SKILLET CHICKEN CORDON BLEU
A dear friend from my high school days shared this recipe with me. You might think it sounds complicated to make, but it's quite easy once you've tried it. -Nancy Zimmerer, Medina, Ohio

- Flatten chicken to 1/4-in. thickness. Top each with a slice of ham and cheese; fold to fit. Roll up tightly and secure with toothpicks. In a shallow bowl, combine the flour and paprika. Coat chicken with flour mixture. , In a large skillet over medium heat, melt butter. Cook chicken for 5 minutes on each side or no longer pink. Add grape juice and bouillon. Reduce heat; cover and simmer for 30 minutes or until chicken is tender., Remove chicken and keep warm. In a small bowl, combine cream and cornstarch until smooth. Gradually stir into pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken.

SKILLET CHICKEN CORDON BLEU
I love making Chicken Cordon Bleu which I usually bread, roll and bake. But I wanted something quick with the same ingredients and came up with this - lazy chicken cordon bleu made all in one skillet. This is great with roasted veggies or you can serve this with rice pilaf.

Steps:
- Season chicken with salt and pepper, to taste.
- Place the flour in a shallow dish. Lightly dredge the chicken with flour on both sides, shaking off the excess reserving the flour.
- In a small bowl combine the chicken broth, lemon juice, Dijon mustard and 1 teaspoon of the reserved flour, whisk until smooth.
- Heat a large nonstick skillet over medium-high heat. Melt the butter and add 1 teaspoon of the olive oil and half of the chicken.
- Cook 2 minutes on each side, until slightly golden, then transfer to a dish.
- Add remaining 1/2 teaspoon olive oil and remaining chicken and cook 2 minutes on each side.
- Set aside on a dish with the other pieces of chicken.
- Reduce the heat to medium-low, add the chicken broth mixture. Whisk scraping up any bits stuck to the pan then simmer 2 minutes to reduce slightly.
- Return the chicken to the skillet, top each piece with a slice of ham and a slice of swiss, cover the skillet and simmer medium-low for 3 to 4 minutes until the cheese melts.
- To serve use a spatula and transfer the chicken to each dish, spoon the remaining sauce over each piece.

- In a small bowl, mix together the mustard and mascarpone. Set aside.
- Preheat the broiler to high.
- Heat a large ovenproof skillet over medium-high heat. Add the oil and continue to heat for an additional 1 minute. Sprinkle the chicken breasts evenly with 1 teaspoon salt. Place the chicken in the skillet and cook on the first side until golden brown, about 4 minutes. Flip the chicken and continue to cook until just cooked through, about 2 minutes more. Remove from the heat.
- Lay 1/2 slice of cheese on each chicken breast. Lay 2 slices of ham on top of the cheese on each breast. Divide the mustard sauce evenly over the ham and top with the remaining cheese slices. Broil until the cheese is melted, golden brown and bubbly, about 2 minutes.

- Cook noodles according to package directions; drain., Meanwhile, sprinkle chicken with pepper. In a large cast-iron or other heavy skillet, heat butter over medium-high heat; saute chicken just until browned, 3-5 minutes. - Wet chicken with water, and dredge in breadcrumbs.
- Spray skillet with cooking spray and brown chicken.
- Cook until done.
- Place cheese on top of chicken breast, and fold ham on top of cheese.
- Cook until cheese melts.
- hint: browned chicken breasts can be put in a casserole before adding cheese and ham and placed in 300 degree oven to hold for serving.

This is a simple stove-top variation of Chicken Cordon Bleu. It's very simple because all of the ingredients are cut-up, so that the traditional flavor is there, but there is not all of the work of the traditional version. I usually double the sauce.

- In a 10-inch skillet over medium high heat cook the chicken breasts in the butter for 10 minutes or until browned.
- Remove chicken and set aside.
- In the same skillet add the wine and stir to deglaze the pan.
- Add the soup, cheese and ham.
- Heat to boiling, stirring often.
- Return chicken to skillet.
- Reduce heat to low.
- Cover and cook for 5 to 7 minutes or until chicken is completely cooked, stirring occasionally.

- Adjust oven rack to lower position and heat oven to 475 degrees. Pat chicken dry with paper towels and season with salt and pepper. Heat oil in large nonstick skillet over medium-hight heat until just smoking. Brown chicken, about 3 minutes per side. Transfer chicken to 13 x 9 in baking dish, smooth side up.
- Add cream, wine, 2 tsp mustard, tarragon salt and pepper to taste to skillet and bring to simmer. Remove pan from heat.
- Meanwhile, spread 1 teaspoons remaining mustard on each breast, lay 1 slice of ham on top and mound each with 1/4 cup cheese. Sprinkle cracker crumbs over cheese, pressing to adhere. Pour sauce around chicken without disturbing crumbs. Bake until chicken registers 160 degrees, about 15 minutes. Serve warm.

This is an easy version of cordon blue. If you have never tried to make it before because it sounds intimidating, then you are missing out! This is a really easy way to do it (as most are). I personally think this is a very inexpensive dish!

- Take chicken and place on a large cutting board. Put a piece of wax paper (or even saran wrap) over the chicken breast.
- Use a heavy pan, or mallet, and smash the chicken breast till it spreads out to about the size of 2 chicken breasts.
- Then place 2 pieces of ham on the chicken breast and then 2 pieces of cheese.
- Take chicken and roll up into a log. If it isn't holding together, place a couple toothpicks into the chicken to hold in place.
- Roll each piece in the flour, then in beaten egg, then in bread crumbs.
- Place the chicken breasts in a baking dish and place in oven at 375°F and bake for 30-45 minutes (or until chicken is cooked through).
- Cut each piece in 2 pieces, and serve!

- place slice of ham on chicken and a stick of cheese on smaller end of chicken roll up and afix shut with toothpicks.
- in skillet heat oil and seal chicken shut and brown outside of chicken a little bit place chicken in deep casserole dish.
- in bowl mix soup, water, milk, base and a dash of salt and pepper.
- pour soup mixture over chicken and sprinkle top with paprika.
- bake for 40-50 minutes at 350* until bubbly and brown on top.
