World's Easiest Yeast Bread recipe - Artisan, NO KNEAD image

Recipe video above. This super crusty homemade bread recipe is going to blow your mind! The world's easiest yeast bread that's just like the very best artisan bread you pay top dollar for, with an incredible crispy, chewy crust, and big fat holes like sourdough. Recipe is forgiving so don't fret if things don't go perfectly, it will be salvageable. SEE NOTES for options like no dutch oven, different yeast, MAKE AHEAD up to 3 days!

Provided by Nagi

Categories     Bread     Sides

Number Of Ingredients 5

3 cups (450g) flour (, bread or plain/all purpose (Note 1))
2 tsp instant or rapid rise yeast ((Note 2 for normal / active dry yeast))
2 tsp cooking / kosher salt (, NOT table salt (Note 3))
1 1/2 cups (375 ml) very warm tap water (, NOT boiling or super hot (ie up to 55°C/130°F) (Note 4))
1 1/2 tbsp flour (, for dusting)

Steps:

  • Mix Dough: Mix flour, yeast and salt in a large bowl. Add water, then use the handle of a wooden spoon to mix until all the flour is incorporated. Dough will be wet and sloppy - not kneadable, but not runny like cake batter. Adjust with more water or flour if needed for right consistency (see video at 17 sec, Note 5).
  • Rise: Cover with cling wrap or plate, leave on counter for 2 - 3 hours until it doubles in volume, it's wobbly like jelly and the top is bubbly (see video at 24 seconds). If after 1 hour it doesn't seem to be rising, move it somewhere warmer (Note 6).
  • Optional - refrigerate for flavour development (Note 9): At this stage, you can either bake immediately (move onto Step 5) or refrigerate for up to 3 days.
  • Take chill out of refrigerated dough - if you refrigerated dough per above, leave the bowl on the counter for 45 - 60 minutes while the oven is preheating. Cold dough does not rise as well.
  • Preheat oven (Note 7) - Put dutch oven in oven with lid on (26cm/10" or larger). Preheat to 230°C/450°F (220° fan) 30 minutes prior to baking. (Note 8 for no dutch oven)
  • Shape dough: Sprinkle work surface with 1 tbsp flour, scrape dough out of bowl. Sprinkle top with 1/2 tbsp flour.
  • Using a dough scraper or anything of similar shape (cake server, large knife, spatula), fold the sides inwards (about 6 folds) to roughly form a roundish shape. Don't be too meticulous here - you're about to deform it, it's more about deflating the bubbles in the dough and forming a shape you can move.
  • Transfer to paper: Slide a large piece of parchment/baking paper (not wax paper) next to the dough, then flip the dough upside down onto the paper (ie seam side down, smooth side up). Slide/push it towards the middle, then reshape it into a round(ish) shape. Don't get too hung up about shape. In fact, lopsided = more ridges = more crunchy bits!
  • Dough in pot: Remove piping hot dutch oven from oven. Use paper to place dough into pot, place lid on.
  • Bake 30 minutes covered, then 12 minutes uncovered or until deep golden and crispy.
  • Cool on rack for 10 minutes before slicing.

NO-KNEAD COUNTRY BREAD

No-Knead Country Bread image

This delicious and gorgeous loaf is part recipe, part science experiment, and part fun family project when you're all stuck in the house together looking for things to do. Even though it takes many, many hours, the texture you get is just incredible. Spread with butter and jam, if desired.

