These Easy Chicken Enchiladas are made with shredded rotisserie chicken for a hearty and flavorful meal. Shredded Chicken Enchiladas are cheesy, creamy and delicious, and the enchilada sauce is to die for! A perfect dish to feed a crowd on a busy weeknight!

2 tablespoons butter
2 tablespoons flour
10 oz can red enchilada sauce
1 cup chicken broth
1 tablespoon canola oil
2 yellow onions (diced)
4 oz can diced green chiles
3 cups rotisserie chicken shredded ((about ½ rotisserie chicken))
1 tablespoon cumin
1 teaspoon chili powder
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
6 oz queso fresco (crumbled)
1 cup sour cream
16 oz Monterey Jack (shredded and divided)
8 large flour tortillas
¼ cup cilantro (chopped)

Steps:

  • Preheat oven to 350°F.
  • In a small pan over medium heat, melt butter and add flour. Stir constantly and cook. Add enchiladas sauce, broth, salt, and pepper and stir. Bring to boil; reduce heat and simmer, stirring occasionally, while preparing the other ingredients.
  • In a large pan, heat oil until shimmering. Add onions cook, stirring, 5 to 7 minutes until translucent.
  • Stir in the full can of diced green chilies, cumin, and chili powder and chicken.
  • Turn off the heat and add sour cream, queso fresco, and 2 cups of shredded Monteray Jack cheese. Stir until well combined and the cheese is melted.
  • Remove enchilada sauce mixture from heat. Spread 1/2 cup of the sauce in the bottom of an 9x13-inch baking dish. Working with 1 tortilla at a time, fill with 1/3 cup of chicken filling, roll tightly, and place seam-side down in baking dish.
  • Repeat with remaining tortillas.
  • Pour remaining sauce over rolled enchiladas and sprinkle with remaining Monterey Jack.
  • Bake until cheese is fully melted and bubbly, 25 to 30 minutes. Remove from oven and let rest 5 minutes. Top with cilantro and serve.

6 boneless skinless chicken thighs
Kosher salt and pepper
2 tablespoons olive oil
1 cup from 1 can (10 oz) Old El Paso™ Mild Green Chile Enchilada Sauce

Steps:

  • Season the chicken thighs with salt and pepper on both sides.
  • Place a large skillet with olive oil over high heat and let the oil heat for a moment. Using a pair of tongs, add the chicken to the skillet and sear the chicken on both sides for 3 minutes each so that each side is golden brown.
  • Add the Old El Paso™ Mild Green Enchilada Sauce to the skillet and cover the skillet with a tight fitting lid. Reduce the heat to medium and let the chicken cook for 25-30 minutes.
  • After 20 minutes, using a pair of tongs, flip the chicken over to the over side and continue to cook for another 10 minutes. Turn the heat off and using 2 forks, shred the chicken and then use as needed.

1 cup sour cream
1 cup green salsa (such as Frontera® Tomatillo)
2 teaspoons olive oil
1 small onion, chopped
2 cloves garlic, minced
3 cups shredded cooked chicken breasts
1 ½ cups shredded Mexican cheese blend, divided
1 (4 ounce) can chopped green chile peppers
8 (8 inch) flour tortillas

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Mix sour cream and salsa together in a bowl.
  • Heat oil in a skillet over medium-high heat. Saute onion and garlic in the hot oil until soft, 5 to 7 minutes. Stir in cooked chicken, 1 cup of the sour cream mixture, 1/2 of the Mexican cheese, and chile peppers.
  • Spoon about 1/3 cup of the mixture down the center of each tortilla. Roll tortillas and place, seam sides-down, into the prepared dish. Top with remaining sour cream mixture and cheese. Cover with foil.
  • Bake in the preheated oven until heated through and bubbly, 30 to 40 minutes.

1 pound skinless, boneless chicken breast halves
12 (10 inch) flour tortillas
1 (8 ounce) package shredded Monterey Jack cheese
1 (19 ounce) can green enchilada sauce

Steps:

  • In a pot with enough water to cover, boil the chicken 25 minutes, or until juices run clear. Drain, cool, and shred.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Fill each tortilla with equal amounts of chicken and cheese, reserving 1/4 cup cheese for topping. Roll tortillas to form enchiladas. Arrange enchiladas in the prepared baking dish. Cover with the enchilada sauce.

The cream cheese is the star in these enchiladas... I've never met a person who didn't enjoy these and they are so simple to put together. You can cook your chicken breasts for these anyway you want... I recommend putting a chili powder/garlic rub on them and baking them. You can also boil them in water and garlic salt, but the baking produces tender, flavorful chicken! Toss in some red pepper flakes to the chicken/cheese mixture for some heat!! Can't beat it! Recently I didn't have a can of the green sauce on hand, and had a crisper full of tomatillos! I made Recipe #51630 and WOW it was super. It takes of course a little more work and effort but it was really good. If you like tomatillos, give it a try when you have some extra time on hand.

