Sometimes the basics are the best! I've used this simple recipe for years to make garlic bread, and any leftovers go great on barbequed steaks, pasta, rice or potatoes. You can use any butter or margarine you like. Also, fresh or minced garlic in a jar works well. Adjust the amount of garlic to your taste.

1 cup butter, softened
1 tablespoon minced garlic
¼ cup grated Parmesan cheese
1 tablespoon garlic salt
1 teaspoon Italian seasoning
½ teaspoon ground black pepper
¼ teaspoon ground paprika

Steps:

  • In a small bowl, combine softened butter, minced garlic and parmesan cheese. Season with garlic salt, Italian seasoning, pepper and paprika. Mix until smooth.

1 bulb of garlic
1 tablespoon extra virgin olive oil
1/4 lb butter

Steps:

  • Preheat the oven to 350°F.
  • Cut about a half inch off the top of the garlic bulb.
  • Place the bulb in a small baking dish. Drizzle the top with the olive oil.
  • Cover the dish with aluminum foil, and bake for 1 hour.
  • Set the butter out to soften as you put the garlic in the oven.
  • When the garlic is done, let it cool enough to handle. You should be able to just squeeze the cloves out of the husk.
  • Put the softened butter and the garlic cloves in a mixing bowl, and mix together until thoroughly integrated.
  • To store, scrape the mixture onto a piece of parchment or wax paper, roll into a fat, sausage shaped log, and the twist the ends shut.

4 cloves garlic, skins left on
1 tablespoon olive oil
0.5 teaspoon kosher salt
8 tablespoons (1 stick) unsalted butter, at room temperature

Steps:

  • Preheat oven to 350° F. Place the garlic on a small sheet of foil and pull up the foil's edges to form a pouch. Pour the oil over the garlic and sprinkle with about 1/4 teaspoon of the salt. Roast for 35 minutes. Allow to cool slightly.
  • Place the butter in a small bowl. Squeeze the garlic out of its skins onto the butter. Add the remaining salt and mash with a wooden spoon to combine. Chill the butter until needed, but allow it to come to room temperature before spreading.

1 head garlic
1 tablespoon olive oil
1/4 cup sugar
1/2 lb unsalted butter (softened to a cool room temperature)

Steps:

  • Preheat oven to 350°F.
  • Clean dirt and roots from garlic, place garlic in the center of a 10x10-inch sheet of aluminum foil.
  • Pour olive oil over garlic, wrap with foil and roast in oven for 60 minutes.
  • While garlic is roasting, cut butter into chunks and place in a medium bowl--this will expedite the softening process.
  • Once butter is softened, add sugar and beat with a hand mixer until fluffy.
  • Garlic should be soft when you remove it from the oven, peel back foil and let cool till you can handle it.
  • Pull garlic head apart and squeeze the garlic out of the cloves into another small bowl.
  • Allow to cool till warm to the touch.
  • mash roasted garlic paste with a fork, mix with butter and beat for a few moments until combined.
  • Lasts several weeks in the fridge!
  • Slather this on Italian bread and place under the broiler until lightly browned for the best garlic bread that you've ever had.

  • Add some crushed red pepper for a bit of zing.
  • Add some fresh herbs for a greener taste (but use it within a day).
  • Add some Italian seasoning.

I initially used it to make garlic bread, but have also discovered it works perfectly in preparing mashed potatoes, sauteing meats and also drizzled on vegetables and pasta. As you can imagine, the possibilities are endless. Note: Serving size is dependent on how it is used.

1 whole head of garlic
1 tablespoon olive oil

Steps:

  • Preheat oven to 325°F.
  • Remove the loose, outer layers of papery skin from the garlic bulb.
  • Slice off the top of the bulb, about 1/4 - 1/2. Cut enough to expose the top of the cloves but still leave the bulb intact.
  • Tear off a 12-inch square piece of foil, place the garlic bulb in the center and drizzle it with a Tablespoon of olive oil.
  • Bring the edges of foil up and around garlic, wrapping tightly, and bake in the oven at 325° F for 35 minutes.
  • Remove packet and carefully unwrap garlic.
  • Squeeze each clove of garlic out of it's skin and use as needed or store in a zip-top baggie in fridge or freezer for later use.