Categories     Bread     Yeast Bread Recipes

Time 20h50m

Yield 12

Number Of Ingredients 5

3 ½ cups white bread flour
½ cup sprouted spelt flour
¼ teaspoon active dry yeast
2 cups cold water
1 ½ teaspoons fine kosher salt

Steps:

  • Place white bread flour, whole wheat bread flour, and yeast into a large mixing bowl and stir with a wooden spoon. Pour in cold water and mix with a wooden spoon or spatula until a very wet, sticky dough comes together, about 3 minutes. Add the salt and mix another 2 to 3 minutes. Scrape down the sides of the bowl. Cover with foil. Allow dough to rise at room temperature for 18 hours.
  • Deflate the bubbly dough with a spatula by scraping down the sides of the bowl and folding the dough over itself, turning the bowl as you go around in a circular motion, about 12 times or so.
  • Scrape the dough onto a very well-floured surface with a spatula. Sprinkle the surface of dough generously with flour. Generously flour hands and then roll and fold dough on the table until you've formed a round or oval loaf shape that has a smooth surface, 1 to 2 minutes. The dough is very sticky, so add more flour if you need. The shape doesn't really matter, but a smooth surface is the goal.
  • Transfer to a Silpat®-lined baking sheet and let rise, uncovered, until doubled in size, about 2 hours. The dough will spread out more than rise up, but this is normal.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Make 1 shallow slash down the middle of the dough with a very sharp knife or razor, being careful not to deflate the dough too much; the slash is optional. Spray the surface of the loaf very lightly with plain water to help the crust form.
  • Bake in the center of the preheated oven until nicely browned, about 30 minutes. Let cool on a rack before cutting.

DELI-STYLE RYE - NO KNEADING KNEADED!

Deli-Style Rye - No Kneading Kneaded! image

This is an amazingly easy and delicious rye bread for those of us who either don't have a bread machine or who downright fear bread making. (Both, in my case) But "Artisan Bread in Five Minutes a Day" changed all that for me. The 5 minutes refers to active effort. Mix the ingredients into a container all at once, then let it sit for 2 hours. Make immediately or store in the fridge, using it over the next couple of weeks. This recipe makes four 1-pound loaves and is great on the first day, but even better on subsequent days. Along with the caraway seeds, which give this bread its classic flavor, what sets this rye apart from other rustic loaves is that there is no flour on the top crust; instead it's glazed with a cornstarch wash, which serves the triple function of anchoring the caraway seeds, allowing the slashing knife to pass easily without sticking, and giving the loaf a beautiful shine. Easily doubled or halved. Don't let the wordiness of the steps discourage you; it's just really detailed. For ease and best results, use a pizza peel and a pizza or baking stone.

Categories     Yeast Breads

Time 35m

Yield 4 1-pound loaves, 16 serving(s)

Number Of Ingredients 8

3 cups lukewarm water
1 1/2 tablespoons granulated yeast (1 1/2 packets)
1 1/2 tablespoons salt
1 1/2 tablespoons caraway seeds, plus more for sprinkling on top
1 cup rye flour
5 1/2 cups unbleached all-purpose flour
cornmeal, for pizza peel
1/2 teaspoon cornstarch

Steps:

  • MIXING AND STORING THE DOUGH: Mix the yeast, salt and caraway seeds with the water in a 5-quart bowl or lidded (not airtight) food container.
  • Mix in the remaining dry ingredients without kneading, using a spoon, or, if you have access, a 14-cup capacity food processor (with dough attachment) or a heavy-duty stand mixer (with dough hook). If you're not using a machine, you may need to use wet hands to incorporate the last bit of flour.
  • Cover (not airtight), and allow to rest at room temperature until the dough rises and collapses (or flattens on top) approximately 2 hours.
  • The dough can be used immediately after the initial rise, though it is easier to handle with cold. Refrigerate in a lidded (again, not airtight) container and use over the next 14 days.
  • ON BAKING DAY, dust the surface of the refrigerated dough with flour and cut off a 1-pound (grapefruit-sized) piece. Dust the piece with more flour and quickly shape it into a ball by stretching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter-turn as you go. This should take no longer than 30 seconds max. You want to handle the dough as little as possible during this step. elongate the ball into an oval-shaped loaf. Allow to rest and rise on a cornmeal-covered pizza peel for 40 minutes.
  • TWENTY MINUTES BEFORE BAKING TIME: preheat the oven to 450F, with a baking stone placed on the middle rack. Place an empty broiler tray on any other shelf that won't interfere with the rising bread.
  • MAKING THE CORN WASH: Using a fork, blend 1/2 teaspoon cornstarch with a small amount of water to form a paste. Add 1/2 cup water and whisk with the fork. Microwave or boil until mixture appears glassy, about 30 to 60 seconds on high. It will keep in the refrigerator for 2 weeks.
  • Using a pastry brush, paint the top crust with cornstarch wash and then sprinkle with additional caraway seeds. Slash with deep parallel cuts across the loaf using a serrated bread knife.
  • Slide the loaf directly onto the hot stone. Pour 1 cup of hot tap water (do not boil) into the broiler tray and quickly close the oven door. Bake for about 30 minutes or until deeply browned and firm. Smaller or larger loaves will require adjustments in backing time.
  • Allow to cool before slicing or eating, but when you do -- O'M'GAWD!

