1 tablespoon olive oil
1 tablespoon butter
1 tablespoon chopped shallot
1 cup sliced mushrooms
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup medium grain rice (any rice would do)
1/4 cup white wine
3/4 cup chicken broth

Steps:

  • Heat olive oil and butter in 8" skillet over medium-high heat.
  • Add shallots, sauteing for 1 minute.
  • Add mushrooms, sauteing for about 2 minutes.
  • Add salt, pepper and rice, stirring to coat rice, 2 minutes.
  • Add wine and bring to a boil, stirring occasionally until wine is almost gone.
  • Add chicken broth and stir well.
  • Bring to a boil, cover and reduce heat to simmer.
  • Keep covered for 20 minutes, without lifting the lid.
  • Remove from heat and fluff with fork.
  • Add more salt or pepper to taste if needed and serve.

  • In a heavy saucepan, heat the oil and butter, add the onion and mushrooms and sauteed until soft and translucent.
  • Pour in the rice and stir to coat the granules well. Cook until the edges of the rice grains have turned translucent, but not toasted.
  • Add the stock and salt. Cover the pan tightly, placing a sheet or two of paper toweling under the lid, reduce the heat to low and cook until all the liquid has evaporated and grains are tender.

1 tbsp olive oil
1 large onion , chopped
2 tsp chopped rosemary or 1 tsp dried
250g chestnut mushroom , quartered
2 red peppers , sliced
400g can chopped tomato
425ml vegetable stock
handful parsley , chopped

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Tip the rice into a sieve, rinse under cold running water, then leave to drain. Heat the oil in a flameproof casserole, add the onion, then fry until softened, about 5 mins. Stir in the rosemary and mushrooms, then fry briefly. Add the rice, stir to coat in the oil, then add the peppers, tomatoes, stock and some freshly ground pepper. Bring to the boil, give it a stir, cover tightly with a lid, then bake for 20-25 mins until the rice is tender. Scatter over the parsley and serve.

1 1/2 tablespoons butter
1 1/2 tablespoons oil
1 onion, diced
2 cups fresh mushrooms, sliced
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon black pepper
2 teaspoons minced garlic
2 tablespoons fresh parsley, minced
2/3 cup uncooked rice
1 1/3 cups water
1/3 cup toasted slivered almonds

Steps:

  • In a large nonstick frying pan put the butter, oil, onion and mushrooms and stir-fry over medium heat until the onion is 3/4 cooked. Add the basil, salt, black pepper, garlic and parsley. Mix well and cook for another 2 minutes.
  • Add the rice and stir until all of the rice grains are covered with the oil/butter mixture. This will help keep the rice grains separate. Add the water and stir again. Increase heat to high and bring mixture to a good boil. Cover, reduce heat to low and cook for 20 minutes. After 20 minutes, the rice should be tender and the water should have been absorbed. Remove from heat. Stir in the almonds. Serve hot.
