Easy Strawberry Mousse image

An easy, airy, strawberry mousse recipe that only requires 4 ingredients. The perfect light dessert that can also double as a stabilized strawberry whipped frosting!

3 cups heavy whipping cream
1 cup powdered sugar
1 3oz box of strawberry jello mix, just the powder
1/2 cup hot/boiling water, plus 2-4 ice cubes if desired to cool quicker

Steps:

  • Dissolve jello mix in hot/boiling water. Set aside to cool. Don't let it get chunky though.
  • Whip heavy cream and powdered sugar together until medium peaks form.
  • Once Jello mixture has cooled but is still runny (not chunky) slowly pour it into the cream mixture with mixer on low speed. (If jello mixture is to warm add 2-4 ice cubes to it to help cool but make sure it doesn't cool too much and become jelly. This will cause your mousse to have clumps in it.) NOTE: If jello mixture is too warm it will deflate the cream and become very runny).
  • Finish whipping strawberry mousse mixture until stiff peaks are formed then refrigerate until ready to serve.

12 1/2 ounces strawberries (3/4 pound)
1/2 cup granulated sugar
1 cup whole or whipping cream ((cold))
extra strawberries for topping

Steps:

  • Clean and slice the strawberries, In a blender or food processor add the sliced strawberries and the sugar and puree. Remove 1/2 a cup of puree and set aside.
  • In a cold bowl add the cream and beat until stiff peaks form. Then fold in the remaining puree (not the 1/2 cup) gently.
  • Divide the 1/2 cup of puree between the 4 small/medium** glasses and top with the strawberry mousse. Refrigerate for approximately 1 hour or even over night if desired. Top with fresh sliced strawberries and serve. Enjoy.
  • ** for size purposes, the glasses I used hold 1 cup of water.

My mom made this easy summertime dessert when we were growing up. It was always popular and so refreshing on a hot summer afternoon. (Cook time is freeze time for a "soft serve" consistency.)

1 (10 ounce) package frozen strawberries
1 pint sour cream
1 cup sugar

Steps:

  • Mix three ingredients in freezer-proof large mixing bowl. Cover with plastic wrap and partially freeze. (about 45 minutes to an hour).
  • Remove from freezer and beat with electric mixer until smooth; about 1 minute. (There will be chunks of strawberries).
  • Pour into individual dishes or paper cups if desired. Return to freezer until firm and ready to serve! Will be "soft serve" consistency in about 3 hours. If you prefer it firmer and more like ice cream, freeze for at least 10-12 hours. Garnished with fresh strawberries if desired.

Make the most of strawberries in this quick dessert, with a silky mascarpone layer complemented by a tangy compote, crunchy ginger biscuits and pistachios

500g strawberries, hulled and halved, any larger ones quartered
1 lemon, zested and juiced
100g caster sugar
150ml mascarpone
300ml double cream
1 tbsp vanilla bean paste
4 gingernut biscuits, crushed
small handful of pistachios, roughly chopped (optional)
freeze-dried strawberries, crushed (optional)

Steps:

  • Put the strawberries, lemon juice, sugar and 2 tbsp water in a large pan over a medium heat and cook for 5 mins until the fruit has softened. Scrape into a bowl leave to cool. Tip 300g of the mixture into a blender (reserve the rest for later), blitz until smooth and sieve into a jug.
  • Whisk the mascarpone in a large bowl to soften, then add the double cream, vanilla bean paste and lemon zest, and whisk again until just starting to thicken. Fold in the blitzed, sieved strawberry purée to combine - it will thicken a bit more. Alternatively, swirl it through so you have layers of compote going through the mousse.Will keep chilled for up to a day.
  • Spoon or pipe the mousse into glass tumblers and top with the reserved strawberry compote, the gingernut crumbs, pistachios and dried strawberries, if you like.

This Easy Strawberry Mousse Cups recipe topped with a fresh Strawberry Compote is a deliciously light and fresh dessert, perfect for Summer!

