TUNA POTATO SUPPER

- Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high until tender, turning once, 7-9 minutes. Cool slightly. Cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving a thin shell., In a bowl, mash the pulp. Stir in the tuna, celery, onion, salad dressing, salt and pepper. Spoon into potato shells. Sprinkle with cheese. Place on a baking sheet. Broil 4-6 in. from the heat until cheese is melted, 5-6 minutes.

This is one surefire dish that gets my picky 2 year old to eat anything in the "protein" group; he always asks for more. It's easy, delicious and creamy. The french fried onions and cheese (I've always used shredded cheddar) are the key ingredient in this recipe.

Steps:
- Combine soup and milk in a 2 quart microwavable shallow dish.
- Stir in pasta, tuna, 2/3 cup French Fried Onions, vegetables and cheese.
- Cover and microwave on HIGH for 10 minutes or until heated through, stirring halfway through cooking time.
- Top with remaining 2/3 cup onions and microwave for 1 minute or until onions are golden.
- For oven baking, follow steps 1 and 2 then top casserole with the remaining 2/3 cup onions and bake at 350 degrees, covered, for 30 minutes or until onions are golden.

BAKED POTATOES WITH TUNA AND CHEESE
I'm not a tuna salad lover so I wasn't sure about this recipe when I first ran across it but since there's no mayo, it's not anything like tuna salad -- at least not to me. Cooking and prep time does NOT include the time for baking the potatoes since the time varies greatly depending on whether you use the oven, microwave or crock pot for baking the potatoes initially.

Steps:
- Bake potatoes and then cut each in half lengthwise.
- Scoop out the inside of the potatoes keeping the skins in tact.
- In a separate bowl, mash the potato insides with milk and butter. Feel free to adjust the milk and butter to your liking.
- Add tuna, salt, onions and cheese to the potato mixture and mix well.
- Pile into the potato skins and add extra cheese on top if you'd like.
- Bake in a 400 degree oven for about 15 minutes or until warmed through.

- Coat bottom of 2 quart microwave dish with 3 tablespoons of butter.
