TORTILLA 'SPRING ROLLS'

I make these often for parties where I have to 'bring something' and I'm always asked for the recipe. They're delicious, easy and they transport well, especially when you cut the rolls at your destination.

Number Of Ingredients 7

1 cup preshredded cabbage or 1 cup coleslaw mix
1/2 cup finely chopped cooked ham
1/4 cup finely chopped water chestnut
1/4 cup sliced green onion
3 tablespoons plum sauce, divided
1 teaspoon sesame oil
3 6-inch flour tortillas

Steps:

  • Combine cabbage, ham, water chestnuts, onions, 2 tablespoons of the plum sauce and oil in a medium bowl; mix well.
  • spread remaining 1 tablespoon plum sauce evenly over tortillas.
  • Spread about 1/2 C.cabbage mixture on each tortilla, leaving 1/4-inch border; roll up the tortillas and wrap each roll tightly in plastic wrap.
  • Refrigerate at least 1 hour or up to 24 hours before serving.
  • Cut each tortilla roll into 4 pieces.

1 flour tortilla
1 tablespoon unsalted butter
3 eggs, beaten
Salt and pepper
2 scallions, sliced
1 tomato, seeded and diced
1/4 cup grated cheese
Salsa

Steps:

  • In a heated cast iron skillet heat tortilla and keep warm. Season eggs with salt and pepper. In a nonstick skillet melt butter and pour in eggs. Stir in scallions, tomato and cheese and cook over medium heat until eggs are scrambled. Top heated tortillas with egg mixture. Spoon on salsa to taste and fold in half to serve.

DEEP-FRIED CHEESECAKE SPRING ROLL WRAPPER

Pulled off the internet for a discussion board request for tortilla wrapped cheesecake. Never tried this one, but I don't see any reason that the spring roll wrapper can't be replaced with a tortilla with some adjustments to the size of the cake slices.

1 prepared cheesecake (homemade or store bought)
30 egg roll wraps (available in Asian and large supermarkets, I don't see why tortilla's wouldn't work here)
1 egg wash (whisk 1 egg with 1 cup of milk)
vegetable oil, as needed
cinnamon sugar, as needed

Steps:

  • Cut already-baked cheesecake into uniform pieces approximately 1-by-3 inches in size.
  • One large cheesecake will produce about 30 slices for deep frying.
  • Lightly moisten each spring roll wrapper with the egg wash.
  • Blot off excess egg wash with paper towel.
  • Place each piece of cheesecake in the middle of a wrapper.
  • Fold top of wrapper down over the cheesecake, and both sides toward the middle.
  • Roll each piece of cheesecake toward you until it is completely rolled up.
  • Give this "egg roll" a gentle squeeze to make sure the dough is sealed completely.
  • Using a deep frying pan, heat at least 3 inches of oil to 365°F.
  • Dip the corner of one "egg roll" in the heated oil.
  • If the oil sizzles, it is ready.
  • If not, heat the oil a little longer.
  • When the oil is ready, gently release "egg rolls" into the oil and allow to brown lightly, approximately 10 seconds.
  • Using tongs, remove the golden-brown "egg rolls" from the oil.
  • Place each "egg roll" in a bowl of cinnamon sugar and coat well.
  • Place deep-fried slices of cheesecake on paper towels to cool slightly before serving.
  • (I'd use a rack).
  • Caution: These will be very hot.
  • Allow to cool at least 5 minutes before serving.
  • They can be enjoyed warm or cold.
  • (Cinnamon sugar can be made by mixing 2 cups of sugar with 4 teaspoons of ground cinnamon).

8 flour tortillas (8 inches)
1 carton (8 ounces) soft cream cheese with chives and onion
8 slices (1 ounce each) fully cooked ham
1-1/3 cups shredded cabbage
2/3 cup shredded carrot
1/2 cup honey Dijon salad dressing
1 cup shredded cheddar cheese

Steps:

  • Spread each tortilla with 1 tablespoon cream cheese. Top with a slice of ham. Combine cabbage, carrot and dressing; divide evenly between tortillas. Sprinkle with cheese. Roll tightly; wrap in plastic. Chill at least 1 hour before serving.

  • Preheat oven to 400 degrees. In an 8 x 8 inch glass baking dish, drizzle the extra virgin olive oil and tamari. Tilt the baking dish from side to side to evenly distribute the liquid. Toss the tofu planks in the liquid and spread them evenly across the baking dish.
  • For easy wrapping, quickly warm the tortillas one by one in a dry skillet at a medium heat. Or microwave all of them together on a plate for about 30 seconds. This makes the tortillas more pliable and easier to roll.
  • In a small bowl, use a fork to combine peanut butter, tamari, brown rice vinegar, hot sauce, and water until it is fully combined and has the texture of a creamy sauce. Thickness of peanut butter varies. So if your sauce is too thick and pasty, add another teaspoon of water. If it's too thin, add another teaspoon of peanut butter. Add the garlic and ginger powder and fully combine. If desired, serve in small sauce dishes, so that every person has a personalized dipping sauce for her/his wrap.
