The classic combination of peaches and cream is as simple as it sounds: peaches, lightly sweetened and simmered, need only a splash of cold heavy cream and nothing more. Just remember to make this ahead of time for the peachiest results.

- Cut each peach in half along the crease, twist open, and remove the pit. Peel and slice. Cut slices in half to get roughly 2 cups of sliced peaches.
- Bring sugar and water to a boil in a saucepan over medium-high heat. Boil until a syrup forms, about 3 minutes. Stir in peaches until coated. Bring syrup back to a light simmer, about 1 minute. Immediately remove from heat and pour mixture into a bowl.
- Transfer peaches into a large bowl using a slotted spoon. Pour in heavy cream and stir to combine. Divide mixture between serving glasses, cover with plastic wrap, and refrigerate until completely chilled and cream has absorbed all the peach flavor, at least 3 hours.

- Spray a 9 x 13" pan or glass dish with non-stick cooking spray.
- Cream the powdered sugar and cream cheese together.
- Place peaches in pan, spread cream cheese mixture over peaches.
- Sprinkle cake mix on top.
- Lightly sprinkle cinnamon, then place pats of butter on cake mix.
- Bake at 350 degrees for 25-40 minutes.
- Cool and serve. May top with whipped cream or ice cream.

SUMMER SLOW-COOKER COBBLER

- Make the filling: Grease the insert of a large slow cooker (5 to 6 quarts) liberally with the 1 tablespoon softened butter. Place the peaches and berries in the insert and sprinkle with the lemon zest, juice, granulated sugar, flour and salt and toss to coat.
- Make the topping: In a small food processor, process the pecans, flour, oats, granulated sugar, brown sugar, dried buttermilk powder (if using), cinnamon and salt until well blended. Add the butter and pulse just until the butter is pea-sized (about 5 pulses).
- Sprinkle the topping over the fruit. Place a kitchen towel between the insert and the lid (to absorb condensation). Cook on high for 90 minute to 2 hours. Serve with vanilla ice cream.

I couldn't find a cobbler recipe that was exactly what I was looking for, so I threw this together. This is my first submitted recipe, so please be kind when ripping it to shreds!

- Preheat oven to 350 degrees F (175 degrees C). Butter an 8-inch square baking dish.
- Mix 1 cup flour, milk, melted butter, 1/2 cup brown sugar, vanilla extract, 1 teaspoon cinnamon, and baking powder together in a bowl until batter is combined.
- Combine 1/4 cup brown sugar, 4 teaspoons flour, 1 1/2 teaspoons cinnamon, and allspice together in a bowl; add water and mix. Stir peaches into brown sugar filling. Spoon filling into the prepared baking dish. Spread batter over the filling; top with white sugar.
- Bake in the preheated oven until filling is bubbling and top is golden brown, 45 to 60 minutes.

PEACHES AND CREAM COBBLER
Posted by request. This cobbler is a "dump" recipe and the juices of the pineapple and frozen peaches mixes with the cake mix while baking to form a cake layer that is both gooey and crispy on top. It is a recipe from a local PBS cooking show QED cooks.

- Preheat oven to 350 degrees.
- Spread crushed pineapple with its juices in the bottom of a 13x9 inch pan.
- Next scatter one bag of frozen peaches over the pineapple.
- Dump the white cake mix on top of the peaches.
- Scatter second bag of frozen peaches over the cake mix.
- Sprinkle the optional raisins or pecans.
- Sprinkle the brown sugar over the raisins.
- Next evenly pour the melted margarine over the entire pan.
- Bake 55-60 minutes, or until the edges are crispy golden and pulling away from the side of the pan.
- Serve warm with vanilla ice cream, frozen yogurt, or whipped cream.
- Enjoy!

DOWN HOME SUMMER PEACHES
A chewier version of a no-bake peach cobbler or peach crisp. I make this for my husband in our 'down home' farming community where Calhoun County peaches are extra-sweet! The peaches must be in their peak season to be sweet enough; canned peaches will not be as good!

- Melt butter in a large skillet over medium heat. Pour quick oats over butter; cook and stir until oats are warmed, about 30 seconds. Drizzle maple syrup and corn syrup over the oats and stir to coat. Sprinkle brown sugar over the oats and immediately remove skillet from heat; stir mixture until the sugar melts and the oats are coated, 1 to 2 minutes.
- Pour the oats mixture into a bowl; add chocolate chips, almond extract, and vanilla extract. Gently stir the mixture to distribute chocolate chips throughout the oats mixture; spread onto a flat, shallow pan to cool completely.
- Divide peach slices between 2 bowls. Sprinkle oats mixture over the peaches.

- in large bowl stir together all filling ingredients except peaches.
- stir in peaches.
- pour batter into 13x9" baking pan.
- in medium bowl stir together all cobbler ingredients, except butter, egg and milk.

- crumble mixture over peaches; sprinkle with 3 tablespoons sugar.
