3 ¼ cups bread flour
1 cup warm water
¼ cup white sugar
1 large egg
2 tablespoons butter, softened
1 tablespoon active dry yeast
1 teaspoon salt
2 tablespoons butter, melted

Steps:

  • Grease a 9x13-inch baking dish.
  • Place bread flour, water, sugar, egg, 2 tablespoons softened butter, yeast, and salt into the pan of your bread machine in the order recommended by the manufacturer. Select the Dough cycle and press Start. When the cycle is complete, remove the dough and press down to deflate.
  • Divide dough into 15 equal pieces and form into rolls. Place rolls in prepared baking dish, brush with melted butter, and cover dish loosely with plastic wrap; let rise until doubled in volume, about 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake rolls in the preheated oven until the tops are golden brown, 12 to 15 minutes.

1 cup water (110 degrees F)
2 packages yeast (Do not use the quick rising in this recipe)
1/2 cup butter, melted
1/2 cup sugar
3 eggs
1 teaspoon salt
4 1/4 cups flour

Steps:

  • Combine water and yeast in lg bowl; let stand for 5 minutes.
  • With wooden spoon, stir in butter, sugar, eggs and salt.
  • Add flour, 1 cup at a time and beat in as much as you can.
  • (you will probably be able to use all the flour) Cover and refrigerate for at least 2 hours, or up to 3 days.
  • Grease a 13x9 baking pan.
  • Turn dough out onto floured surface.
  • Divide into 24 equal pieces.
  • Roll each piece into a smooth round ball.
  • Place in rows in prepared pan.
  • Cover and let rise for 1 hour; until doubled.
  • Heat oven to 375*.
  • Bake until golden brown, about 17 minutes.

4 -5 cups all purpose flour
2 tbsp rapid rise, instant yeast
1/3 cup granulated sugar
1 tsp salt
1 1/2 cups warm milk (, 110 degrees)
5 tbsp butter, softened
1 egg (, room temperature)
2 tbsp melted butter

Steps:

  • Combine 3 cups of flour, yeast, sugar, salt, warm milk, butter, and egg in the bowl of a stand mixer.
  • Attach the dough hook and turn the mixer on to the lowest speed and mix until flour is incorporated, scraping down the sides of the bowl as necessary.
  • Increase speed to medium and beat for 2 minutes.
  • Add 1/2 cup flour and blend with the dough hook until incorporated. And another 1/2 cup flour and repeat, mixing at medium speed for another 2 minutes until a ball of dough is formed.
  • Add additional flour as necessary. The dough should be slightly sticky and soft and pulling away from the edge of the bowl.
  • Transfer the dough to a lightly greased bowl and cover with a towel or plastic wrap. Let rise for 30 minutes at room temperature.
  • Remove the towel or plastic wrap and deflate the dough by punching down lightly.
  • Pinch off pieces of the dough and form 24 rolls. You can weigh them to keep the rolls close to the same size. Mine were about 2 ounces each but this will vary depending on how much flour you added.
  • Transfer the rolls to a lightly greased quarter baking sheet or 9 x 13 baking dish. Cover with a towel or plastic wrap and let rise for an additional 30 minutes at room temperature.
  • Preheat oven to 375 degrees. Bake the rolls for 12 to 15 minutes or until golden brown and cooked through. If the rolls are getting too brown, just tent the rolls with foil.
  • Remove rolls and brush hot rolls with the melted butter. Serve immediately or store cooled rolls in a plastic bag for up to 3 days.

2 envelopes (about 2 tablespoons) rapid rise or instant yeast
1/4 cup (50g) granulated sugar
1 large egg, (room temperature)
1 teaspoon salt
1 1/2 cups (367g) whole milk
2 tablespoons salted butter, (melted)
1 teaspoon kosher salt, (optional)

Steps:

