cup chopped red onion. Add 1 tablespoon soy sauce, 2 teaspoons each brown sugar, lemon juice, lime juice and mirin or other rice wine, 1 teaspoon each grated ginger and rice vinegar, and 1/2 teaspoon sesame oil. Toss; season with salt and pepper.

- In small bowl, beat all dressing ingredients with wire whisk until well mixed.

ROASTED EDAMAME SALAD
Steps:
- Preheat the oven to 400 degrees F.
- Place the edamame, corn, scallion, garlic, olive oil, salt and pepper into a 13 by 9 metal pan and stir to combine. Place on the middle rack of the oven and roast for 10 to 15 minutes, just until the edamame begins to brown. Remove from the oven and place in the refrigerator until completely cool, approximately 30 minutes.
- Add the tomato, basil and vinegar to the edamame mixture and toss to combine. Taste and adjust seasoning, as desired. Serve chilled or at room temperature.

- Cook pasta in boiling water 5 minutes. Add edamame; cook 6 minutes or until tender. Drain and rinse with cold water.
- Drain and place in a large bowl.
- Heat a nonstick skillet coated with cooking spray over medium-high heat.

HONEY SOY GRILLED SALMON WITH EDAMAME
The natural richness of salmon and it's high amount of Omega-3's makes it a great choice for a healthy meal that doesn't need much added fat. By stuffing a mixture of fresh herbs into the fillets, through a pocket, the fish is infused with bright flavors. A light glaze during the cooking process is the final touch.

- Preheat the grill over medium-high direct heat. Oil the grill grates. Finely chop the cilantro and scallion and mix in the oil and ginger. Season with salt and pepper.
- Cut two 3-inch long slits through the skin lengthwise on the bottom of the salmon fillets, going about halfway into the salmon. Evenly stuff the slits with the herb mixture. Season the fish with salt and pepper.
- Stir together the lime juice, soy and honey until smooth. Place the salmon, skin side up, on the grill and cook until well marked, 3 to 4 minutes. Turn the salmon and continue to cook, brushing the tops with the sauce, until the fish is cooked through, about another 3 to 4 minutes. Transfer to a serving plate and sprinkle the tops with the sesame seeds. Serve with edamame and lime wedges.
- Broiler directions: Position an oven rack so that a baking sheet set on the rack is about 4-inches below the heat source. Preheat the broiler. Prepare the salmon as above and place the fillets, skin down, on a foil lined baking sheet coated with cooking spray. Broil, basting 3 to 4 times with the sauce, until just cooked through, about 6 to 7 minutes.

- Cook the pasta according to package directions, preferably tender. When it's done cooking, rinse with cold water and pour in a large serving bowl or container.
- Rinse and drain the black beans and edamame.
- Thaw the corn (and edamame).
- Mix the corn, edamame, and black beans together with the pasta.
- Make the dressing by putting all the dressing ingredients in a blender (except the sesame seeds) and pulse until fully mixed.
- Stir in the sesame seeds.
- Pour the completed dressing over the pasta, and let chill for about 45 minutes-1 hour then serve. Lasts about 4-5 days fresh and great for brown-bagging lunch; and if your workplace lacks a fridge, don't fear due to the lack of dairy products!

- Cook the pasta according to package directions; drain and set aside.
- In a mixing bowl, combine yogurt, mayonnaise, lemon juice, basil, oregano, salt, and pepper.
- In a separate bowl mix remaining ingredients, add it to the first mixture.
- Toss to coat pasta.
- Transfer to a container, and chill for at least 1 hour before serving.
- Before serving, make sure to gently stir it all up again well.
- Note: other kinds of pasta can be used in place of macaroni, to make it interesting -- small spirals, orzo, penne, etc. Don't be afraid to experiment!

EDAMAME, SALMON, AND PASTA SALAD

- In a large saucepan, bring the water to a boil over high heat. Add the pasta. Return to a boil and boil for 4 minutes. Stir in the edamame. Boil for 3 to 4 minutes, or until the pasta is just tender. Drain well in a colander.
- Meanwhile, in a large bowl, stir together the salmon, celery, onion, bell pepper, and tomatoes.
- Stir the pasta mixture into the salmon mixture.
- In a small bowl, whisk together the remaining ingredients except the lettuce. Pour over the salad, tossing to coat.
- Place 2 lettuce leaves on each plate. Spoon the salad onto the lettuce.
