EASY ONE BOWL COCONUT PIE
This is a recipe that is great for when you need a quick, no mess, dessert. I actually started this recipe when our chickens went into laying overload! I didn't have a crust prepared and wasn't in the mood to make one.

Steps:
- 1. In a blender, combine milk, sugar, eggs, vanilla, flour, butter, and salt. (Do not melt butter. Cold is fine). Cover and blend.
- 2. Add coconut and blend for 10 seconds or until all ingredients are blended. Spray a 10 inch pie plate with nonstick cooking spray. Pour into the pie pan. Top with a handful of coconut and grated nutmeg.
- 3. Bake at 350 for 50-55 min. Insert a knife in the center, and if it comes out clean the pie is done! This pie can be served warm or cold!

- In a bowl, combine 2 cups coconut and butter. Press onto the bottom and up the sides of a greased 9-in. pie plate. Bake at 325° for 8-10 minutes or until golden brown. Cool on a wire rack. Toast the remaining coconut; set aside., Drain pineapple, reserving 1/2 cup juice (discard remaining juice or refrigerate for another use); set pineapple aside. In a saucepan, combine marshmallows and reserved juice. Cook and stir over medium heat until marshmallows are melted. Remove from the heat. Add pineapple, extract and salt; mix well. Refrigerate for 2 hours or until cool., Fold in the whipped cream; spoon into prepared crust. Sprinkle with toasted coconut. Refrigerate for 2 hours or until set. Refrigerate leftovers.

This is one of those things that turn out wonderfully with little effort. GREAT for weeknight desserts or when you need something nice and don't have much time to make it in! Posting so we have access to the shopping list!

Steps:
- In a large bowl mix pudding and milk until pudding becomes thick (usually about 2 minutes).
- Fold in 4 oz (1/2) of the Cool-Whip.
- Fold in 1 cup of coconut.
- Spread mix into bottom of pie crust.
- Spread remaining Cool-Whip on top.
- Sprinkle with left-over coconut.
- Serve cooled (about one hour in the fridge).
- Keep refrigerated.
- Enjoy!