  • Combine 3 cups flour, undissolved yeast, sugar, egg, and salt in a large bowl or in the bowl of your stand mixer fitted with dough hook.
  • Heat milk until very warm (110°F to 120°F).
  • Add warm milk to flour mixture. Knead 2 minutes at medium speed, scraping bowl occasionally if needed. Add 1/2 cup flour; knead 2 more minutes.
  • Add remaining 1/2 cup flour. The dough should be pulling away from the sides of the bowl and very soft. (If the dough seems too wet you may need more flour. Add in 1/4 cup increments until the dough has pulled away from the sides of the bowl while kneading.)
  • Cover with a clean towel and let REST 30 MINUTES.
  • Remove towel and punch down dough.
  • Divide dough into equal pieces and shape into balls. Place in greased 9x13 inch pan. Cover with plastic wrap and REST in a warm place - over 70°, preferably 75° - until doubled in size, about 30 minutes. (I had 6 left over and added them to a greased 7-inch pie dish and baked as directed.)
  • Bake in preheated 375°F oven for 12-17 minutes or until golden brown.
  • Brush with melted butter while warm.

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, combine the warm water, yeast and sugar. Let the mixture stand for 5 minutes.
  • Add 1 cup of the flour, as well as the salt, whole milk and melted butter and beat for 2 minutes.
  • Add an additional 1 cup of flour and beat on high speed for 2 minutes until the dough begins to form a ball. (If the dough is still very sticky, add an additional 1/4 cup flour as needed.)

  • Divide the dough into 12 pieces then roll each piece into a ball and arrange the balls in the prepared pan. Cover the pan with a towel then return it to a dark, warm place for 30 minutes.
  • Preheat the oven to 375°F. Uncover the rolls then bake them for 20 to 25 minutes until they are golden brown and cooked through.
  • Remove the rolls from the oven, brush them with additional melted butter and immediately sprinkle them with the sea salt (optional). Serve them warm.
  • If you want to prepare the rolls in advance, follow the directions up until you place the (unbaked) rolls in the baking pan then tightly cover the pan with plastic wrap. When ready to serve, remove the rolls from the freezer and place them in the fridge overnight then bring them to room temp to rise before baking them as directed.

1 1/2 cup whole milk (warmed to 110F)
4 Tbsp unsalted butter (melted)
1 Tbsp active dry yeast
1/3 cup granulated sugar
1 1/4 tsp salt ((we used fine sea salt))
4 cups all-purpose flour
1 Tbsp unsalted butter (melted to brush the tops of dinner rolls)
1/2 tsp kosher salt (to sprinkle finished rolls)

Steps:

  • In the bowl of your mixer, whisk together warm milk (about 110F) and 1 Tbsp sugar. Sprinkle the top with 1 Tbsp yeast and let sit 1 minute. Whisk together and let it sit for about 5 minutes until yeast looks foamy. Add 4 Tbsp melted butter, remaining sugar and salt.
  • Add flour half a cup at a time until the dough whisking to incorporate. Once the dough gets too thick, switch to the dough hook attachment and mix on speed 2 (you can also continue mixing by hand with a stiff spatula). Add about 4 cups of flour, adding the last 1 to 3 Tbsp of flour only if needed. The dough should feel sticky and tacky but should not stick to clean/dry finger tips.
  • Knead the dough with the dough hook in a stand mixer for 2 minutes or knead by hand (10 min), then place dough in an oiled bowl. Cover it with plastic wrap and let it rise about 2 hours in a warm place or until doubled in size.
  • Once the dough rises, turn it out onto a lightly floured surface and cut it into 15-24 even pieces depending on the shape of your baking dish. Roll each piece of dough into a ball and place them onto an oiled 9x13 casserole dish or baking sheet.
  • Cover the dinner rolls with plastic wrap and let them rise another 30-60 minutes in a warm place or until puffed (do not over-proof). Bake at 375F for about 23-25 minutes or until the tops are golden brown.
  • Immediately brush tops of dinner rolls with melted butter and set aside to cool to room temperature before serving.

