The only difference today is that I can't get home-smoked ham like those Grandpa used to cure in his old-fashioned smokehouse. But that never matters to hungry folks at the table-Grandma's recipe is a winner every time!"

- In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

- In a large bowl, combine the first 11 ingredients. Sprinkle ham and sausage over the cracker mixture and mix well. Shape into two loaves. Place in ungreased 9x5-in. loaf pans. Cover and freeze one meat loaf for up to 2 months. Bake the remaining loaf, uncovered, at 350° for 1 hour., Meanwhile, in a small saucepan, combine glaze ingredients. Bring to a boil; boil for 2 minutes. Remove loaf from the oven; drain. Baste with half of the glaze. Cool remaining glaze and set aside. Bake meat loaf 30-40 minutes longer or until a thermometer reads 160°, basting occasionally. , Cover and freeze reserved glaze for up to 2 months. , To prepare frozen ham loaf with the frozen glaze: Thaw both in the refrigerator overnight and bake as directed.

Steps:
- Preheat oven at 200°C.
- In a large bowl mix the mince, onion, salt, pepper, garlic, tomato paste and curry powder then mix well until smooth.
- Lay down a long sheet of aluminium foil, then place a sheet of baking paper over the spray with the oil and then lay down the 4 slices of ham with the edges overlapping.
- Spread the mince mixture over two thirds of the ham then roll up like a swiss roll.
- Roll the baking paper into a bon-bon shape then roll with the alfoil and crimp the edges.
- Place onto an oven tray with a splash of water to cover the bottom.
- Bake at 200C for 25 to 30 minutes, then remove the foil and paper and slice and serve.

- Preheat oven to 400 degrees.
- Process or crumble the bread and combine with the minced vegetables in a large bowl.
- Mix the meat, eggs and seasonings together in a bowl. Knead until thoroughly combined. Add meat mixture to the crumbs/veggie mixture. Combine, but don't over mix.
- Set a wire rack over an 11 x 17 baking pan. Cut a 5 x 11 piece of parchment paper and place it on the rack.
- Form the meat mixture into and elongated loaf on the parchment paper.
- Mix the next 2 ingredients together and baste the loaf--set aside.
- Heat the oil and sauté the onion rings. When soft and golden in places, add water and cook until most of the water evaporates. Garnish the loaf with the onion rings.
- Bake 30 minutes, then sprinkle rosemary needles on top. Continue baking for another 25 minutes. Cool on rack for 15 minutes before serving.
