BALSAMIC ROAST PORK TENDERLOINS

4 1/2 pounds pork tenderloins, 2 packages with 2 tenderloins in each package
4 tablespoons balsamic vinegar
4 tablespoons extra-virgin olive oil
8 cloves garlic, cracked
Steak seasoning blend or coarse salt and black pepper
4 sprigs fresh rosemary leaves stripped and finely chopped
4 sprigs fresh thyme, leaves stripped and finely chopped

Steps:

  • Preheat oven to 500 degrees F.
  • Trim silver skin or connective tissue off tenderloins with a very sharp thin knife.
  • Place tender loins on a nonstick cookie sheet with a rim. Coat tenderloins in a few tablespoons of balsamic vinegar, rubbing vinegar into meat. Drizzle tenderloins with extra-virgin olive oil, just enough to coat. Cut small slits into meat and disperse chunks of cracked garlic cloves into meat. Combine steak seasoning blend or coarse salt and pepper with rosemary and thyme and rub meat with blend. Roast in hot oven 20 minutes.
  • Let meat rest, transfer to a carving board, slice and serve.

1 pound brussels sprouts, halved
1 pound baby potatoes, halved
3 tablespoons extra-virgin olive oil
3 cloves garlic (2 smashed, 1 grated)
Kosher salt and freshly ground pepper
1 pork tenderloin (about 1 1/4 pounds), trimmed
1 teaspoon minced fresh rosemary
2 small red onions, sliced 1/4 inch thick
1/2 cup balsamic vinegar
2 teaspoons sugar
1 tablespoon chopped fresh parsley

Steps:

  • Place a rimmed baking sheet on the middle oven rack and preheat to 450˚ F. Toss the brussels sprouts and potatoes with 1 1/2 tablespoons olive oil and 2 smashed garlic cloves in a large bowl; season with salt and pepper. Spread out on the hot baking sheet and roast until tender and browned, 25 to 30 minutes.
  • Meanwhile, season the pork all over with salt and pepper, then rub with the rosemary and grated garlic. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the pork and cook, turning, until browned all over, about 6 minutes. Transfer the pork to a small baking sheet (reserve the skillet) and roast in the oven until cooked through, 10 to 12 minutes. Remove to a cutting board. Let rest 5 minutes, then slice against the grain.
  • Meanwhile, add the remaining 1/2 tablespoon olive oil to the reserved skillet; heat over medium-high heat. Add the red onions and a big pinch of salt and cook, stirring occasionally, until softened and lightly browned, about 6 minutes. Reduce the heat to medium and add the balsamic vinegar, 1/2 cup water and the sugar. Simmer, stirring occasionally, until the sauce thickens, 8 to 10 minutes; season with salt and pepper.
  • Divide the pork, onions and roasted vegetables among plates. Sprinkle with the parsley.

3 pkg pork tenderloins
1/2 tsp freshly ground black pepper
2 tsp kosher salt, divided
10 slice bacon
16 oz haricots verts (thin green beans)
2 Tbsp olive oil, divided
4 clove garlic, divided
1/2 c balsamic vinegar
1/3 c strawberry preserves
1/2 c fresh strawberries, quartered
FOR THE LEFTOVER DINNER
7 oz jar roasted red bell peppers, drained
12 tsp pesto
12 slice artisan bread
6 slice havarti cheese

Steps:

  • 1. Preheat grill to 400 to 500 degrees (high heat). Sprinkle pork with the pepper and 1 tsp salt; wrap 5 bacon slices around each tenderloin, and secure with wooden picks.
  • 2. Place green beans, 1 tbsp olive oil, 2 garlic cloves, and remaining 1 tsp salt in the center of a 24 x 18 inch piece of heavy-duty aluminum foil; toss to coat. Bring up sides of foil over the beans; double fold the top and side edges to seal, making a packet.
  • 3. If using a charcoal grill, move coals to one side. If using a gas grill, turn off one side of the grill. Arrange the pork and foil packet over the unlit side, and grill, covered with grill lid, for 25 to 30 minutes.
  • 4. Meanwhile, mince remaining 2 garlic cloves; saute in remaining 1 tbsp hot olive oil in a medium skillet over medium-high heat for 2 to 3 minutes or until golden. Add the vinegar; bring to a boil over medium-high heat. Boil for 5 minutes. Remove from heat, and stir in preserves. Reserve half of the mixture for basting. Stir the fresh strawberries into the remaining mixture.
  • 5. Remove the foil packet from the grill. Transfer thepork to the lit side of the grill. Baste pork with the reserved strawberry mixture. Grill for 5 more minutes over the lit side, turning once. Remove the pork from the grill; reserve 1 tenderloin for the "Leftover Recipe". Slice the remaining tenderloin, and serve with strawberry mixture and green beans.
  • 6. For the Leftover Recipe: Cut the reserved pork from the recipe into 18 thin slices.
  • 7. Cut the drained peppers into 6 pieces.
  • 8. Spread 2 teaspoons of pesto on one side of each slice of artisan bread. Top with 3 pork slices, a red bell pepper piece, a havarti cheese slice, and the other bread slice.
  • 9. Cook in a preheated panini press 2 to 3 minutes or until golden on each side. Enjoy