NO-KNEAD BREAD

No-knead bread image

This easy Italian-inspired no-knead bread is designed to fit into the working week - enjoy as a simple snack dipped into balsamic vinegar and olive oil

Provided by Miriam Nice

Categories     Side dish, Snack

Time 1h10m

Yield Makes 1 loaf (cuts into 10-12 slices)

Number Of Ingredients 5

¼ tsp fast-action dried yeast
500g strong white bread flour , plus extra for dusting
3-4 rosemary sprigs, leaves picked
2 tsp sea salt
2 tbsp olive oil

Steps:

  • Pour 500ml warm water into a large bowl and sprinkle over the yeast. Stir to distribute the yeast, then add the flour, rosemary leaves and sea salt. Once everything is well mixed and you have a very, very soft dough (don't worry if it's sticky, you won't be kneading it), cover the bowl with cling film and leave to rise overnight, or for 8-12 hrs.
  • Once the dough has risen, brush the inside of another large bowl with the olive oil and dust with 1-2 tbsp flour. Carefully tip the bread, which will be very soft and bubbly, into the floured bowl and dust the top with more flour. Cover again with cling film and leave to prove for 1 hr.
  • Heat oven to 200C/180C fan/gas 6. Place a large casserole dish, small roasting tin or cake tin in the oven to heat up. When it's really hot, take it out of the oven, line it with a square of baking parchment or a silicone liner and quickly tip in the dough. Sprinkle with a little more flour and bake for 45 mins-1 hr or until the bread is risen, golden and, if you tap the crust with your knuckles, it sounds hollow.
  • Turn the bread out onto a wire rack and leave to cool for 10-15 mins before slicing. Delicious served warm with olive oil, balsamic vinegar and sea salt flakes.

FABULOUSLY EASY WHITE BREAD

Fabulously Easy White Bread image

An amazingly delicious and simple recipe that anyone can make. It comes out beautifully and requires very little skill. It is so rewarding to make, and especially so when people come back for seconds. I got this recipe from The Fannie Farmer Cookbook and made a few minor alterations. Bon Appetit!

Categories     Yeast Breads

Time 3h30m

Yield 2 Loaves, 10-12 serving(s)

Number Of Ingredients 8

2 tablespoons shortening
2 teaspoons salt
2 tablespoons sugar
1 cup hot milk
1 cup hot water
1 package dry yeast
1/4 cup warm water
6 cups all-purpose flour (approx.)

