Turkey Chow Mein With Fresh Vegetables image

This recipe for chow mein is a great way to serve leftover turkey from Thanksgiving or Christmas dinner.

For the Vegetables:
2 cups fresh mushrooms (cleaned, and cut in half)
1 to 2 stalks celery (cut into 1-inch pieces)
1 red bell pepper (cut into bite-sized pieces)
1/2 red onion (peeled and chopped)
1 cup mung bean sprouts (rinsed and drained)
Optional: 1 clove garlic (chopped)
For the Sauce:
1/2 cup low-sodium chicken broth
1 tablespoon oyster sauce
1 tablespoon dark soy sauce
1 tablespoon cornstarch
For the Noodles:
2 cups noodles
3 to 4 tablespoons cooking oil (for stir-frying, as needed) divided
3 cups cooked turkey meat
Salt to taste
pepper (to taste)

Steps:

  • Gather the ingredients.
  • Mix together sauce ingredients, whisking in cornstarch last.
  • Cook noodles according to package directions.
  • Heat a wok or frying pan over medium-high to high heat.
  • Add 1 tablespoon of oil. When oil is hot, add mushrooms and stir-fry for a minute.
  • Remove from pan, add more oil, and stir fry celery and red bell pepper.
  • Remove from pan, add more oil, and stir fry onion and garlic.
  • Add turkey to pan. Cook for a minute, then add other vegetables back into pan.
  • Stir in bean sprouts.
  • Add sauce.
  • Bring to a boil, add noodles, and mix everything together.

1 medium onion, chopped
1 bunch celery, sliced
2 cans (14 ounces each) Chinese vegetables, drained
2 envelopes brown gravy mix
2 tablespoons soy sauce
Hot cooked egg noodles or rice

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 3-qt. slow cooker. Stir in the celery, Chinese vegetables, gravy mixes and soy sauce. Cover and cook on low until celery is tender, 4-6 hours, stirring occasionally. Serve with noodles.

4 teaspoons toasted sesame oil, divided
1 pound lean ground turkey
1 cup diced onion
1 ½ tablespoons minced garlic
1 (15 ounce) can low-sodium chicken broth
1 (8 ounce) can water chestnuts, drained and sliced
¼ cup low-sodium soy sauce
1 envelope onion soup mix
3 cups chopped celery, 1/4-inch pieces
1 cup sugar snap peas
¼ cup diced red bell pepper
1 (12 ounce) package fresh mung bean sprouts
1 pinch red pepper flakes

Steps:

  • Bring a large pot of water to a boil; cook noodles, stirring occasionally, until tender, about 6 minutes. Drain and toss with 1 teaspoon sesame oil.
  • Heat remaining sesame oil in a large saucepan over medium heat. Add turkey, onion, and garlic to the hot oil. Cook, stirring occasionally, until ground turkey is no longer pink, about 5 minutes. Drain excess grease and return to the pan.
  • Pour in chicken broth, water chestnuts, soy sauce, and onion soup mix. Stir until well combined. Add celery, snap peas, and bell pepper. Cook and stir until slightly softened, 3 to 5 minutes.

2 celery ribs, sliced
1 medium onion, chopped

4 cups shredded Chinese or napa cabbage

3/4 cup reduced-sodium chicken broth
1 tablespoon reduced-sodium soy sauce
1/2 teaspoon sugar

1 cup cubed cooked turkey
1 cup hot cooked rice

I thought I would start out with one of my simple recipes. Here is an easy skillet meal to help use up all that leftover holiday turkey we all have. Of course, you can substitute chicken or pork also.

1 cup coarsely chopped onion
1 tablespoon vegetable oil or 1 tablespoon peanut oil
1 cup diagonally sliced celery
1 -2 clove garlic, minced
2 cups diced cooked turkey
1 (14 ounce) can Chinese vegetables, drained
1 cup chicken broth
1/2 cup frozen peas
2 tablespoons cornstarch
2 tablespoons cold water
1 -2 tablespoon oyster sauce
1 tablespoon soy sauce

Steps:

  • In a large skillet, cook onion in oil over medium heat about 5 minutes.
  • Add celery and garlic and cook 5 minutes more.
  • Add turkey, mixed vegetables, broth and peas; cover and cook 5 minutes.
  • Mix remaining ingredients together and add to skillet.
  • Turn heat up to medium high.
  • Cook, stirring constantly 2 to 3 minutes until sauce is boiling and thickened.
  • Serve over chow mein noodles with rice and additional soy sauce if desired.

225g dried or fresh egg noodles
1 tbsp sesame oil, plus 1 tsp
100g boneless, skinless chicken breasts, cut into fine shreds
2½ tbsp groundnut oil
2 garlic cloves, finely chopped
50g mangetout, finely shredded
50g prosciutto or cooked ham, finely shredded
2 tsp light soy sauce
2 tsp dark soy sauce
1 tbsp Shaohsing rice wine or dry sherry
½ tsp freshly ground white pepper
½ tsp golden caster sugar
2 spring onions, finely chopped
2 tsp light soy sauce
2 tsp Shaoxing rice wine or dry Sherry
1 tsp sesame oil
½ tsp freshly ground white pepper

Steps:

  • Cook 225g egg noodles in a large pan of boiling water for 3-5 mins, then drain and put them in cold water. Drain thoroughly, toss them with 1 tbsp sesame oil and set aside.
  • Combine 100g chicken breasts, cut into fine shreds, with 2 tsp light soy sauce, 2 tsp Shaohsing rice wine or dry sherry, 1 tsp sesame oil, ½ tsp white pepper and ½ tsp salt for the marinade, mix well and then leave to marinate for about 10 mins.
  • Heat a wok over a high heat. Add 1 tbsp groundnut oil and, when it is very hot and slightly smoking, add the chicken shreds.
  • Stir-fry for about 2 mins and then transfer to a plate.
  • Wipe the wok clean, reheat until it is very hot then add 1½ tbsp groundnut oil.
  • When the oil is slightly smoking, add the 2 finely chopped garlic cloves and stir-fry for 10 seconds.
  • Add 50g finely shredded mangetout and 50g finely shredded prosciutto, and stir-fry for about 1 min.
  • Add the noodles, 2 tsp light soy sauce, 2 tsp dark soy sauce,1 tbsp Shaohsing rice wine or dry sherry, ½ tsp white pepper, ½ tsp golden caster sugar, 2 finely chopped spring onions and 1 tsp salt.
  • Stir-fry for 2 mins. Return the chicken and any juices to the noodle mixture. Stir-fry for about 3-4 mins or until the chicken is cooked.
  • Add 1 tsp sesame oil and give the mixture a few final stirs. Put on a warm platter and serve immediately.

4 (12 ounce) cans chicken broth
6 carrots
4 celery ribs
1 lb turkey, cooked and diced
12 ounces bean sprouts
1/2 cup cornstarch (more or less)
2 tablespoons soy sauce
1/4 teaspoon ginger
4 ounces water chestnuts
4 ounces baby corn

Steps:

  • Saute sliced carrots and celery until just tender/crisp.
  • Add broth but reserve about a cup of broth for corn starch.
  • Add corn, water chestnuts and ginger.
  • Mix cornstarch and reserved broth and pour it into the Chow Mein, it may take more or less than the 1/2 cup of corn starch.It can be mixed with the reserved broth or to water if you need more thickening.
  • Add soy sauce to taste and then add turkey and bean sprouts. I like a lot of bean sprouts so I usually add more than 12 oz.
  • Heat until thick and bubbly!
  • Serve with rice or chinese chow Mein Noolles.
