3 (10 1/2 ounce) cans chicken broth (fat-free preferred)
1/2 cup whipping cream
1 cup uncooked quick-cooking grits
2 cups shredded sharp cheddar cheese

Steps:

  • In a large saucepan, combine the chicken broth and whipping cream.
  • Bring to a boil.
  • Add the grits, and return to boiling.
  • Reduce heat, cover, and simmer 5-7 minutes.
  • Add the cheese, stirring until melted.
  • Allow to sit for about 10 minutes.
  • Serve.

3/4 cup quick grits
1 cup milk
1/2 cup shredded mozzarella
1/2 cup shredded Cheddar

Steps:

  • In a saucepot over medium-high heat, add 3 cups water and a pinch of salt. Bring the water to a boil, and then stir in the grits and milk. Raise the heat to bring to a boil again, and then lower to a simmer and cook for about 4 minutes. When the grits begin to thicken but there is still plenty of moisture left, add the mozzarella and Cheddar along with a few grinds of pepper. Stir to melt the cheese, taste and season with salt, if needed. Serve warm.

1/2 tsp. olive oil
1 qt. (4 cups) water
2 tsp. WYLER'S Instant Bouillon Chicken Flavored Granules
1 cup quick-cooking grits
1 cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cut into 1/2-inch cubes
2 eggs
2 Tbsp. milk

Steps:

  • Heat oven to 350°F.
  • Cut 1/4 inch off top of garlic head, leaving papery skins intact. Place on sheet of foil; drizzle with 1/2 tsp. oil. Wrap in foil. Bake 30 min.
  • Meanwhile, bring water and bouillon granules to boil in medium saucepan on medium-high heat, stirring occasionally to dissolve granules. Gradually stir in grits until blended; cook on low heat 5 min., stirring occasionally. Remove from heat. Add 1/2 cup shredded cheese and Neufchatel; stir until cheeses are completely melted.
  • Whisk eggs and milk in small bowl until blended; stir in small amount of hot grits mixture until blended. Gradually add egg mixture to remaining hot grits mixture, stirring constantly until blended.
  • Slip roasted garlic from skins; mash to paste. Stir into grits mixture. Pour into 8-inch square baking dish sprayed with cooking spray.
  • Bake 30 min.; sprinkle with remaining shredded cheese. Bake 10 min. Let stand 10 min. before serving.

2 Tbsp. butter
1/2 tsp. garlic powder
1/4 tsp. ground red pepper (cayenne)

Steps:

  • Heat oven to 350°F.

1 large ear corn, kernels cut from the cob
2 cups low-sodium chicken broth
¼ cup butter
2 tablespoons white sugar
2 cups heavy whipping cream
1 cup yellow grits
1 tablespoon green onions, chopped

Steps:

  • Spray a skillet with cooking spray. Add corn kernels and cook over medium heat until browned, about 5 minutes.
  • Combine chicken broth, butter, and sugar in a saucepan over medium-high heat; bring to a boil. Add cream and bring to a boil again. Whisk in grits and browned corn kernels. Cover, reduce heat, and simmer for 5 to 6 minutes. Turn off heat and stir grits until thickened, about 1 minute.

1/4 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon tabasco brand pepper sauce
1 cup grits, white quick-cooking
4 ounces cream cheese, cut into cubes
4 ounces cheddar cheese, cut into cubes

Steps:

  • In a large saucepan over medium-high heat, combine the milk, garlic powder, salt, white pepper and Tabasco. Heat, stirring slowly and constantly, until the milk just comes to a boil. Add the grits and stir to mix. Reduce the heat to low, cover and cook until the mixture is thick and creamy, 5 to 6 minutes.
  • Add the cheeses and stir until they melt completely. Serve warm.