Steps:

  • Mix shortening, salt, and sugar in a large bowl for about 2 minutes.
  • Do not worry if the shortening does not completely melt, but make a good attempt.
  • Add the hot milk and water.
  • Let cool to lukewarm.
  • In a small bowl, mix yeast with 1/4 cup water.
  • Let stand 5 minutes.
  • Add 3 cups flour and yeast all at once and mix until well blended.
  • Add 2 more cups of flour, one cup at a time, mixing until blended well.
  • Pour dough onto lightly floured board.
  • (It will not actually"pour," so scrape out remnants with a spatula or potlicker.) Knead for two minutes with floured hands.
  • Let rest for ten minutes.
  • Dough will be very sticky.
  • Adding enough of the remaining flour to keep the dough from sticking, knead the dough until smooth, elastic, and pliable (about 8-10 minutes.) Place the dough in a large, greased bowl, turning once to grease.
  • Cover and allow to rise in a warm spot for about an hour or until doubled in bulk.
  • Punch dough down and let rise to previous size and perhaps a little bigger (about 30-45 minutes.) Split dough into two halves.
  • Place each half in a loaf pan and cover.
  • Allow to rise until doubled in bulk (anywhere from 30 minutes to 1 1/2 hours) Bake in 425 degree oven for 15 minutes.
  • Remove from oven and cover in a cloth.
  • Change oven heat to 375 and bake for 15 minutes.
  • Remove pan from oven and immediately remove from pan.
  • Knock lightly on the bottom of the loaf.
  • If a hollow sound is made, bread is done.
  • If not, return to the pan and bake 5-15 minutes.
  • Allow to cool for 30 minutes before slicing.
  • Notes for great crusts: For a hard, crisp crust, brush the top with cold water three or four times while baking.
  • For a soft crust, brush with cold milk or melted butter before baking.
  • For a shiny crust, brush a mixture of egg yolk and one tbsp milk on bread before baking.

EASY NO KNEAD BREAD (DUTCH OVEN BREAD)

Easy No Knead Bread (Dutch Oven Bread) image

Easy Dutch Oven No Knead Bread recipe is made with only 4 ingredients and takes 5 minutes of prep time! If you want to make delicious homemade bread that looks & tastes like it came from a fancy bakery but actually takes very little effort, this dutch oven bread recipe is for you!

Categories     bread     Side Dish

Time P1DT55m

Number Of Ingredients 4

3 cups all-purpose flour
2 tsp active dry yeast
1 ½ tsp sea salt
1 ½ cups warm water (105 degrees F)

Steps:

  • Combine the flour, yeast, and salt in a large bowl and stir to combine.
  • Add the water and mix until the dough forms a ball.
  • Cover the bowl with plastic wrap (sprayed with cooking spray) and a damp tea towel.
  • Let dough sit covered at room temperature for 18-24 hours.
  • After 24 hours (or at least 1 hour before you want to serve) preheat the oven to 450 degrees F.
  • Place a 2 3/4 quart dutch oven (or a 2.4L baking dish) with a lid in the oven while it is preheating. (Note: Readers have used a 5 qt. dutch oven with success).
  • While oven is preheating, transfer the dough from the bowl onto a floured surface.
  • Form the dough into a ball, adding a few TBS more flour if needed. The dough should still be slightly loose. Then cover it with a floured towel while the oven is preheating. (Important note: The dough ball will be loose and "floppy." That is how it should be as this is a very moist bread which is what makes it so irresistible. You will not have a firm ball, it will look a little flat).
  • Carefully remove the hot baking dish from the oven. Remove the lid and spray the dish with cooking spray or line it with parchment paper.
  • Gently put the dough ball into the baking dish so it's evenly distributed.
  • Cover and bake for 30 minutes.
  • Remove the lid and bake for an additional 15 minutes, or until the loaf is golden brown.
  • Remove the loaf from the baking dish and let it cool on a rack before slicing. To keep it warm, cover with a tea towel.

EASY WHITE BREAD FOR LARGE 13" PULLMAN PAN

Easy White Bread for Large 13

This recipes fits a 13-14" Pullman Pan. Easier ingredient list than the King Arthur Flour recipe. I mix it in my ABM, then shape and set in the pan for the second rise. You can hand knead or use your mixer. I get 20 slices out of this recipe. A favorite for sandwiches and toast. You don't have to use the Pullman pan, and if you don't, use two 8" loaf pans and get two nice puffy loaves.

