500 g flour
350 g sugar
250 g margarine or 250 g butter
2 eggs
3 teaspoons ground cloves
3 teaspoons cinnamon
2 teaspoons baking soda
2 tablespoons dark cocoa
milk, as needed

Steps:

  • Cream together the sugar and softened margarine or butter. Mix in the eggs. Sift the flour with the spices, baking soda and cocoa. Add to the margarine mix, one tablespoonful at a time. Alternate with splashes of milk, and mix well in between (batter should be medium thick). Pour into cake tins and bake at 190°C until cake is firm. Cool.
  • My mother makes these cakes about as thick as her thumb, and uses three layers of cake and two layers of vanilla butter icing. Tastes great with whipped cream.

1 (18.25 ounce) package chocolate cake mix
1 (3.9 ounce) package instant chocolate pudding mix
1 cup vegetable oil
4 eggs
½ cup hot water
1 cup sour cream
1 teaspoon vanilla extract
1 cup mini semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a Bundt pan.
  • Combine cake mix, pudding mix, oil, eggs, water, sour cream, and vanilla. Beat until smooth. Stir in chocolate chips. Pour batter into prepared pan.
  • Bake for 1 hour. Allow to cool.

This is an EASY recipe I made up based on looking at various carrot cake recipes and using the bits I liked best from them. I love a moist and spicy carrot cake and this one works every time.

2 large carrots, grated (2 cups)
2 eggs
3/4 cup caster sugar
2 tablespoons golden syrup
1 1/2 cups self raising flour
1/2 teaspoon bicarbonate of soda
3/4 cup vegetable oil
2 teaspoons mixed spice
1 teaspoon cinnamon (optional)
1/2 teaspoon nutmeg (optional)

Steps:

  • Sift dry ingredients into bowl.
  • Add all other ingredients and mix well.
  • Bake approximately 3/4 hour at moderate temperature (180C).
