Steps:
- Preheat oven to 450 degrees F.
- Spray an 8 x 8 inch baking dish with non-stick cooking spray.
- In a mixing bowl, beat pancake mix, eggs, and milk until smooth. Add butter and mix until completely blended.
- Pour into prepared baking dish; arrange cooked sausage over top.
- Bake for 20 minutes or until golden brown.
- Cut into slices, and serve topped with maple syrup.

SAUSAGE & PANCAKE CASSEROLE
Sausage and pancake casserole repurposes classic frozen pancakes into a hearty dish that feeds a hungry crowd. This hearty breakfast casserole takes the hassle out of your morning meal by coming together the night before so all you have to do the next morning is pop it in the oven. Perfect for making ahead for busy weekdays or weekend brunches.

Steps:
- Lightly spray a 9x13" baking dish with non stick cooking spray.
- Cut the pancakes in half, and then layer them in the prepared dish- cut side down. Repeat until all the pancakes have been squeezed into the baking dish. I was able to create three equal rows in mine.
- Add the sausage to a skillet and cook, breaking up as it cooks. Stir in the maple syrup, and cook until the sausage is no longer pink, and completely crumbled. Completely drain the sausage of fat.
- Spread the cooked sausage evenly out over top of the pancakes. Open them as needed to help it get down in between the layers so that the whole dish is nice and meaty.
- In a mixing bowl, whisk together the eggs, cream, milk, vanilla extract, & sugar until the mixture's smooth. Pour this mixture evenly out over the meat & pancakes.
- Cover the dish tightly with cling wrap, and then set in the refrigerator to rest overnight.
- The next morning take the dish out, discard the wrap, and bake at 350 degrees for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the dish rest for several minutes before slicing and serving. Drizzle servings with extra maple syrup, if desired.

- Preheat oven to 350°. In a large skillet over medium heat, cook and crumble sausage until no longer pink, 5-7 minutes; drain. Mix biscuit mix, milk, eggs and oil until blended; stir in sausage. Transfer biscuit mixture to a greased 13x9-in. baking dish. Top with apples; sprinkle with cinnamon sugar. Bake until set, 30-45 minutes. PANCAKE BREAKFAST CASSEROLE

- Butter an 8-inch square baking dish; set aside. Put 3 tablespoons of the butter in a microwave-safe small bowl or liquid measure; microwave for 30 seconds to 1 minute to melt the butter.
- Whisk together the flour, baking powder, baking soda, 3 tablespoons of the sugar and 1/2 teaspoon salt in a large bowl. In a separate small bowl, whisk together the buttermilk, 2 of the eggs and the melted butter. Add the wet ingredients to the dry ingredients, and stir until just combined.
- Heat a large nonstick skillet or griddle over medium heat. Melt a little of the remaining butter in the pan. For each pancake, spoon 1/4 cup of batter into the skillet and cook until the bottom is golden brown and small bubbles appear on the top, 2 to 3 minutes. Flip and cook until golden brown on the other side, about 2 minutes. If the pancakes brown too quickly, reduce the heat to medium-low. Transfer the pancakes to a plate as finished. Repeat until all the batter is used, adding more butter to the pan as necessary. (You should have at least 12 pancakes.)
- Whisk together the half-and-half, vanilla, the remaining 5 eggs and 3 tablespoons sugar, and 1/4 teaspoon salt in a large bowl.
- Shingle the pancakes in the prepared baking dish. Pour the egg mixture evenly over the pancakes. Cover the dish with plastic wrap and refrigerate for at least 8 hours up to overnight to allow the pancakes to soak in the custard.
- Preheat the oven to 350 degrees F. Remove the plastic wrap, and bake the casserole until it feels firm yet springy to the touch in the center and the custard is set, 50 to 60 minutes. Let cool 15 minutes before serving. Serve warm with maple syrup, blueberries and pats of butter.
SAUSAGE-AND-CHEESE PANCAKE BREAKFAST CASSEROLE

Cover the dish with plastic wrap and refrigerate for at least 8 hours or up to overnight to allow the pancakes to soak in the custard.
- Preheat the oven to 350 degrees F. Remove the plastic wrap, cover the casserole loosely with foil and bake for 30 minutes. Uncover and continue to bake until golden brown, the custard is set and the center feels firm but springy, about 30 minutes more. Let cool 15 minutes before serving. Serve warm with maple syrup if you like.
PANCAKE AND SAUSAGE CASSEROLE
I wanted a pancake and sausage casserole for deer camp and at home, too, since we have a good-sized family. I wanted to have something that would be ready for everyone to sit and eat together. I couldn't find one, so I began experimenting. Finally, I am satisfied with this one. All of my tasters agreed it worked. Top it with butter, syrup, or your favorite topping.

- Preheat oven to 375 degrees F (190 degrees C). Prepare a baking dish with cooking spray. Preheat the baking dish in the oven.