NO-KNEAD LOAF BREAD

No-Knead Loaf Bread image

This no-knead bread recipe takes no more than 7 to10 minutes of actual hands-on time. Just mix the ingredients, let rise, briefly shape, then bake.

Provided by Diana Rattray

Categories     Bread

Time 5h35m

Number Of Ingredients 5

3 cups flour (all-purpose or bread flour)
1 1/2 teaspoons yeast (instant)
1 1/4 teaspoons salt (kosher)
Optional: 2 teaspoons sugar (or honey)
1 1/2 cups water (room temperature)

Steps:

  • Gather the ingredients.
  • In a large mixing bowl, combine the flour, yeast, salt, and sugar or honey, if using.
  • Use a whisk or spoon to blend well.
  • Slowly add the water and stir with a wooden spoon or your hands, until well mixed.
  • Cover the bowl with plastic wrap and set in a draft-free place to rise for 4 hours.
  • Grease an 8-by-4-inch loaf pan with butter.
  • Scrape the dough out onto a well-floured surface, such as a silicone mat, parchment paper, or a cutting board.
  • With floured hands, shape the dough into a rough rectangle about 8 1/2 inches by 12 inches. Add small amounts of flour, if needed, to keep it from sticking to the surface. Try to handle the dough gently so it doesn't deflate too much. You want lots of little air bubbles through the loaf.
  • Gently fold the ends to form a rough loaf shape. Drop it into the prepared pan.
  • Cover the pan loosely with a clean, lightweight dish towel, and set in a draft-free place for 1 hour, or until it is approximately double in size.
  • Heat the oven to 425 F. With a sifter or fine-mesh sieve, dust the risen loaf with a little more flour.
  • Bake the loaf for 25 minutes, until it's a deep golden brown and sounds hollow when tapped.
  • Remove from the oven and turn the bread out onto a rack to cool completely before slicing.
  • Enjoy!

NO KNEAD BREAD

No Knead Bread image

A very easy bread recipe that is absolutely delicious!

Provided by emh123

Time 10m

Yield Serves 6

Steps:

  • Find yourself a suitable container that will fit in your fridge over night such as a largish Tupperware sandwich box (it will all make sense later)
  • Pour 360ml warm water into the box and add the sachet of yeast and stir until dissolved
  • Add 500g white bread flour and the salt, stir with a fork until all the flour has been incorporated, flatten with the back of the fork
  • Pop the lid of your box on top but don't close tightly, you don't want it to explode!
  • Leave it on the work top for about 2 hours for the yeast to do its thing
  • After 1 1/2 to 2 hours it should have doubled in size, it's now time to put it to bed in the fridge overnight..
  • After 24 hours or so take out the dough and tip onto a floured surface and fold onto itself a couple of times with floured hands, there's no need to do more than this
  • Shape the dough and put onto a baking tray to rise a second time, approx 1 hour depending on the warmth of your kitchen, score the top
  • After half an hour preheat your oven to 200 c
  • When you're ready to cook your loaf add a cup full of water to the tray in the bottom of the oven and bake your bread for half an hour, it should sound hollow to the touch when tapped and be a lovely golden brown
  • This dough can be left in the fridge for up to a week

  • In a large bowl stir together flour, salt and yeast. if adding rosemary, slightly crush it and add. Add crushed garlic (if using). Add water and using a spoon mix well.
  • The dough will be wet and shaggy .Don't over work the dough. The less you work with it, more fluffy and soft the bread will be.
  • Cover and let the container be on kitchen counter for 8-12 hours. (I prefer doing it overnight). The dough will rise and look bubbly at the surface.

