2 cups orzo pasta
5 tbsp olive oil (extra virgin preferred)
1/4 cup red onion (chopped)
1/4 cup black olives (chopped)
2 cups spinach (chopped)
1/4 cup feta cheese (crumbled)
5 leaves basil (chopped)
1/3 cup rice vinegar (or these substitutes)
Salt and black pepper to taste

Steps:

  • Boil your orzo pasta according to package instructions
  • Once boiling, immediately wash your orzo pasta with cold water
  • Once washed, drain all excess water from the orzo
  • Transfer the pasta to a serving bowl
  • Add 3tbsp olive oil to the pasta immediately and stir to prevent clumping
  • In a saucepan, add 2tbsp olive oil and bring to medium heat
  • Add your spinach and basil leaves and cook for about 2-3 minutes, until wilted
  • Turn off the stove and let it cool
  • Once cool, add to a serving bowl
  • Add the chopped olives, onions and feta crumbles to the same bowl
  • Now add the rice vinegar, salt, and pepper to the bowl
  • Add your orzo
  • Stir to combine, add more olive oil if needed
  • Enjoy!

3/4 cup orzo pasta
1 1/2 tablespoons olive oil
1 1/2 teaspoons minced garlic cloves
1/4 teaspoon crushed red pepper flakes
3 green onions, chopped
10 ounces fresh spinach leaves or 10 ounces thawed frozen chopped spinach
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 cup feta cheese, crumbled

Steps:

  • Boil water in a saucepan. Add orzo and boil uncovered for about 8 or 9 minutes.
  • While the orzo is cooking, heat oil in a large skillet over high heat.
  • Reduce heat to medium. Add garlic, red pepper, and onions. Cook for 2 minutes.
  • Add spinach and cook for an additional 4 minutes.
  • Drain orzo and add to spinach mixture. Toss in lemon juice, salt, and feta cheese. Stir well.

I love Whole Foods' Spinach & Feta Orzo salad, but when you're feeding the whole family, it gets pricey! I figured out the perfect recipe dupe that is so easy you'll make it all the time. Warning, it's so addicting and delicious.

2 cups Uncooked Orzo Pasta
5 tbsp Olive Oil Seperated
⅓ Red Onion Chopped Finely
¼ cup Kalamata Olives
2 cups Spinach Chopped
5 Basil Leaves Chopped
⅓ cup Rice Vinegar
¼ cup Feta Cheese Crumbles
Salt & Pepper To Taste

Steps:

  • Cook your orzo according to the package directions and then immediately rinse under cold water in your strainer. The cold water will wash off extra starch and bring the salad to temp. Add orzo to a large bowl and stir in 3 TBS olive oil to prevent pasta clumping.
  • Heat 2 TBS olive oil over medium-high heat in a saucepan and cook spinach and basil leaves until wilted. About 2-3 minutes. Let cool a minute and add to bowl.
  • Coarsly chop olives (mixed olives are an okay substitute) and feta cheese. Chop red onion into fine pieces. Add all three to the bowl.
  • Add rice vinegar, salt and pepper to taste, and give it a stir. Remember that most of the liquids will absorb into the salad overnight, add more olive oil as needed. Serve immediately or keep covered in the refrigerator for up to two days.

1/2 cup kalamata olive, chopped
1/2 teaspoon dried basil
1/4 teaspoon ground pepper
1 pinch salt
1/2 cup olive oil
1/2 cup balsamic vinegar

Steps:

  • Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water.
  • Transfer to a large bowl and stir in spinach, feta, onion, pine nuts,olives, basil and pepper. Toss with olive oil and balsamic vinegar. Refrigerate and serve cold.
