This Taco Cheese Ball could not be easier to make! It is loaded with Mexican cheese and taco seasoning for a simple and addictive appetizer recipe that's perfect for parties and beyond!

Ingredients

2 cups Mexican cheese (shredded)
16 ounces cream cheese (softened)
1 ½ tablespoon taco seasoning
2 tablespoons fresh cilantro (finely minced)
½ cup pecans (chopped)

Steps:

Add Mexican cheese to a food processor and pulse until crumbly.
Add the Mexican cheese, cream cheese, and taco seasoning to a large bowl and beat with a hand mixer until fully combined. Scrape down the sides of the bowl as needed.
Cover the mixture and chill in the refrigerator for at least 2 hours.
Mix together the minced cilantro and the chopped pecans in a medium bowl. Form the cheese mixture into a ball and roll it in the nut mixture until evenly coated. Plate and serve with tortilla chips or crackers.

The secret ingredient in these apps is a link of fresh chorizo-the spicy Mexican pork sausage (not to be confused with the cured Spanish kind). It does double duty here, adding a zesty taco kick and keeping the meatballs extra moist.

3/4 pound ground beef
1 link fresh chorizo (3 to 4 ounces), casing removed
1 large egg
1/4 cup fine yellow cornmeal
2 tablespoons tomato paste
1 tablespoon chili powder
1 tablespoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon granulated onion
Kosher salt and freshly ground black pepper
2 cups corn tortilla chips
2 ounces Cheddar, cut into 30 cubes just under 1/2 inch thick
Shredded iceberg lettuce, guacamole, pico de gallo and sour cream, for serving

Steps:

Preheat the oven to 425 degrees F. Line a baking sheet with parchment.
Mix together the ground beef, chorizo, egg, cornmeal, tomato paste, chili powder, cumin, oregano, granulated onion, 1 teaspoon salt and a few grinds of pepper with your hands in a large bowl. Scoop the mixture into tablespoon-sized portions. For each, press 1 cube of cheese into the center, press the meat around it to seal, and roll into a smooth ball.
Put the chips in a plastic bag, seal and crush with a rolling pin. Drop 3 or 4 meatballs at a time into the bag, and roll them around to lightly coat with the crushed chips. Arrange the coated meatballs on the prepared baking sheet, and bake until the outsides are browned and the cheese is melted inside, 10 to 12 minutes.
Serve the meatballs on a platter over a bed of shredded lettuce with guacamole, pico de gallo and sour cream on the side.

My mom made this cheeseball every Christmas when I was growing up. It is still one of my favorites! I am not sure of the ranch dressing's envelope size. I don't think it comes in multiple sizes though.

8 ounces shredded cheddar cheese
8 ounces sour cream
8 ounces cream cheese (softened)
0.5 (8 ounce) envelope ranch dressing mix
1/2 cup chopped pecans

Steps:

mix cheddar cheese, sour cream, cream cheese, and ranch dressing mix.
chill for 1 hour or until set.
roll in chopped pecans.
serve with Ritz crackers.

2 (8-oz) packages cream cheese, softened
1 cup shredded Mexican cheese blend
1 (4-oz) can of Old El Paso™ diced green chiles, drained
1 (1-oz) package Old El Paso™ taco seasoning mix
1/4 cup sliced green onions (about 2 green onions)
1 teaspoon lime juice
1 cup crushed tortilla chips (about 3 cups whole)
Tortillas chips and sliced red and green bell pepper for serving

Steps:

In a food processor, add the cream cheese, shredded cheese, diced green chilies, taco seasoning, green onions, and lime juice. Pulse well until ingredients are completely combined.
Line a bowl with plastic wrap. Spoon the mixture on top of the plastic wrap and wrap completely forming a ball.
Chill in the fridge (or the freezer for faster chilling) for at least an hour until ball is firm.
In a food processor, crush chips until fine.
Unroll ball from plastic wrap and roll in the crushed chips. Cut slices with a knife and serve with chips and bell peppers.
