My daughter and I love salmon patties, and we found this version that is healthier than salmon patties made with mayo. Everyone I've made this for has asked for the recipe. I would love to hear any improvements and/or variations you make to this simple recipe. Enjoy!

Steps:
- Mix salmon, breadcrumbs, onion, Dijon mustard, egg, and lemon juice together in a bowl; form into 2 patties.

- In the bottom of a large mixing bowl, lightly beat the egg. Add all other ingredients into the bowl and mix until thoroughly combined and mixture can be formed into patties. Form into 8 patties. For best results, let patties sit in fridge for 20 minutes (not necessary, but makes them a bit firmer.)
- Heat avocado oil in a large skillet over medium heat. Add salmon patties and cook for 5-7 minutes per side and until golden brown. Serve and enjoy!
- To make the optional creamy dill sriracha sauce, simply stir all ingredients together in a small bowl and enjoy with salmon patties.

- Mix salmon, onion, and egg together in a bowl; stir in flour. Stir baking powder and 2 tablespoons reserved salmon liquid together in a separate bowl; stir into salmon mixture until mixture holds together when shaped. Add more flour if mixture is too soft. Add more reserved salmon liquid if mixture is too firm. Shape salmon mixture into small patties.
- Heat shortening in a skillet over medium heat.
- Spread cornmeal into a shallow bowl and press patties into cornmeal until evenly coated on both sides.
- Fry patties in the hot shortening until golden brown, about 5 minutes per side. Transfer patties to a paper towel-lined plate using a slotted spoon.

- To make sauce:.
- Combine ingredients in a small bowl and mix well. Set aside.
- To make salmon cakes:.
- Preheat oven to 450°F Coat a baking sheet with cooking spray.
- Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add onion and celery; cook, stirring, until softened, about 3 minutes. Stir in parsley, remove from the heat.
- Put salmon in a medium bowl. Flake apart with a fork, remove any bones and skin. Add egg and mustard(and honey if using), mix well. Add onion mixture, breadcrumbs and pepper, mix well. Shape the mixture into 8 patties, about 2 1/2 inches wide.
- Heat remaining 1 1/2 teaspoons oil in the skillet over medium heat. Add 4 patties and cook until the bottoms are golden, 2 to 3 minutes. Using a wide spatula, turn them over onto the prepared baking sheet. Repeat with the remaining patties.
- Bake the salmon cakes until golden on top and heated through, 15 to 20 minutes. Serve salmon cakes with creamy sauce and lemon wedges.

SALMON CAKES WITH ROASTED RED PEPPER CREAM SAUCE
Leftover or canned salmon made into these crispy salmon cakes creates a whole new meal with tons of flavor made extra delicious thanks to a super simple, creamy roasted red pepper sauce.

- Add the green onions, parsley and dill to the bowl of a food processor and process until fine.
- Add 1 1/2 cups bread crumbs, eggs, melted butter, mayonnaise, mustard and lemon juice. Pulse on and off until well mixed.
- Add the chunks of salmon and season with kosher salt and black pepper and pulse on and off until gently combined and mixture begins to hold together. Be careful not to over process.
- Cover and refrigerate for at least 30 minutes up to overnight.
- Shape into patties 3/8' thick. Dip the patties into the remaining bread crumbs, and pat to coat all of the sides completely then set aside.
- In a large skillet, heat the oil to medium or so that the oil sizzles when a bread crumb is dropped into it. Sauté the patties for 2 minutes or until golden brown on each side turning once. Place the patties on a plate lined with paper towels and cover to keep warm. Serve with egg noodles and red bell pepper cream sauce.
- For the Red Bell Pepper Cream Sauce
- Roast the whole peppers over medium high flame, turning often, until charred.
- Place in a plastic bag, seal and allow to steam in the bag for about 10-15 minutes or until the skin peels off easily. Remove the skin, stem and seeds and coarsely chop the bell peppers.
- In a medium pot over medium heat, add the bell peppers and the cream and bring almost to a boil.
- Reduce the heat to a medium and cook until the cream has reduced by half, about 8 minutes.
- Purée with a hand held blender, in a blender or in food processor (be sure the top is vented to allow steam to escape so it doesn't blow off the lid) until smooth. Season with kosher salt and a few shakes of cayenne pepper to taste. Keep over low heat before serving.

- PATTIES: Drain liquid from salmon and reserve for sauce.
- Remove bones and skin, and flake salmon.
- Mix all patty ingredients together.
- Form into 4 patties.
- Dip both sides in flour.
- In frying pan, heat oil and fry patties over medium heat until lightly browned on both sides- about 10 minutes.
- SAUCE: While patties are cooking, place peas in colander and rinse with hot water to defrost.
- Drain In saucepan or skillet, melt butter; with whisk, stir in flour.
- Gradually whisk in 1/4 cup reserved salmon liquid and milk, whisking to form a creamy sauce.
- Add dill, salt and pepper, stirring constantly over medium heat until mixture gently boils and thickens.
- Stir in the pea and cook 30 seconds to warm.
- Do not cook peas.
- Place patties on individual plates and spoon the sauce over.
- ***Note: If you prefer, you can place the salmon mixture in 4 greased muffin cups and bake at 350 degrees for 25-30 minutes.
- If using this method, omit the first two recipe ingredients (oil and flour).
- VARIATION: You can substitute lightly steamed fresh asparagus for the peas.
- If using asparagus, do not put in sauce.
- Place asparagus over salmon patties and spoon sauce over both.

- 1. Begin by adding salmon in large bowl and breaking up with fork until fine . Add all ingredients one by one mixing well.
- 2. Form 5 patties
- 3. Add 3 tbs cooking oil to skillet .. once hot .. add patties ... fry until both side are a nice crisp brown .. remove from skillet .. set aside.
- 4. In separate pan add can of cream of celery or mushroom soup using only 2/3 can of milk .. heat until soup begins to bubble .. turn off heat. Spoon over patties .
- 5. Optional: lay 1/4 cheese slice over hot patties.
YUMMY SALMON PATTIES WITH EASY SAUCE
The base of this recipe comes from an old GH cookbook. I've added other ingredients for presentation (color) and as a trick to sneak more veggies into my kids' food. I use Kirkland (Costco brand) canned salmon, but you can use any other kind you like. Chopping the ingredients into tiny pieces helps keep the patties together and helps make the vegetables less objectionable to kids. Also, you may choose to remove the bones from the salmon when you drain it, however it is a good source of calcium and my kids never notice it. This can be eaten on a bun with fresh tomato, romaine and the sauce.

- Patties:.
- In a large bowl beat eggs slightly with a fork.
- Add salmon, crumbs, celery, green onions and red pepper (and optional parsley) and mix well (wear gloves use your hands).
- With your hands, shape mixture into 6 firm patties.
- In a skillet over medium heat, heat the oil. Fry patties approximately 10 minutes per side or until lightly browned.
- Sauce:.
- In a small bowl, mix the mayo and mustard in a 5-to-1 ratio (i.e. 5 Tbsp of mayo to 1 Tbsp of mustard) or to taste. Mix together until blended. If you want, on low power slowly warm the mixture in the microwave. Serve on the side.
- Optional: use an envelope of hollandaise sauce mix instead.
