Easy Tofu No-Meat Balls (Vegan and Gluten-Free) image

A fun way to add vegan protein to your spaghetti! From Vegetarian Meals for People-on-the-Go by Vimala Rodgers. Feel free to add other Italian seasonings.

1 lb firm tofu, drained, blotted, and mashed
1/2 cup quick oats, uncooked (make gluten free by changing to cooked rice or rice flakes or crushed corn flakes)
2 tablespoons Braggs liquid aminos or 2 tablespoons soy sauce
1/4 cup fresh parsley, minced
2 teaspoons onion powder
1 teaspoon garlic powder
1/2 cup cornstarch
1/2 cup nutritional yeast
2 tablespoons sesame oil (or any oil for frying)

Steps:

  • Combine first 6 ingredients in medium mixing bowl and use your hands to mix well. Shape into 1 1/2" balls, and roll in mixture of corn starch and nutritional yeast.
  • Saute balls in oil until browned. Add to your favorite pasta dish!

3 -4 medium potatoes
1 vegetable bouillon cube
1 cup ground almonds (a coffee grinder works well for grinding nuts)
4 tablespoons ground flax seeds
salt & pepper, to taste
1 medium onion, chopped
4 -5 tablespoons olive oil or 4 -5 tablespoons vegetable oil

Steps:

  • Place potatoes in medium saucepan, cover with water, add vegetable cube, and boil until potatoes are soft.
  • Drain water from potatoes (saving the water to make gravy), mash and let cool.
  • In the meantime, heat oil in small frying pan, add onions and cook until they just start to brown.
  • Place flax seed in small bowl, add ¼ cup of hot water and let stand for about 10 minutes for flax seed to absorb the water.
  • When the potatoes have cooled add the soaked flax seed and water, ground almonds, salt, pepper, and cooked onions.
  • Mix together and roll into small balls.
  • Heat olive oil in large fry pan; add the balls and brown nicely on all sides. Transfer the balls into a shallow cooking dish, and cook for approximately ¾ hour at 350°F.
  • While the meat(less) balls are cooking, make a vegetarian gravy.
  • Pour over the balls and continue cooking for an additional 20 minutes.

  • Preheat oven to 400 degrees Fahrenheit. This doesn't require a large pan so if you have a toaster oven, it will work just fine. Cut a slit into the tofu packaging and drain out most of the water. Remove the packaging and wrap the tofu in a piece of paper towel and then a clean tea towel.
