- Preheat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with cooking spray.
- Combine turkey, 1 egg, 1/4 cup bread crumbs, scallions, parsley, garlic powder, salt, and black pepper in a bowl. Form mixture into 6 patties using a 1/3-cup measuring cup.
- Beat remaining egg and hot sauce together in a bowl. Pour remaining bread crumbs into a bowl. Pour flour into a separate bowl.
- Coat patties with flour, egg mixture, and bread crumbs, in that order, and place on the prepared baking sheet. Lightly spray patties with cooking spray.
- Bake in the preheated oven until crisp, 18 to 20 minutes.

Steps:
- Heat oven to 425ºF and greased grill to medium heat.
- Bake fries in oven as directed on package. After about 10 min., mix remaining ingredients just until blended; shape into 4 (1/2-inch-thick) patties.
- Grill turkey patties 5 to 6 min. on each side until done (165ºF).
- Fill rolls with lettuce, burgers and onions. Serve with fries.

CAJUN TURKEY BURGERS WITH CAYENNE CURLY FRIES
Steps:
- Preheat oven to 400 degrees F.
- In large bowl combine all ingredients and toss until fries are well coated. Transfer to a baking sheet and bake for 20 minutes or until crispy.
- In small bowl combine all ingredients and mix until blended. Set aside.;
- Preheat a grill pan over medium-high heat.
- In a bowl mix together the ground turkey, onions and bell peppers, bacon pieces, Cajun seasoning, hot sauce, salt, and ground black pepper.
- Wet hands to prevent sticking, and form 4 patties of equal size. Spray grill pan with cooking spray.
- Reduce heat to medium and cook patties for 5 to 7 minutes per side or until cooked through.
- Place all the ingredients into a small serving bowl and stir until combined.
- Place the cooked burgers on the buns and serve with lettuce, tomato, onion and ranch dressing.

- Heat 1 tbsp oil in a pan and gently fry the onion for 5 mins until soft. Add the garlic and cook for 1 min. Add the oats and fry for 2 mins more. Tip into a bowl and set aside to cool.
- Add the rest of the ingredients to the cooled mixture and mix well with your hands. Season to taste and shape into 8 patties.
- Heat oven to 200C/fan 180C/gas 6. Heat the remaining olive oil in a large, non-stick frying pan and sear the burgers on each side until well coloured (3-4 mins). Transfer to a baking sheet and cook in the oven for 10-15 mins. Serve in rolls with Tangy tomato chutney (see 'goes well with') and cucumber slices.
- For the chutney heat 1 tbsp of olive oil in a pan and add 1 finely chopped onion. Cook for 5 mins until softened. Stir in 1 crushed garlic clove and cook for a further min. Add 1 tbsp sundried tomato paste, a 400g can good-quality chopped tomatoes and a pinch of sugar. Gently cook for 20-25 mins until rich and thick. Season to taste, then leave to cool before serving.

- Grate shallot with a medium plane of a grater into a large bowl. Be sure to collect the juice. Add turkey, mayonnaise, steak sauce, and parsley. Mix gently with your hands until fully incorporated. Divide into 4 equal portions and gently form into patties. Season tops with garlic salt and pepper.

- Preheat the oven to 450˚ F. Trim, peel and halve the butternut squash. Scoop out and discard the seeds. Cut the squash into 1/4-inch-thick matchsticks. Coat a rimmed baking sheet with cooking spray. Arrange the squash in an even layer on the baking sheet and coat with cooking spray. Bake until the squash fries are golden and crisp, about 25 minutes. - Preheat oven to 375 degrees. Brush a large rimmed baking sheet with oil; set aside.
- In a pie plate or shallow bowl, combine cornflake crumbs, cayenne, and 1 tablespoon salt. In a large bowl, toss potatoes with oil to coat. One or two at a time, dip potatoes in crumbs, turning to coat all sides; transfer to prepared baking sheet. Bake potatoes, turning once, until crispy on the outside and tender on the inside, 40 to 50 minutes. Remove from oven, and season with more salt.
- Meanwhile, in a medium bowl, combine beef, cheddar, 1 teaspoon salt, and 1/2 teaspoon pepper. With a fork, mix very gently to combine. Gently shape meat into 4 patties, each 4 inches in diameter and 1 inch thick; season with salt and pepper.
- Fifteen minutes before potatoes are finished baking, heat a large nonstick skillet over medium-high. Place burgers in skillet, and cook until browned on both sides and done to taste (4 to 6 minutes per side for medium-rare). Serve on hamburger buns with crispy oven fries, Burger Sauce, and desired garnishes.

- For the sweet potato fries, preheat the oven to 425 degrees.
- Wash and dry the potatoes
- With the skin on, slice into 1/2-inch-thick rounds; cut the rounds into 1/2-inch-thick finger-shaped pieces.
- Toss the potatoes in a bowl with the oil, chili powder, garlic powder and salt.
- On a baking sheet, spread the sweet potato fries in a single layer and roast, stirring every 10 minutes, until brown and tender, 30 to 35 minutes.
- Remove from the oven, transfer to a platter or bowl and sprinkle with a little more salt.
- Meanwhile, in a large bowl, mix the lean ground turkey with the diced chiles and season with salt and pepper.
- Shape into patties and refrigerate until ready to cook.
- Heat a large grill pan or nonstick skillet on medium heat and spritz with canola oil.
- Add the turkey patties to the grill pan and cook until browned on one side, about 4 minutes.
- Flip, reduce the heat to low, cover (if using a skillet) and cook until the juices run pale pink, about 4 more minutes.
- Top with the reduced-fat pepper-jack cheese during the last minute.
- Toast the rolls in the oven or in a toaster oven. Alternatively, grill them 1 minute on each side.
- To assemble: On a platter, place the fries and a burger on a bun and top with lettuce, tomato, onion and avocado slices. Squeeze lime juice over the fries and serve.
