Easy Homemade Shrimp Fried Rice image

This is a quick and easy shrimp fried rice recipe that my kids all love! This recipe is best warm and fresh, but will keep airtight in the refrigerator for up to 5 days or in the freezer for up to 4 months. Reheat gently, as desired.

2 tablespoons sesame oil
2 tablespoons olive oil
1 pound uncooked medium shrimp, peeled and deveined
1 cup frozen peas and carrots
½ cup frozen corn
2 cloves garlic, finely minced, or more to taste
3 large eggs, lightly beaten
4 cups cooked rice
3 tablespoons thinly sliced green onions
3 tablespoons low-sodium soy sauce, or more to taste
½ teaspoon salt, or to taste
½ teaspoon freshly ground black pepper, or to taste

Steps:

  • Heat sesame oil and olive oil in a large nonstick skillet or wok over medium-high heat. Add shrimp and cook until they are bright pink on the outside and the meat is opaque, about 3 minutes, flipping halfway through.
  • Remove shrimp from the skillet using a slotted spoon, allowing oils and cooking juices to remain in the skillet. Place shrimp on a plate and set aside.
  • Add peas and carrots and corn to the skillet and cook, stirring intermittently, until vegetables begin to soften, about 2 minutes. Add garlic; cook and stir for 1 minute. Push vegetables to the side of the skillet, pour eggs into the other side, and cook to scramble, stirring as necessary, 3 to 4 minutes.
  • Stir shrimp, rice, and green onions into the skillet. Drizzle evenly with soy sauce, season with salt and pepper, and stir to combine. Cook until shrimp is reheated through, about 2 minutes.

Number Of Ingredients 13

2 tablespoons sesame oil
2 tablespoons canola or vegetable oil
1 pound medium-large fresh shrimp, cleaned (approximately 15-20 count shrimp)
1 cup frozen peas and diced carrots blend (I don't thaw and use straight from the freezer)
1/2 cup corn (I use frozen straight from the freezer)
2 to 3 garlic cloves, finely minced or pressed
1/2 teaspoon ground ginger
3 large eggs, lightly beaten
4 cups cooked rice (I use white, long-grain or brown may be substituted. To save time use two 8.8-ounce pouches cooked and ready-to-serve rice)
2 to 3 green onions, trimmed and sliced into thin rounds
3 to 4 tablespoons low-sodium soy sauce
1/2 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste

Steps:

  • To a large non-stick skillet or wok, add the oils, shrimp, and cook over medium-high heat for about 3 minutes, flipping halfway through. Cooking time will vary based on size of shrimp, don't overcook. Remove shrimp with a slotted spoon (allow oils and cooking juices to remain in skillet) and place shrimp on a plate; set aside.Add the peas, carrots, corn, and cook for about 2 minutes, or until vegetables begin to soften, stir intermittently.Add the garlic, ginger, and cook for 1 minute, stir intermittently.Push vegetables to one side of the skillet, add the eggs to the other side, and cook to scramble, stirring as necessary.Add the shrimp, rice, green onions, evenly drizzle with soy sauce, evenly season with salt and pepper, and stir to combine. Cook for about 2 minutes, or until shrimp is reheated through. Recipe is best warm and fresh but will keep airtight in the fridge for up to 5 days or in the freezer for up to 4 months. 1 cup long-grain white rice
1 pound shrimp, peeled and deveined
6 tablespoons butter
4 to 6 medium cloves garlic, crushed and minced
2 to 3 tablespoons fresh lemon juice
Salt and pepper to taste
1/3 cup fresh parsley, chopped

Steps:

  • Cook the long-grain white rice according to package instructions. Set aside and keep warm.
  • Rinse the shrimp under cold running water and place on paper towels. Pat with paper towels to dry. If you prefer to cook the shrimp without the tails, remove and discard the tails.
  • In a large skillet, heat butter over medium heat until it stops foaming, about 45 seconds.
  • Add the garlic and sauté for 15 to 20 seconds. Add the shrimp and sauté over medium heat, turning frequently until the shrimp just turns pink, or about 5 minutes.
  • Add the lemon juice, as well as the salt and pepper to taste. Stir well.
  • Spoon the rice into a serving dish. Top with the lemon-garlic shrimp, sprinkle on the freshly chopped parsley , and serve immediately.

1 cup Rice (will be more than a cup once cooked), cooked according to box/bag
1 tablespoon Sesame Oil
1/4 cup Soy Sauce
2-3 Garlic Cloves, chopped
2-3 Green Onion, chopped
2 tablespoon Lemon Juice
2 Eggs
1 cup Tail Off Shrimp
Favorite Veggies (peas, shredded carrots, water chestnuts...etc)

Steps:

  • Cook your rice according to the box or bag it came in. Once cooked set aside to cool.
  • In a large pan or wok, heat sesame oil over medium heat and add veggies to cook. Once they are thoroughly sauted, add the shrimp.
  • In a separate pan, scramble the eggs.
  • Add the cooked rice to the veggies and fry for about 2-3 minutes before adding soy sauce.
  • Cook the rice, veggies, and soy sauce over medium-high heat for about 5 minutes stirring consistently.
  • Add the eggs and stir. Add the lemon juice last and serve! Enjoy!