3 tablespoons white granulated sugar, (divided*)
1/2 cup warm water, ((110-115˚F))
1 cup milk
1/4 cup butter, (melted)
1 1/2 teaspoons salt
4 cups bread flour, ((or all purpose four), plus about 1/4 cup extra for dusting your work surface)
2 tablespoons melted butter, (for brushing baked rolls)

Steps:

  • Heat oven to 200°F | 100°C (if using your oven to proof the dough).
  • Mix the yeast, 1 tablespoon of sugar and warm water in a large bowl. Let sit for 7-10 minutes until foamy and frothed.
  • While yeast is activating, combine the milk and butter in a 2-cup capacity microwave safe jug. Microwave on high for about 40-50 seconds, or until butter has half melted and milk is luke warm. Stir in remaining sugar and salt. Give it a light mix until the butter completely melts through the milk, and the sugar dissolves. Add to the yeast in the bowl.
  • Add in 2 cups of flour, giving it a light mix to combine with a wooden spoon, then add in the remaining 2 cups of flour. Mix until starting to pull away from the walls of the bowl (about 1-2 minutes). Turn out on a lightly floured work surface and use the extra 1/4 cup of flour in tablespoon increments to knead until smooth, elastic and slightly sticky (about 4-5 minutes kneading). (Lightly oil your hands if the dough gets too sticky.)
  • Transfer dough back into the bowl. Cover with a warm damp towel. TURN OVEN OFF and transfer bowl of dough to the warm oven, leaving the door ajar for the first 10-15 minutes or so. After 15 minutes, close oven door and allow the dough to double in size (another 45 minutes).
  • Scrape dough onto a lightly floured work surface or kitchen bench, knead lightly for about 30-40 seconds if needed to bring the dough together, and mould into a loaf shape. Cut in half, then cut both halves into 6 equal pieces (you should now have 12 equal pieces all together).
  • Working one by one, lightly flatten each piece of dough in the palm of your hands, then bring up all sides to form a peak on top (like a tent shape), and pinch and seal this peak. Flip it over and you should have a smooth top! Ensure there are no cracks. If there are, turn the roll upside down again and smooth the cracks out towards the peak you just made, pinching the seal again, and flip over to double check the top is smooth. (Use a light dusting of flour in your hands to prevent sticking if you need to.)
  • Arrange rolls, smooth side up into a lightly greased 9x13-inch baking pan or dish (you can line your pan or dish with parchment paper if you wish).Preheat oven to 375˚F | 190˚C (or 350°F | 180°C for fan forced ovens).
  • Lightly spray rolls with cooking oil spray, cover with plastic wrap and let rise again until just about doubled in size, (about 30 minutes).
  • Bake in a preheated oven for 20-25 minutes, or until rolls are golden browned. (Check them after 18 minutes to make sure they are ok.)
  • Lightly brush with a little extra melted butter, and transfer to a cooling rack.

2 1/2 teaspoons (or 1 package) active dry yeast
3 large eggs (room temperature, separated)
1 cup whole milk, room temperature
1/2 cup unsalted butter, room temperature - cut into tablespoons
1/3 cup + 1 tablespoon honey
5 1/2 cups all-purpose flour (separated)
2 teaspoons fine sea salt

Steps:

  • Add a 1/4 cup warm water to a large bowl or the bowl of a stand mixer fitted with the dough hook attachment. Sprinkle in yeast, gently stir and allow to sit for 5 minutes or until foamy.
  • In a small bowl, beat 2 large eggs and set aside. Also, have 1 cup of flour set aside in a small bowl.
  • Once the yeast is ready, add the room-temperature milk, butter, and honey, 4 1/2 cups of flour, salt, and the beaten eggs to the bowl. Mix on low speed until the dough comes together.
  • Increase the speed to medium-low/medium (speed 3 or 4 on a Kitchen Aid stand mixer), and knead for 5-7 minutes. Add the extra flour as needed, a tablespoon at a time to prevent the dough from sticking to the sides of the bowl. Otherwise, knead by hand adding flour as needed. Note, you may not need all of the extra flour. The dough is ready once it is soft to the touch and no longer super sticky.
  • Have ready a large, greased bowl. Form the dough into a ball and place it in the greased bowl. Loosely cover with plastic wrap and allow to rise in a warm area for 1 1/2-2 hours, until doubled in size.
  • Have ready a large floured work surface and two greased 9" cake pans. Punch down the dough and transfer to work surface. Using a knife or a bench scraper, cut the dough in half. Divide each half into 8 equal pieces and roll into a ball.
  • Place dough balls in pans, spacing evenly apart. Cover loosely with plastic wrap and allow to proof in a warm area once more, for another 45 minutes.
  • Preheat the oven to 375°.
  • To make the egg wash, whisk together the remaining egg and 1 tablespoon of water in a small bowl. Lightly brush the top of the rolls with the egg wash, and sprinkle with salt (preferably Kosher, if you have it).
  • Bake for 22 minutes, or until the rolls are cooked through and golden in color. Do not over bake. Place on a cooling rack for 10 minutes. Serve and enjoy.

