You can make these with slightly underripe peaches (which is handy if you happen to have a lot of them).

Ingredients

3 pounds ripe peaches ((about 5-6 cups diced))
2 tablespoons honey ((increase or decrease as desired) )

Steps:

Wash and peel the peaches with a paring knife or vegetable peeler.
Dice roughly and add to a medium pot. Add 1 cup water. Cover and bring to a simmer over medium heat, then remove the lid and cook for 25-30 minutes, stirring occasionally, or until peaches are soft when poked with a fork.
Stir in the honey, as desired according to how sweet you want them.
Mash slightly if desired, or serve as is with or without the liquid.
Serve as a simple side or over yogurt or oatmeal.

4 cups water
1/2 cup firmly packed brown sugar
1 8-ounce package mixed dried fruit
4 orange slices
1 cinnamon stick
1 1 1/2-inch piece vanilla bean, split lengthwise
Plain yogurt or sour cream
Ground cinnamon

Steps:

Combine all ingredients except yogurt and ground cinnamon in heavy medium saucepan. Bring to boil, stirring until sugar dissolves. Reduce heat and simmer until fruit softens, stirring occasionally, about 20 minutes. Transfer fruit only to glass bowl, using slotted spoon. Boil liquid until reduced to 1 cup, returning liquid exuded from fruit to saucepan, about 10 minutes. Pour liquid over fruit, discarding orange slices. Serve warm, room temperature or chilled, topping with dollop of yogurt and dusting of cinnamon.
