Steps:
- Preheat the oven to 375 degrees F.
- Arrange your carrots on a cutting board.
- Cut the ends off of the carrots.
- Peel the carrots.
- Slice into matchsticks, each about the width of a pencil.
- Place the sliced carrots onto a large rimmed baking sheet and toss with the olive oil and salt.
- Spread out as evenly as possible (this will help them to get a little crisp in spots, which makes them really yummy).
- Bake for 20-24 minutes or until just starting to brown and are soft in texture. Serve with your favorite dipping sauce.

- Preheat the oven to 400 degrees F.
- If the carrots are thick, cut them in half lengthwise; if not, leave whole. Slice the carrots diagonally in 1 1/2-inch-thick slices. (The carrots will shrink while cooking so make the slices big.) - Heat oven to 425 degrees F. Line a shallow pan with foil.
- Using a sharp knife, slice away the tip and end of each carrot; peel each completely.
- Cut carrots in half crosswise, then cut lengthwise, then cut lengthwise again.
- In a mixing bowl, combine the carrot sticks, olive oil, rosemary, sugar, salt and pepper. Stir until all are evenly coated.
- Place carrots in pan, spreading sticks out as much as possible. Bake for 20 minutes or until carrots are tender.
- Serve hot or at room temperature.

- Peel and slice the carrots into sticks about a half inch wide. This vegetable peeler does a great job.
- Place the carrot fries on the cookie sheet and drizzle with olive oil. Use your hands to toss the carrots to coat them with oil. Sprinkle with salt, pepper, and garlic powder.
- Bake at 450 degrees for about 20 minutes, tossing once in the middle of the cooking time. We like ours a little bit browned.
