Categories     dessert

Time 2h30m

Yield 10 to 12 servings

Number Of Ingredients 13

Nonstick cooking spray, for the pan
3 1/4 cups all-purpose flour (see Cook's Note)
5 teaspoons baking powder
1/4 teaspoon fine salt
3 sticks (1 1/2 cups) unsalted butter, at room temperature
1 1/2 cups granulated sugar
Zest of 3 lemons
6 large eggs
1/2 cup milk
1 teaspoon pure vanilla extract
4 ounces cream cheese, at room temperature
2 cups confectioners' sugar, sifted
2 to 3 tablespoons lemon juice

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray a 10-cup nonstick bundt pan generously with cooking spray.
  • Sift the flour, baking powder and salt into a medium bowl and stir to combine.
  • Cream the butter, granulated sugar and lemon zest in a stand mixer fitted with the paddle attachment on medium-high speed until lightened, about 2 minutes. Add the eggs one a time, making sure each is fully combined before adding the next and stopping to scrape down the sides of the bowl once. Turn the speed to low and add half of the flour mixture; mix until combined. Add the milk and vanilla and mix until combined, then scrape down the sides of the bowl. Add the remaining flour mixture and mix until combined, then turn the speed up to medium and mix until the batter is smooth, a few seconds.
  • Spread the batter into the prepared pan and bake until a tester inserted in the center of a side comes out clean, about 40 minutes. Cool on a rack for 10 minutes, then unmold onto the rack and let cool completely.
  • For the glaze: Combine the cream cheese and confectioners' sugar in a stand mixer fitted with the paddle attachment. Beat on low speed until smooth. Add 2 tablespoons lemon juice and mix until smooth and pourable but not runny; add the remaining tablespoon of lemon juice if needed. Pour the glaze evenly over the cake and let drip down the sides.

INCREDIBLY QUICK AND EASY LEMON GLAZE FOR ANGEL FOOD CAKE

Incredibly Quick and Easy Lemon Glaze For Angel Food Cake image

This quick and easy lemon glaze for angel food cake is the perfect way to add some sweetness, moisture, a drool-worthy texture to your cake.

Provided by Cakedecorist

Categories     Dessert

Time 10m

Number Of Ingredients 4

3 cups powdered sugar
3-6 tablespoons 45-90 ml milk
1 tablespoon 15 ml lemon juice
Zest of 2 lemons

Steps:

  • Sieve the powdered sugar. It is extremely important to sift your icing sugar well - three times if you have to! There shouldn't be any lumps or granules of powdered sugar, otherwise, it will show in the final texture of your glaze.
  • Add the remaining ingredients.Add 3 tablespoons of milk and the lemon juice to the powdered sugar and whisk the ingredients well. You can add more milk to the mixture to help thin the consistency, but 3 tablespoons are a good starting point.Only once you are happy with the consistency should you add the lemon zest. This is also, in our opinion, a crucial addition that will add that extra lemony punch!
  • Glaze your cake. You do not need to heat the glaze before pouring it over your angel food cake. You can simply give it a good whisk and pour immediately. This lemon glaze recipe is fantastic because it has a nice thick consistency that will sit beautifully on top of the cake instead of thinning or running down completely.

ANGEL FOOD CAKE WITH LEMON GLAZE

Angel Food Cake with Lemon Glaze image

This is an easy recipe for making Angel Food Cake at home. It's so light and fluffy that it melts in your mouth. It's great plain. Or you can frost it with your favorite icing, top it with whipped cream and berries, or drizzle Lemon Glaze on top. TIPS • Don't grease the tube pan. Angel Food Cake needs to "climb" up the pan in order to reach the proper volume and texture. Greasing the pan causes the cake to slide, and it will be dense. • In Step #4, add sugar slowly to the batter in order to retain volume. Adding sugar too quickly will remove air that was introduced during beating.

Categories     Cakes

Number Of Ingredients 12

ANGEL FOOD CAKE
9 large egg whites (keep yolks for another recipe)
1 1/2 cups - granulated sugar, divided (1/2 cup + 1 cup)
1 cup - cake flour (tip: if you don't have cake flour, measure 1 cup all-purpose flour, remove 2 tbsp flour and replace it with 2 tbsp cornstarch, and sift the flour and cornstarch together)
1 1/4 teaspoon(s) cream of tartar
1 teaspoon(s) vanilla extract
1/2 teaspoon(s) almond extract
1/4 teaspoon(s) salt
LEMON GLAZE (OPTIONAL)
1 cup - confectioner's sugar
2 tablespoon(s) lemon juice
1 tablespoon(s) lemon zest

Steps:

