SPICY ORANGE BBQ SAUCE
Tangy and sweet, this sauce is a great compliment for grilled chicken or ribs. The longer you let it simmer, the spicier it will taste. The trick to this sauce is to start with the basic ingredients and then gradually add more of your favorite spice until you reach YOUR desired taste. I like it spicy but you might prefer it sweet. Be careful with the orange zest because it will overwhelm the other flavors if you use to much.

Steps:
- In a med. saucepan over med. heat. Simmer Ketchup, honey, sugar and butter.
- Stir constantly until butter is completely melted - Do not boil!
- Add other ingredients- simmer 10 minutes and taste.
- Gradually add additional seasoning until desired flavor is reached. (ie. Spicier- more pepper, sweeter- more honey.)
- IMPORTANT.
- When adding ingredients do not exceed 1/8 teaspoons at a time. After you add, let it simmer for at least five minutes This will bring the flavors and give you a more honest taste.
- Also if you boil it you'll most likely burn it, so stir constantly.

SMOKEY CHIPOTLE ORANGE BARBECUE SAUCE
I came up with this delicious barbecue sauce trying to keep in mind what I could have on hand in the pantry or in the freezer in a pinch. Use this as a finishing sauce (not a marinade) during the last 7-10 minutes if grilling or the last 30 minutes if cooking in the oven.

- Combine all ingredients and puree in a food processor and blend until smooth. Bring to a boil in a tall saucepan, drop to a low simmer and cook, stirring often, until thick, about 30 minutes.
- Two chipotle make this lightly smokey and spicy. Use more if you like things spicy! Freeze the left over chipotle from the can in a covered ice cube tray or pressed flat in freezer safe plastic wrap for future use.
- Freeze the left over fresh ginger washed, air dried, not peeled and cut into one inch pieces. When you need 2 tsps, just take out an inch, let it defrost in a small bowl and squeeze out the juice. Fantastic!
- This is enough to cover one whole chicken or 2 baby back ribs with some sauce left over for those who want a little more -- .

- Combine the first five ingredients; rub over brisket. Cut into 8 pieces; place in a 5-qt. slow cooker. Combine the green pepper, onion, chili sauce, ketchup, barbecue sauce, brown sugar, vinegar, Worcestershire sauce and mustard; pour over meat. Cover and cook on high for 5-6 hours or until meat is tender., Remove meat; cool slightly. Meanwhile, skim fat from cooking juices. Shred meat with 2 forks; return to slow cooker. Reduce heat to low. Stir in the beans. Cover and cook for 1 hour or until heated through. If desired, top with shredded cheddar cheese, chopped white onion and sliced jalapenos. - Heat fat (oil) in a 5 quart Dutch Oven.
- Add ribs in a single layer to brown on all sides 15-20 Minutes.
- If necessary remove browned ribs and brown remainder ribs.
- Remove ribs and discard all but 2 tbsp Fat.
- Add onions, saute until soft, 4 minutes.
- Process tomatoes and garlic in food processor or blender until smooth.
- Add chilies, cinnamon and cloves to the onions cook& stir for a few seconds.
- Add Tomatoe, cook 5 minutes or until bubbling.
- Add orange juice, wine orange rind, salt and sugar (if using) cook until bubbling.
- Lower heat, add ribs,Cover and simmer until the ribs are very tender, about 1 1/2 hours.
- Remove ribs to serving platter, keep warm.
- Skim& discard the fat.
- Stir in the vinegar.
- Spoon Sauce over the ribs.
- Garnish with Orange slices and cilantro.

I use Heinz, and I heartily recommend that you do the same. The chili sauce makes up the bulk of the recipe, so you need to use the best.

EASY BARBECUE SAUCE
They always say less is best, and this certainly stands true for this easy BBQ sauce recipe, it's very easy to make, and so good! I have doubled the original recipe, but you may cut the recipe down to half if desired. You can brush this sauce on while cooking, or marinate your meat in it, this is also fantastic for chicken too! This sauce is even better prepared a day ahead. If you like extra heat, just saute some dried chili flakes in with the onion and garlic.