  • The flour/liquid ratio is important in this recipe, so measure carefully. Your best bet is to weigh the flour; or measure it by gently spooning it into a cup, then sweeping off any excess.
  • Combine all of the ingredients in a large mixing bowl, or a large (6-quart), food-safe plastic bucket. For first-timers, "lukewarm" means about 105°F, but don't stress over getting the temperatures exact here.
  • Mix and stir everything together to make a very sticky, rough dough. If you have a stand mixer, beat at medium speed with the beater blade for 30 to 60 seconds.
  • Next, you're going to let the dough rise. If you've made the dough in a plastic bucket, you're all set — just let it stay there, covering the bucket with a lid or plastic wrap; a shower cap actually works well here.
  • Cover the bowl or bucket, and let the dough rise at room temperature for 2 hours. Then refrigerate it for at least 2 hours, or for up to about 7 days. (If you're pressed for time, skip the room-temperature rise, and stick it right into the fridge).
  • When you're ready to make bread, sprinkle the top of the dough with flour; this will make it easier to grab a hunk. Grease your hands, and pull off about 1/4 to 1/3 of the dough — a 14-ounce to 19-ounce piece, if you have a scale.
  • Plop the sticky dough onto a floured work surface, and round it into a ball, or a longer log. Don't fuss around trying to make it perfect; just do the best you can.
  • Place the loaf on a piece of parchment (if you're going to use a baking stone); or onto a lightly greased or parchment-lined baking sheet. Sift a light coating of flour over the top; this will help keep the bread moist as it rests before baking.
  • Let the loaf warm to room temperature and rise; this should take about 60 minutes (or longer, up to a couple of hours, if your house is cool). It won't appear to rise upwards that much; rather, it'll seem to settle and expand.
  • When you're ready to bake, take a sharp knife and slash the bread 2 or 3 times, making a cut about 1/2" deep. The bread may deflate a bit; that's OK, it'll pick right up in the hot oven.

  • In a large bowl mix together the flour, yeast, and salt. Add the water and mix with a wooden spoon until you have a shaggy, sticky dough. You want it to be quite sticky, it will be OK, trust me.
  • Cover the bowl with a plastic wrap and set aside to rest at room temperature (but not in direct sunlight) for 12-18 hours - it’s best if you just let it rest overnight. After 12-18 hours the surface should be dotted with bubbles.
  • After rising, the dough will be quite loose and sticky. This is OK. Don’t add more flour. Don’t knead the dough. Instead transfer the dough to a floured surface and use floured hands to gently and quickly lift the edges of the dough in toward the center, folding the dough over onto itself. Tuck in the edges of the dough to make it round. Place the dough, seam side down, on a large piece of parchment paper. Cover the dough loosely with a towel or plastic wrap and let it rise at room temperature for 1.5-2 hours until it doubles in size (in cold weather rising will be slower).
  • A half hour before the dough is done with its second rise, preheat the oven to 450°F/230°C. Adjust the oven rack to the lower third position and place a large (6-8-quart) heavy pot and its lid.

  • Mix the flour, salt and yeast in a large bowl with a fork. Add olive oil, if using, and 2 cups of water (at about 70ºF—see Kitchen Notes). Stir with a wooden spoon until everything is mixed together—the dough should be sticky and shaggy. If it seems dry, add a tiny bit more water. Conversely, if it's not quite shaggy, add a little more flour.
  • Cover it with plastic wrap, or waxed paper, and let it sit for about 18 hours. Just let it sit there. It may take an hour or two less if your kitchen is on the warm side, and a bit longer if your kitchen runs cold. The dough is ready for the next phase when the top is dotted with bubbles.
  • Lightly flour a work surface. Pour the dough onto it (you may have to gently scrape it out of the bowl) and just fold it over a couple of times. Just pick up one side and fold it across and then do the same to the perpendicular side. The dough should be quite soft but not particularly sticky. If it is sticky, sprinkle it with flour and work it into the dough—the goal is that it doesn't stick to your hands or the surface. Put the plastic wrap on top of it and let it sit for 15 or 20 minutes.
  • Shape the dough into a ball. You will probably need to add just a little flour to keep the dough from sticking. Generously coat the tea towel with cornmeal (or just use a silicon baking mater). Set the dough on it, seam side down, and dust with more cornmeal.
