BLUEBERRY OATMEAL WAFFLES

Blueberry Oatmeal Waffles image

A whole grain waffle that is actually light and fluffy felt as likely as unicorns being real... until this recipe! These are a favorite in our house because they feel like a treat (which makes the boys happy) but are packed with whole grains and some fruit (which makes me happy). We love to have them with syrup on the first day and then make cream cheese sandwiches with them throughout the week for an easy, portable breakfast.

Provided by Jessica Braider

Time 40m

Number Of Ingredients 10

1 1/4 cups rolled oats (use wheat/gluten-free,if needed)
1 cup whole wheat flour (I like the white whole wheat from King Arthur Flour, use wheat/gluten-free, if needed)
3 Tbsp. sugar
1 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3 eggs (beaten)
2 cups low fat plain yogurt (or use any variety)
4 Tbsp. unsalted butter (melted)
1 cup blueberries or wild blueberries, fresh or frozen

Steps:

  • Preheat and grease your waffle iron. Preheat oven to 200.
  • Grind the oats in your food processor or blender until they are the consistency of whole-wheat flour.
  • In a medium bowl, whisk together the oat flour, other flour, sugar, baking powder, salt, and baking soda.
  • In another bowl, melt the butter and then whisk in the eggs. When well combined, whisk in the yogurt.
  • Add the wet ingredients to the dry and stir until just combined. Gently mix in the blueberries.
  • Ladle the recommended amount of waffle batter into the hot waffle iron, close the lid, and cook until the waffle is golden. Put cooked waffle in the oven to keep warm and repeat the process until all waffles are baked. Serve with extra blueberries and maple syrup.

  • Pre-heat your oven to 200F to keep waffles warm. In a large bowl, mix together all the ingredients except the frozen blueberries. Once everything is blended together then add the frozen blueberries and easily mix them in. (We've tried fresh and they didn't work as well in this recipe for us.) Now Pre-heat your waffle maker and let the batter sit for 2-4 minutes so it thickens up.
  • Pour about 1 cup of batter in the center of the waffle maker. (This will depend on the size of your waffle maker.) Spread it evenly over the pan. Close lid, (if your waffle maker is like mine, we have to flip it over) and cook for five minutes. Depending on the waffle maker it may need to cook for longer. If the waffle separates when you open the maker, close the lid and cook for another 2 minutes and check again. Place waffle in the oven to keep warm while you finish off the batter.
  • Serve immediately with other chopped fruit, maple syrup or even just some nut butter. Store leftovers in the fridge for up to 5 days or store in the freezer for longer.

  • Set the batter aside for 10 minutes to let the rolled oats soften. Please note that this batter is very thick. Preheat your waffle iron at medium-high temperature if you have that option. The waffle iron should be hot once the batter is ready.
  • I suggest spraying the top and bottom plates with some spray oil, but you can make it oil-free* by just relying on the nonstick coating. If you choose to use no additional oil, make sure the waffle is completely cooked. If any of the outside is not crispy, the waffle will tear, stick and generally make a mess.
  • Place about 1⁄3 cup (80 ml) of batter in the middle of the waffle iron and spread into a circle with a wooden spoon or silicone spatula. When you place the top down, the batter will spread. If your mixture gets too thick to spread, add a little nondairy milk to loosen it up.
