This recipe is from the Jicama Grill, I think this is the best Shrimp Ceviche recipe in the world...it is like a colorful fiesta in a bowl.

2 -3 lbs shrimp, peeled and deveined
2 large tomatoes, diced
1 red onion, diced
1 bunch cilantro, diced
1 serrano peppers or 1 jalapeno, diced
8 limes, squeezed
8 lemons, squeezed
2 oranges, squeezed (preferably sour oranges)
2 large avocados, diced
2 large cucumbers, peeled and diced

Steps:

  • Blanche shrimp in boiling water for about 1 minute, then shock in ice cold water. Strain when cooled.
  • Cut shrimp into 1-inch pieces and add to bowl.
  • Add citrus juice and marinate for 2 hours.
  • Add red onion, tomatoes, chilies and cilantro, marinate for 2 more hours.
  • Add avocados and cucumber before serving.

1 cup fresh lime juice, divided
1 red onion, thinly sliced
1 can (8 oz.) tomato sauce
1/2 cup KRAFT Zesty Italian Dressing
1/4 cup orange juice
1 tsp. GREY POUPON Dijon Mustard
2 lb. frozen cooked cleaned small shrimp, thawed, drained
1/2 cup chopped fresh cilantro

Steps:

  • Pour 1/2 cup lime juice over onions in bowl; toss to evenly coat. Refrigerate 3 hours to marinate.
  • Mix tomato sauce, dressing, orange juice and mustard with remaining lime juice in large glass or plastic bowl. Add shrimp; toss to evenly coat. Refrigerate 1 hour.
  • Drain onions; discard marinade. Add half the onions to shrimp mixture; mix lightly. Refrigerate 1 hour.
  • Divide shrimp among 12 small serving bowls; top with remaining onions and cilantro.

1 1/2 pounds small or medium shrimp, shelled and deveined
Juice of 2 limes
Juice and grated rind of 1/2 orange
2 ripe tomatoes, peeled, seeded and chopped
1/2 cup finely chopped sweet onion
1 fresh mild to hot red chili, seeded and finely chopped, or to taste
Salt and hot red pepper flakes to taste
Freshly popped unbuttered popcorn

Steps:

  • Combine shrimp with lime juice, orange juice and orange rind. Allow to marinate at least eight hours.
  • Combine with remaining ingredients and refrigerate until ready to serve. Serve with popcorn on the side.

Makes a great appetizer, party snack, side dish or main course! Also try using assorted seafood such a tilapia, crab, scallops, etc. I included the ketchup, but you can use sweet Ecuadorian tomato sauce as traditional or skip it altogether as I prefer! Some also like it on the side and let the guests choose. You can also place a dollop on the side of the martini glass as some restaurants do. You can flash cook the shrimp if preferred by placing in boiling water for 2 minutes before peeling and deveining them. You can make this with only an hour or so of "cooking" in the citrus juices, as you prefer. Also...I use 2-3 jalapenos and occasionally habenero for extra pep! Serve with a crisp but fruity sauvignon blanc (rochioli or girard)

1 Belgian endive, spears separated
1/2 cup ketchup

Steps:

  • Peel and devein shrimp. Pat dry.
  • In a large bowl, whisk the ketchup with the orange juice. Add the lime and lemon juices, garlic, jalapeño, oregano, pepper, cumin, cinnamon and cloves and season generously with salt and hot sauce. Add the shrimp, red onion, tomato and chopped cilantro. Cover and refrigerate for at least 8 hours or overnight; stir once or twice.
  • Spoon the shrimp and sauce into martini glasses or onto small plates, garnish with endive spears and cilantro leaves and serve.

This is one of my favorite family recipes. It is great as a first course or for lunch. I usually use medium shrimp for this dish, but it doesn't really matter what size the shrimp are. It's not really hot, but you can use less hot sauce (or more if you like). We usually serve it with plain popcorn on top, though some skip the popcorn. Don't use buttery popcorn, only plain will do. Some Ecuadorians serve it with maiz tostado, which is a kind of fried/toasted corn kernal which doesn't pop. You can buy maiz in markets that carry Andean products. You have to saute them in hot oil until they get toasted. This dish is served in a wide champagne goblet or a dish in which you would serve a shrimp cocktail. Cooking time listed is for shrimp. Chilling time is not listed.

10 limes, juice of
1 lemon, large, juice of
4 valencia oranges, juice of
2/3 cup ketchup
1 teaspoon mustard, regular, not grainy, not dijon
2 -4 tablespoons tapatio hot sauce (use less if you don't like heat)
6 tomatoes, Roma, seeded and diced finely
2 red onions, cut in half and sliced very finely
1/2 cup cilantro leaf, chopped finely
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • 1. Bring 3 cups water to a low boil in a skillet. Add shrimp and turn after 30 seconds. After a total of 1 minute in the pan, drain shrimp and put into a large bowl to cool. If you use jumbo shrimp, you can cook for 1 1/2 minutes.
  • 2. Whisk together the lime, lemon and orange juices in a medium bowl. Whisk in the ketchup, mustard, Tapatio hot sauce, salt and pepper. Set aside.
  • 3. Add onions, tomatoes and cilantro to the shrimp. Mix.
  • 4. Pour juice mixture over the shrimp mixture. Stir it.
  • 5. Refrigerate the ceviche for at least 2 hours, but 4-6 hours results in much better flavor.
  • 6. Serve.