  • Place egg whites in a large mixing bowl, and let stand 30 minutes to reach room temperature.
  • Sift 1/2 cup sugar with the 1 cup flour twice; set aside.
  • Place oven rack in lowest position. Preheat oven to 350°F.
  • Add cream of tartar, both extracts and salt to egg whites. Beat on medium speed until soft peaks form, about 5 minutes. Gradually add remaining sugar, about 2 tablespoons at a time, beating on High speed, until stiff peaks form, about 4 to 6 more minutes. Fold in the sugar-flour mixture, about 1/2 cup at a time.
  • Carefully spoon the batter into an ungreased 10-inch tube pan. Use a butter knife and slice through the batter in several spots, to remove air pockets.
  • Bake on lower rack for 35 to 40 minutes or until the top is lightly browned and the entire top appears dry. Remove pan from oven, immediately invert to retain volume and to keep cake from sinking into itself. Allow cake to cool in pan for about 1 hour.
  • Run a sharp knife around the edge of the pan and around the center tube of pan. Transfer cake from pan to a serving platter.
  • LEMON GLAZE: Stir together the confectioners' sugar, lemon juice and lemon zest. Use a spoon to drizzle the glaze in a random pattern over the top of the cake, allowing it to drip down the sides.

LEMON POUND CAKE

Lemon Pound Cake image

According to my dad, every Southern woman knows how to make a good pound cake. My version is based on my grandmother's recipe. She always added lemon, and I've followed suit with loads of bright, tart lemon in both the batter and glaze. To get the cake out of the pan, I'm sharing a trick that guarantees your loaf won't stick or break-equal parts softened butter and flour get mixed together and generously brushed in every nook and cranny before filling.

Provided by Vallery Lomas

Categories     dessert

Time 1h40m

Yield 8 to 12 servings

Number Of Ingredients 11

1 1/2 cups (3 sticks/339 grams) unsalted butter, at room temperature, plus 2 tablespoons for the pan
3 cups (375 grams) all-purpose flour, plus 2 tablespoons for the pan (see Cook's Note)
One 8-ounce package (1 cup/226 grams) cream cheese, at room temperature
2 teaspoons pure vanilla extract
1/4 teaspoon kosher salt
3 cups (600 grams) granulated sugar
6 large eggs, at room temperature, lightly beaten
Finely grated zest and juice of 2 lemons (about 2 tablespoons zest and 1/4 cup juice)
Finely grated zest of 1 lemon and juice of 1 lemon (about 2 tablespoons)
1 1/2 cups (180 grams) confectioners' sugar, sifted
1 to 2 tablespoons milk, if needed

Steps:

  • For the cake: To prepare the pan, mix 2 tablespoons softened butter and 2 tablespoons flour (equal parts of each) in a small bowl until combined. Use a pastry brush to generously coat the inside of a 10-cup Bundt pan or two 9-by-5-inch loaf pans and set aside. (Alternatively, spray with nonstick baking spray with flour.) Place a rack in the middle of the oven and preheat to 325 degrees F if using a bundt pan or 350 degrees F if using loaf pans.
  • In a stand mixer fitted with the paddle attachment, beat the remaining 1 cup softened butter and the cream cheese on medium-low speed until smooth, creamy and well combined, about 1 minute. Beat in the vanilla and salt.
  • With the mixer running, pour the sugar into the bowl in a steady stream. The batter will start to take shape. Increase the speed to medium and mix until the batter becomes pale, fluffy and has lightened in color, 4 to 5 minutes.
  • Add the eggs two at a time, mixing until they are completely incorporated before adding the next, about 1 minute for each addition. Add the lemon zest and lemon juice and mix until just combined.
  • Stop the mixer and use a rubber spatula to scrape the bottom and sides of the bowl. If the batter appears broken from the addition of the final 2 eggs, don't worry-it will come together in the next step.
  • With the mixer off, add the flour all at once. Mix on low speed just until no streaks of
  • flour remain. Scrape the sides and bottom of the bowl and mix in any bits of flour that were
  • not fully incorporated. Scrape the batter into the prepared pan or pans and smooth the top.
  • Bake until a cake tester inserted deep into the center of the bundt cake or loaves comes out clean, about 1 hour 20 minutes for a bundt and 50 to 60 minutes for loaves.
  • Cool on a wire rack for 10 minutes. Use a small angled spatula or butter knife to loosen the cakes from the pans by running it around the loaves or around the inside and outside perimeters if you baked a bundt. Invert the cakes onto the rack and cool to room temperature.
  • For the lemon glaze: Whisk together the lemon zest, lemon juice and confectioners' sugar in a small bowl. If necessary, add a little milk until the glaze reaches a pourable consistency. If it is too thin, add more confectioners' sugar. Set aside.
  • Once the cake has cooled completely, drizzle the glaze all over and allow to drip down the sides.
