i had to come up with a chicken salad recipe fast. this is easy and delicious. for the chicken i bought perdue short cuts origanal roasted chicken. the cumin gives it an 'exotic taste', so to speak. i'm guessing on the serving sizes and the cooking time

2 (10 ounce) packages pre-cooked chicken
1 medium onion, diced
2 stalks celery, diced
2 cups mayonnaise or 2 cups Miracle Whip
1/2 teaspoon cumin (optional)

Steps:

shred chicken.
add onions, celerey, and mayonnaise.
mix well.
add cumin.
refrigerate over nite.

1 lb frozen baby peas, thawed, can use fresh blanched
3 ounces cheddar cheese, diced in cubes, about 3/4 cup
1/2 cup diced ham
1/2 cup chopped red onion
2 -3 hard-boiled eggs, chopped
3/4 cup mayonnaise, use less more to taste
1 tablespoon vinegar
2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper
paprika (optional)

Steps:

In a large bowl, mix together peas, cheese, ham, onion, and egg.
In a small bowl, whisk together mayo, vinegar, sugar, salt and pepper; pour over the salad combo and toss to coat well.
Place in a serving bowl and sprinkle w/ paprika for garnish.

I copied this down once while sitting in the waiting room for a doctor's appointment. (Goodness knows there's always time enough for copying recipes!) I think it came from "Child" magazine. I estimated number of servings.

Ingredients

1 1/2 cups chopped cooked chicken or 1 1/2 cups cooked turkey
1/2 cup sliced celery
1/2 cup thinly sliced green onion
1 tablespoon lemon juice
1/8 teaspoon pepper
1/3 cup mayonnaise
2 tablespoons sweet pickle relish or 2 tablespoons chopped green peppers
2 teaspoons prepared mustard
2 hard-boiled eggs, chopped

Steps:

In medium mixing bowl combine first three ingredients.
Stir in the lemon juice and pepper.
Combine the mayo, pickle relish and prepared mustard.
Add this sauce to chicken and gently stir in the eggs.
Cover and chill until ready to serve.

Mix together the turmeric, chilli, ginger, lime zest and a little salt in a bowl. Add the chicken breasts and rub the spice mix all over the chicken breasts so they are well coated.
Heat up a griddle pan on high for 1 minute. Add the chicken and fry for 3 minutes on the first side, until nicely charred. Flip the chicken over and then turn the griddle down. Cook for 6 minutes on the second side or until the chicken is completely cooked through.
Remove the chicken from the griddle pan and put on a plate to rest. Then slice or shred the chicken when cool enough to handle.
While you are cooking the chicken, put a small frying pan over a medium heat and add the cashew nuts. Cook gently until the nuts are brown on both sides. Drizzle over the honey and allow it to bubble for a few seconds then turn off the heat. Tip the nuts onto a plate or they will weld themselves to the pan – you have been warned ;-)