½ cup balsamic vinegar
2 cloves garlic, finely chopped
2 teaspoons chopped fresh rosemary
2 teaspoons honey
fine sea salt to taste
freshly ground pepper to taste
1 (1 pound) pork tenderloin

Steps:

  • Whisk balsamic vinegar, garlic, rosemary, honey, salt, and pepper together in a bowl. Place pork in a resealable plastic bag and pour balsamic mixture on top to coat. Squeeze out excess air, and seal the bag. Place the bag in a container to avoid leaks, and marinate in the refrigerator 6 to 8 hours.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove pork from the marinade and shake off excess. Place pork in a roasting pan or baking dish. Reserve marinade.
  • Roast pork in the preheated oven until slightly pink in the center, about 25 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). This was originally a grilled or sauteed pork chop recipe from the Taste of Home Test Kitchen that I have tweaked. I used tenderloin instead because I am not a bone-in person, and then decided on oven-roasting to keep it tender and juicy. Do not skip the searing step. It really locks in the juices. The flavor on these is absolutely amazing. So tender, and the flavors of the sauce combine beautifully.

2 lbs pork tenderloin
2 teaspoons dried rosemary, crushed, to taste
1 teaspoon pepper (to taste)
1 teaspoon kosher salt (to taste)
2 tablespoons extra virgin olive oil
3 tablespoons margarine or 3 tablespoons butter
1 1/2 cups raspberry vinaigrette dressing
4 tablespoons chopped green onions
2 tablespoons brown sugar
1/2 teaspoon paprika
1/2 teaspoon Worcestershire sauce
2 cups sliced fresh strawberries, 1/4 inch slices

Steps:

  • Preheat the oven to 350 degrees.
  • In a small bowl, combine the vinaigrette, onion, brown sugar, paprika and Worcestershire sauce; set aside.
  • Rinse the tenderloin, and prick on all sides with a fork. Season liberally on all sides with salt, pepper, and crushed rosemary, rubbing all spices into the meat very well.
  • Set a roasting pan over two burners on your stove, where you will get a nice even heat, add olive-oil and margarine, and bring to medium-high temperature.
  • Next, carefully place your tenderloin into the roasting pan. The reason for doing this is to sear the outside of the tenderloin so that when you roast it in the oven it stays nice and moist. So you'll want to sear it on all "sides" for about a minute each (rotating it with a pair of tongs), including the two ends.
  • Turn heat down to medium and add the vinaigrette mixture, turning meat to coat thoroughly in sauce. Once meat is coated, and sauce has darkened in color (but not burnt), remove from heat. Spoon about 1/2 of the pan juices/sauce into a small saucepan and reserve.
  • Put the roasting pan with the tenderloin and 1/2 of the sauce into the oven. Cook about an hour and a half, basting in sauce every 20 minutes or so. I also placed a pan of water on the bottom rack of the oven to give added moisture.
  • Once the tenderloin is in the oven, add strawberries to reserved sauce and stir to coat the berries. After about an hour and fifteen minutes you can start checking on the tenderloin. Poking it with your finger should feel somewhat springy, and a sharp knife inserted to the middle should run clear juices. An hour and a half should give you a perfect, moist roast.
  • Pull the tenderloin out of the oven and allow it to rest for about five minutes. Meanwhile, put the saucepan with the berries on the stove on low heat, and warm through. Once the meat has rested, transfer to a serving platter, slice, and pour warm sauce with berries over to serve.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking sheet.
  • Combine garlic, sage, salt, and pepper in a small bowl. Rub garlic mixture over pork tenderloins.
  • Heat oil in a large skillet over medium-high heat. Arrange tenderloins in the skillet and brown evenly, 2 to 3 minutes per side. Transfer pork to the prepared baking sheet and brush with the balsamic glaze.
  • Bake in the preheated oven for 20 minutes. Turn pork, brush again with glaze, and continue cooking until pork is slightly pink in the center, about 20 minutes more, or until desired doneness. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Remove tenderloin to a platter. Allow to rest for 10 minutes. Drizzle a little extra glaze over the top. Carve and serve with remaining glaze on the side.