1 large tomatoes, halved, seeds removed
2 jalapeno peppers, halved, seeds removed
1 red bell pepper, halved, seeds removed
1/2 yellow onion, peeled
1 lb medium shrimp, deveined, peeled, halved lengthwise
3/4 cup lime juice, freshly squeezed
1/2 cup orange juice, freshly squeezed
1/4 cup tomato juice
1 tablespoon sugar
1 1/2 teaspoons kosher salt, plus more (or to taste)
Tabasco sauce
2 tablespoons chives, chopped
2 tablespoons scallions, finely sliced
1/4 cup cilantro, chopped

Steps:

  • Preheat the oven to 500 degrees.
  • Line a baking tray with aluminum foil.
  • Place the tomato, jalapenos, bell pepper and onion, cut sides down, on the pan.
  • Bake until charred, about 30 minutes.
  • Set aside to cool.
  • Meanwhile, bring a large saucepan of lightly salted water to a boil.
  • Add the shrimp and immediately turn off the heat. Allow the shrimp to sit in the water 1 1/2 minutes.
  • Remove the shrimp from the pot, place in a colander and run very cold water over the shrimp.
  • When cool, drain the shrimp on paper toweling.
  • Place shrimp to a large, non-reactive bowl and set aside. Slip the skins off the tomato and peppers.
  • Place the tomato, peppers and onion in a blender along with the lime juice, orange juice, tomato juice, sugar and salt. Blend until smooth.
  • Taste and season with Tabasco and salt to taste. Pour the sauce over the shrimp and toss.
  • Chill until ready to serve. Serve in small bowls garnished with chives, scallions, and cilantro.

1 qt fresh orange juice
1 tablespoon minced peeled fresh ginger
2 stalks fresh lemongrass (lower 6 inches only), thinly sliced crosswise
2 fresh Thai red chiles, minced, including seeds
For salad
2 lb large shrimp in shell (21 to 25 per lb), peeled and deveined
2 carrots, cut into very thin matchsticks
3 navel oranges
1 fennel bulb, halved lengthwise
1 small red onion, halved lengthwise
3/4 cup fresh lime juice
1/4 cup 1-inch pieces fresh chives
2 tablespoons finely chopped fresh mint
1/2 teaspoon salt, or to taste

a Japanese Benriner* or other adjustable-blade slicer; a rasplike Microplane zester

Steps:

  • Make lemon oil:
  • Cook oil, turmeric, and zest in a 1- to 2-quart saucepan over low heat, stirring frequently, 5 minutes. Transfer to a small bowl and chill at least 1 hour. Pour through a fine-mesh sieve into another small bowl (discard solids).
  • Make sauce:
  • Combine sauce ingredients in a 4- to 6-quart pot and boil, stirring occasionally, until reduced to about 2 cups, 30 to 40 minutes. Pour through a medium-mesh sieve into a bowl (discard solids), then set bowl in a larger bowl of ice and cold water to chill sauce.
  • Make salad:
  • Cook shrimp in cleaned 4- to 6-quart pot of boiling salted water until just cooked through, 1 to 2 minutes. Drain and transfer to another bowl of ice and cold water to cool. Drain and halve lengthwise, then chill, covered.
  • Heat 4 tablespoons lemon oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then sauté carrots, stirring, until just tender, about 3 minutes. Spread carrots with oil from skillet on a plate and chill.
  • Grate zest from oranges into a large bowl. Cut remaining rind and white pith from oranges with a sharp paring knife and discard. Cut orange segments free from membranes and add to zest.
  • Slice fennel and onion very thinly crosswise with slicer.
  • Stir carrots into orange mixture along with fennel, onion, lime juice, remaining lemon oil, chives, mint, and salt.
  • Mound salad on 8 plates and top with shrimp. Drizzle about 3 tablespoons carrot sauce around each mound.

Steps:

  • Preheat the oven to 500 degrees and line a sheet pan with aluminum foil. Place the tomato, jalapenos, bell pepper and onion, cut sides down, on the pan and roast until charred, about 30 minutes. Set aside to cool.
  • Meanwhile, bring a large saucepan of lightly salted water to a boil. Add the shrimp and immediately turn off the heat. Allow the shrimp to sit in the water 1 1/2 minutes. Immediately drain the shrimp and submerge in a large bowl of very cold water. When cool, drain and transfer shrimp to another large bowl and set aside.
  • Slip the skins off the tomato and peppers and place the tomato, peppers and onion in a blender with the lime juice, orange juice, tomato juice, sugar and salt. Blend until smooth. Taste and season with Tabasco and salt to taste. Pour the sauce over the shrimp and toss. Chill until ready to serve. Serve in small bowls garnished with chives, scallions, cilantro, popcorn and corn nuts.
