- Husk 3 tomatillos. Cook in boiling water until tender, 2 to 4 minutes; drain, chop and transfer to a food processor. Halve, pit and chop 3 ripe avocados; add to the food processor along with 1/4 cup each sour cream, cilantro and mint, 1 grated small garlic clove, 2 teaspoons jalapeno hot sauce, the juice of 1/2 lime and 1 teaspoon kosher salt. Puree until smooth. Transfer to a bowl and season with more salt and cayenne.

- Boil 4 husked and rinsed tomatillos in a pot of water, 5 minutes. Puree 1/2 cup chopped cilantro, 1/2 cup chopped white onion, 1 chopped jalapeno and a splash of the tomatillo cooking water in a blender. Drain the tomatillos, add to the blender and pulse. Add 2 chopped avocados and 1 teaspoon kosher salt and pulse. Season with more salt to taste.

Steps:
- In a small saucepan, cook the tomatillos in water to cover until they turn pale green and are slightly soft, 5-6 minutes.
- Drain and put them in a food processor.
- Cut the avocado in half; remove seed; peel and add to the processor along with the remaining ingredients.
- Process until smooth.
- Adjust seasoning to taste; serve within 4 hours for best color.

Steps:
- Trim fat from around the edges of beef rib-eye steaks.
- In a small bowl combine the brown sugar, chili powder, garlic salt, and pepper.
- Pat onto both sides of the steaks.
- Let steaks stand at room temperature for 30 minutes.
- Meanwhile for sauce, in a small saucepan combine the quartered tomatillos and water.
- Bring to boiling; reduce heat.
- Cover and simmer for 5 to 7 minutes or until soft.
- Stir the cream cheese into tomatillo mixture until melted; cool mixture slightly.
- In a food processor bowl or blender container combine the tomatillo mixture, the avocado, sliced green onions, and salt.
- Cover and process or blend until sauce mixture is smooth.
- Transfer sauce to a serving bowl.
- Prepare charcoal grill or preheat gas grill.
- Grill steaks on rack of an uncovered grill directly over medium coals to desired doneness, turning halfway through.
- Allow 14 to 18 minutes for medium rare and 18 to 22 minutes for medium.
- If desired, brush the whole green onions and jalapenos lightly with oil; grill jalapenos about 10 minutes or untiil soft and lightly charred, turning occasionally.
- To serve, slice steaks.
- Serve with sauce, grilled jalapenos, and green onions.
- Sprinkle with tomato.
- Enjoy!

This is from Fine Cooking and I would give it a 5 star rating. The aromas are amazing while the tomatillos and other veggies are roasting. I used heavy cream instead of creme fraiche as I did not have any. The addition of heavy cream or crème fraîche qualifies enchiladas made with this sauce as enchiladas suizas (Swiss-style enchiladas).

- Position a rack as close to the broiler as possible and heat the broiler. Arrange the tomatillos, fresh chiles (if using), onion slices, and garlic in a small, shallow baking pan. Broil, turning to ensure even cooking, until the tomatillos are soft and slightly blackened, about 10 minutes. Transfer the broiled ingredients to a blender and add the cilantro (if you're using a canned chipotle, add it now, too). Blend until smooth.
- Heat the oil in a medium saucepan over medium-high heat. Add the tomatillo mixture and cook, stirring, for 2 to 3 minutes. Add 2 cups of the broth and simmer until the sauce is thick enough to coat the back of a spoon, about 20 minutes. Taste the sauce. It should be a little tart, but it shouldn't make your mouth pucker. If it's too tart, add more broth and simmer until the sauce thickens again. Remove from the heat and whisk in the crème fraîche or heavy cream and the salt. Let cool slightly before making the enchiladas.

- The sauce can be made ahead and refrigerated for up to 2 days or frozen for up to a month.