500 gr (1.1 lbs) Strawberries (fresh or frozen)
50 gr (1/4 cup) Caster Sugar (or fine white granulated sugar)
1 1/2 teaspoon Vanilla Paste (or extract)
1 1/2 teaspoon Gelatin Powder (plus a little bit of cold water)
250 ml (1 cup) Heavy / Thickened Cream (or heavy whipping cream)
250 gr (0.5 lbs) Strawberries (fresh or frozen)
30 gr (2 1/2 tablespoons) Caster Sugar (or fine white granulated sugar)
15 ml (1 tablespoon) Lemon Juice
1 teaspoon Vanilla Extract

Steps:

  • Wash, hull then blend the strawberries until very smooth (see note 1 if using frozen strawberries). Place a thin mesh sieve over a small saucepan and pour the blended strawberries over it. Press the fruit through and discard any seeds or larger chunks (see note 2).
  • Add the Sugar and Vanilla. Whisk then turn on low heat and bring to a simmer.
  • While the strawberry puree is heating up, place the gelatin powder in a small bowl with a little bit of very cold water (see note 3). Stir then set aside for a couple of minutes until it solidifies and resembles a thick paste.
  • Remove the saucepan from the stove when it starts to simmer and whisk in the gelatin mixture until completely dissolved.
  • Transfer into a clean bowl or shallow pan and cover with plastic wrap touching the surface. Place in the fridge to cool down for 30 minutes to 1 hour (see note 4).
  • In the bowl of your mixer (or large mixing bowl if using a hand mixer), whip your heavy / thickened Cream until you reach stiff peaks.
  • Very gently fold the whipped cream into the strawberry mixture in three or four times with a silicone spatula.
  • Pour the mousse into the serving cups then place in the fridge to set for at least 2 to 3 hours - or preferably overnight.
  • Wash, hull and cut the strawberry in half. Place them in a small saucepan along with the Sugar, Lemon Juice and Vanilla.
  • Turn on low to medium heat and leave to simmer until the fruits have softened and the liquid starts to thicken - about 10 to 20 minutes depending on how soft the fruits are.
  • Leave to cool down slightly then transfer into a clean jar and place in the fridge to chill for 1 hour.
  • When chilled, pour over the set strawberry mousses (preferably just before serving) and garnish with a fresh strawberry.

  • Crush strawberries; drain and reserve juice. Set berries aside. Add enough water to reserved juice to measure 3/4 cup; pour into a saucepan. Bring to a boil. This is one of my hubby's delicious and eye-pleasing creations. He used tall parfait glasses, filled them 1/3 full of sliced strawberries, filled the glass the rest of the way with the strawberry mousse and then garnished it with a fresh, whole strawberry and sprig of mint. I should have taken a picture! DH used strawberries, but I look forward to trying it with other fruits such as mango, raspberries/blackberries (seived to remove the seeds) and peaches. Yum!

2 cups strawberries, fresh, hulled and sliced
1/4 cup sugar
1 (8 ounce) container Cool Whip, thawed
strawberry, whole (optional for garnish)
mint, fresh (optional for garnish)

Steps:

  • Place 2 cups of sliced strawberries in a medium bowl. Stir in sugar and allow to macerate at room temperature for 15-20 minutes.
  • Take 1 cup of the strawberry mixture and puree in a blender. Then add cool whip and blend until thoroughly combined, smooth and creamy.
  • Spoon the reserved strawberry mixture (including juice) evenly into the bottom of four tall parfait glasses. Then fill each parfait glass to the top with the "mousse".

Steps:

  • Put all but 2 strawberries into a pan along with 100ml water and the sugar. Over a medium heat, cook strawberries until soft enough to mash, about 3 mins. Take off the heat and squash the berries, using a fork, until pulpy. Add the marshmallows, then stir them into the hot strawberries until they dissolve. Leave to cool.

1/2 cup butter, softened
1/4 cup confectioners' sugar
1 cup all-purpose flour
FILLING:
2 pints fresh strawberries, divided
2 tablespoons lemon juice
3/4 cup sugar
2 envelopes unflavored gelatin
1/4 cup cold water
2 cups heavy whipping cream, whipped
Red food coloring, optional

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Stir in flour. Press onto the bottom of a 9-in. or 10-in. springform pan; prick with a fork. , Bake at 350° for 10 minutes. Reduce heat to 300°; bake 20-25 minutes longer or until lightly browned. Cool. , Meanwhile, for filling, puree enough berries (about 1-1/2 pints) to make 2 cups. Set aside remaining berries for garnish. Stir lemon juice and sugar into puree. , In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute.