  • Cover the pan with plastic wrap and let the rolls proof in a warm place until they are about double in size, about 60 minutes.
  • Preheat the oven to 375 degrees F and bake the rolls until browned and centers register 200 degrees, 30 to 35 minutes, rotating the pan halfway through.
  • Transfer the rolls to a wire rack using the foil for handles. Brush with the remaining tablespoon of melted butter.

This super Easy Dinner Rolls Recipe is a perfect recipe for someone inexperienced with yeast. Classic Dinner roll taste and perfect as a side dish for any meal , these soft no knead homemade yeast rolls are simply DIVINE, fast, and easy! Mix in 10 minutes, let rise for about 25 minutes and then bake for an additional 20, for an hour to ready roll.

3-1/2 cup flour (plus a bit excess for hands and counter)
1 teaspoon salt
1/3 cup vegetable oil
1 egg
1-1/4 cup warm water
1/3 cup white sugar
3 .25 oz fast acting yeast (0.25 oz each, also known as rapidrise or instant yeast)
1 tablespoon melted butter (for top of rolls)

Steps:

  • Grease a 9x13 baking pan with nonstick cooking spray. Set aside.
  • In a large mixing bowl, add all purpose flour, salt, vegetable oil and egg.
  • In a separate bowl, add warm water (not hot), granulated white sugar and RapidRise yeast and mix until dissolved.
  • Dump wet ingredients into dry mixing bowl that contains the flour and stir well. I use a wooden spoon to stir and a spatula once its starts to firm. Dough should pull away from the sides of the bowl to create a dough ball in the center of the bowl.
  • Turn dough onto a lightly floured surface and divide dough into 5 equal parts, and of those parts into 3 pieces, for a total of 15. Shape dough into a ball and place into prepared pan. Set pan on top of stove.
  • Turn on oven to preheat to 375 degrees.
  • Let dough set about 20 minutes to rise. The heat from the preheating oven will help this process. The dough is ready when its about double in size.
  • Bake rolls for 15-20 minutes or until slightly browning on top.
  • For additional golden brown that most people come to know with bread, remove rolls from oven and spread melted butter on top of rolls and return to the oven for 1 additional minute.
  • Remove from oven. Let bread set for a few minutes before cutting apart and serving with jelly, butter and honey.

1 cup (240ml) whole milk, warmed to about 110°F
2 and 1/4 teaspoons Platinum Yeast from Red Star instant yeast (1 standard packet)
2 Tablespoons granulated sugar, divided
1 large egg
1/4 cup (60g) unsalted butter, softened to room temperature and cut into 4 pieces
1 teaspoon salt
3 cups (390g) all-purpose flour or bread flour*
optional topping: 2 Tablespoons melted unsalted butter mixed with 1 Tablespoon honey

Steps:

  • Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer. Cover and allow to sit for 5 minutes. *If you do not own a stand mixer, you can do this in a large mixing bowl and in the next step, mix the dough together with a large wooden spoon/rubber spatula. It will take a bit of arm muscle. A hand mixer works, but the sticky dough repeatedly gets stuck in the beaters. Mixing by hand with a wooden spoon or rubber spatula is a better choice.*
  • Add the remaining sugar, egg, butter, salt, and 1 cup flour. With a dough hook or paddle attachment, mix/beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If the dough seems too wet to a point where kneading (next step) would be impossible, beat in more flour 1 Tablespoon at a time until you have a workable dough, similar to the photos and video above. Dough should be soft and a little sticky, but still manageable to knead with lightly floured hands.
  • Keep the dough in the mixer and beat for an additional 3 full minutes or knead by hand on a lightly floured surface for 3 full minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
  • Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size. (I always let it rise on the counter. Takes about 2 hours. For a tiny reduction in rise time, see my answer to Where Should Dough Rise? in my Baking with Yeast Guide.)
  • Grease a 9×13 inch baking pan or two 9-inch square or round baking pans. You can also bake the rolls in a cast iron skillet or on a lined baking sheet.*
  • When the dough is ready, punch it down to release the air. Divide the dough into 14-16 equal pieces. (Just eyeball it- doesn't need to be perfect!) Shape each piece into a smooth ball. I do this entirely in my hands and you can watch in the video tutorial above. Arrange in prepared baking pan.
  • Cover shaped rolls with aluminum foil, plastic wrap, or a clean kitchen towel. Allow to rise until puffy, about 1 hour.
  • Adjust oven rack to a lower position and preheat oven to 350°F (177°C). (It's best to bake the rolls towards the bottom of the oven so the tops don't burn.)
  • Bake for 20-25 minutes or until golden brown on top, rotating the pan halfway through. If you notice the tops browning too quickly, loosely tent the pan with aluminum foil. Remove from the oven, brush with optional honey butter topping, and allow rolls to cool for a few minutes before serving.
  • Cover leftover rolls tightly and store at room temperature for 2-3 days or in the refrigerator for up to 1 week.

Steps:

  • Put the milk (95-115 degrees Fahrenheit) and the butter in the bowl of a stand mixer. Sprinkle the yeast over the milk. (If the yeast is not instant yeast, let it sit for 5 minutes to activate.)
  • Add the sugar, eggs, salt, and flour. With a paddle attachment for your stand mixer, mix for a few seconds until just combined. Let this mixture sit for about 5 minutes.
  • Switch the attachment to the dough hook and knead on medium speed for 10 minutes.
  • Cover the dough and let it rise in a warm place for 30 minutes or until doubled.
  • Divide and roll dough into 15 balls. You may have more or less depending on the size you make the rolls.
  • Place in a greased 9x13 pan. Cover and rise for 15-20 minutes.
  • Bake at 375 for 13 to 16 minutes or until lightly browned.

3 teaspoons bread machine yeast or 3 teaspoons other instant yeast

1 large egg, lightly beaten
1 tablespoon milk
1 pinch salt
1 teaspoon sesame seeds

Steps:

  • In a large bowl, combine 3 1/2 cups flour, yeast, salt and sugar.
  • In a small saucepan, combine milk and butter, and place over low heat until milk is lukewarm.
  • Pour into bowl of dry ingredients, and mix with a fork to make a rough dough, adding more flour if necessary.
  • Using a mixer with dough hook, or by hand, knead dough until smooth and silky.
  • Place in an oiled bowl, and cover with plastic wrap.
  • Let rise in a warm place until double in size, about 1 hour.
  • Punch air out of dough.
  • Oil a baking sheet, and set aside.
  • Pull off pieces of dough the size of walnuts, and form into round balls.
  • Place on baking sheet almost touching, about 1/4 inch apart, in 6 rows of 5 each.
  • Cover with a kitchen towel, and let rise in a warm place 30 minutes.
  • Meanwhile, heat oven to 425 degrees.
  • When rolls have risen, make a glaze by beating together the egg, milk and salt.
  • Paint rolls with glaze.
  • Sprinkle one row with sesame seeds and the next with poppy seeds; leave the third row plain, and then repeat pattern.
  • (A teaspoon of seeds should decorate 2 rows.) Bake rolls until risen and golden brown, about 15 minutes.
  • Transfer to a cooling rack or serve immediately.
  • To serve, place on a plate so rolls can be torn off to be eaten.

Steps:

  • In a small bowl add the water and sugar, stir, then sprinkle the yeast on top, let sit for 5 minutes then stir to combine.
  • In the bowl of the stand up mixer whisk together the flour and salt, make a well in the middle and add the mashed potatoes and oil. Start to knead on low then add the yeast mixture and continue to knead on low/medium speed for about 3-4 minutes or until dough is smooth and pulls away from the sides of the bowl.

1 cup warm water or milk
1.5 teaspoons salt
4 cups flour
1/2 cup or 1 cube butter for stuffing rolls and prepping pan

  • Feed Sourdough starter the night before.
  • Bring sourdough starter to room temperature.
  • Preheat Oven to 115 degrees, then turn it off.