1 1/2 lbs chicken breasts, cooked and shredded
4 ounces diced green chilies
8 ounces cream cheese, softened
1/2 cup onion, diced (saute first if you want a less crunchy onion)
3 cups green enchilada sauce (1 large can, divided, or Tomatillo Sauce)
12 -14 white corn tortillas (small size)
8 ounces cheese, shredded (jack, queso, or any mexican type cheese works)

Steps:

  • Preheat oven to 350.
  • Pour 2 tablespoons green enchilada sauce into the bottom of a 13x9 glass baking dish.
  • In large bowl, mix shredded chicken, green chilis, cream cheese, onions, 1/2 cup shredded cheese, and 2 tablespoons of the green enchilada sauce.
  • Spoon mixture evenly into corn tortillas and roll up.
  • Line up tortillas, touching each other, fitting as many tortillas as you can (but not on top of eachother.).
  • Pour remaining enchilada sauce over rolled tortillas.
  • Sprinkle remaining shredded cheese over sauce and cover the 13x9 with foil.
  • Bake in a 350 degree preheated oven for 40 minutes.
  • Remove from oven and let sit at room temp for 10 minutes before serving.

3 -4 chicken breasts
15 white corn tortillas (fajita size) or 15 flour tortillas (fajita size)
3 (10 ounce) cans green enchilada sauce (I use Old El Paso)
3 -4 cups grated monterey jack pepper cheese (or for less spice, use 1 cup pepper jack and 2 cups of cheddar, or a fiesta blend mexican cheese mix)

Steps:

  • Boil chicken until it falls apart, then shred.
  • Mix 1/2 can of sauce and a little cheese with chicken.
  • Put other 1/2 can on bottom of 11x9 baking dish.
  • Microwave tortillas until soft.
  • Roll chicken mixture into tortillas.
  • Put in pan semi-tightly.
  • Cover with remaining 2 cans sauce.
  • Cover top with remaining cheese and bake at 350 until cheese is fully melted (usually about 20-25 min).
  • Brown top slightly or to preference.

I got my picture in the paper for this one! My friends' husbands always fall in love with this when I bring it to parties! My 4 picky kids eat it! If you want to skip the charring step, simply tear the tortillas into fourths so they absorb the sauce better.

4 skinless, boneless chicken breast halves
garlic salt to taste
18 (6 inch) corn tortillas, torn in half
1 (28 ounce) can green chile enchilada sauce
1 (16 ounce) package shredded Monterey Jack cheese
1 (8 ounce) container reduced fat sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Season chicken with garlic salt. Arrange in the prepared baking dish. Bake 45 minutes in the preheated oven, until no longer pink and juices run clear. Cool, shred, and set aside.
  • With metal tongs, char each tortilla half over the open flame of a gas stove burner for about 1 minute, until lightly puffed.
  • Pour about 1/2 inch enchilada sauce in the bottom of a medium baking dish, and arrange 6 tortillas in a single layer. Top with 1/2 the chicken, 1/3 cheese, 1/2 the sour cream, and 1/3 of the remaining enchilada sauce. Repeat.   • Cover, and bake 45 minutes in the preheated oven. Cool slightly before serving.

I was looking for a quick and different way to use the leftover shredded beef cooked in a crock pot the day before. I came up with this recipe which is quick and easy without having to roll each tortilla individually . My husband doesn't like corn tortillas or red sauce so I used green sauce and flour tortillas and layered them in a 8 1/2 inch casserole dish that fit the torrillas perfectly. I knew it was a hit when he went back for a second and third helping! It also tastes great left over the next day. You could also make it with shredded chicken. (Cooking the beef is not included in prep time)

2 cups shredded beef
1 (4 ounce) can diced green chilies
1 (19 ounce) can green enchilada sauce

sour cream (optional)

Steps:

  • In large frying pan or sauce pan, combine shredded beef, diced green chiles, half of the green enchilada sauce and full can of mushroom soup.
  • Cook over medium heat until heated through
  • Pour about 2 Tablespoons of remaining enchilada sauce in bottom of the casserole dish.
  • Place 1 tortilla in casserole and cover with prepared sauce from pan.
  • Sprinkle small layer of cheese over sauce.
  • Place another tortilla over sauce and continue layering until last tortilla is on top.
  • Pour remaining sauce over complete casserole and cover the top with remaining cheese.
  • Cover and bake in 350 degree for about 30 minutes or until nice an bubbly .
  • Let sit about 10 minutes to allow to set before serving.
  • Top with sour cream if desired.
