GERMAN APPLE PANCAKE

German Apple Pancake image

If you're looking for a pretty dish to make when having guests for brunch, try this. Everyone I've served it to has enjoyed it-except for one time, that is, when my husband tried to make it following my recipe, which I'd written down incorrectly! If you don't leave out the flour as I did, it'll turn out terrific! -Judi Van Beek, Lynden, Washington

GERMAN PUFF PANCAKES

German Puff Pancakes image

Puffy oven-baked buttery pancake. It's SO easy! You may never make traditional pancakes again. Pour your favorite syrup over it, or just dust powdered sugar on top. There's not much need to add more butter because it's already baked onto the top and forms a delicious salty and buttery crust.

GERMAN APPLE PUFF PANCAKE

German Apple Puff Pancake image

We saw this recipe on Michelle Greenwald's (www.magicalmeltingpot.com)Yahoo Blog, and gave it a try. We both assumed it would be too sweet and gooey for breakfast, but since it's dreary and rainy this morning, figured we'd fire up the oven and give it a try. YUM! It wasn't too sweet at all, and the pancake had a bit of a custardy taste. It was easy to put together and made enough for the both of us, with a couple bites of crust left over for our four dogs. The recipe omits instructions for making up the batter, but we just combined the ingredients and mixed well. We used a 10-inch iron skillet, but any oven-safe non-stick pan would do.

Time 30m

Yield 2 serving(s)

Number Of Ingredients 8

1 large apple (eg. Delicious)
3 tablespoons butter
3 tablespoons sugar
1 1/2 teaspoons ground cinnamon
3 eggs, at room temperature
1/2 cup milk, at room temperature
1/2 cup all-purpose flour
1/2 teaspoon salt

Steps:

  • Preheat oven to 425 degrees.
  • Mix the cinnamon and sugar in a small bowl.
  • Peel the apples and cut into 1/4-inch slices.
  • Melt the butter in a skillet.
  • Add apple slices and sprinkle with cinnamon/sugar mixture. Saute the apples until they soften and become light golden brown on both sides (approx. 4-5 minutes).
  • While sauteing the apples, beat eggs and combine with milk, flour and salt, stirring well to make a smooth batter.
  • Pour the batter over the apples and place the pan in the hot oven.
  • Bake approximately 18 minutes. Do not open oven while baking. Use oven light to check. Pancake is done when it no longer appears wet on top.
  • To serve, invert the pan over a dinner plate.

GERMAN APPLE PANCAKE WITH CREME FRAICHE

German Apple Pancake with Creme Fraiche image

Provided by Food Network

Time 35m

Yield 4 servings

Number Of Ingredients 12

7 large eggs
1 tablespoon pure vanilla extract
3/4 cup sugar
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
2 tablespoons unsalted butter
3 Golden Delicious apples, peeled, cored and cut into 1/2-inch wedges
1 1/2 teaspoons ground cinnamon
1 1/2 tablespoons sugar
1 tablespoon confectioners' sugar
1/4 cup creme fraiche
1 cup strawberries, for garnish

Steps:

  • Preheat broiler.
  • For the batter: in a blender or food processor, combine the eggs, vanilla, and 3/4 cup sugar. Blend for about 15 seconds, until combined. Add the flour and baking powder and mix for 60 seconds more, or until very smooth. Set the batter aside.
  • Heat a 12-inch nonstick skillet over medium heat and melt the butter. Add the apples and cook until softened, about 4 to 5 minutes. Add the cinnamon and remaining 1 1/2 tablespoons sugar, sprinkling them evenly over the apples, and cook, stirring, until the apples are glazed and slightly translucent at the edges, about 2 minutes.
  • Distribute the apples evenly in the skillet and pour the batter over them. (Chef's Note: You may also make 4 individual pancakes, using a smaller pan. Just use 1/4 of the apples and 1/4 of the batter for each.) Cook until the bottom seems quite firm, about 8 minutes. Transfer the pan to the broiler and, while watching carefully, cook until the pancake is firm throughout and golden on top.
  • Cut the pancake into 4 wedges and transfer them, apple side up, to serving plates. Sprinkle with the confectioners' sugar, place a dollop of crème fraiche on top, and garnish with the strawberries.

GERMAN APPLE PANCAKE

German Apple Pancake image

Also known as a Dutch baby, this is a terrific 'special day' recipe. If you are strapped for time, you can start it the evening before and pretty much pop it in the oven. The presentation is excellent! You can shorten the preparation time by using apple pie filling, but the crisp of new apples really makes it.

OLD-WORLD PUFF PANCAKE

Old-World Puff Pancake image

My mom told me her mother-in-law showed her how to make this dish, which became popular during the Depression, on their "get acquainted" visit in 1927. At that time, cooks measured ingredients in pinches, dashes and dibs. But through the years, accurate amounts were noted. My wife and I continue to enjoy this dish today, particularly for brunch. -Auton Miller, Piney Flats, Tennessee

SUPER PUFFY GERMAN PANCAKE

Super Puffy German Pancake image

This is a family special I grew up with my mom making almost every saturday. It puffs beautifully and looks so complicated, but I've found (with my own family) it's easier than any other breakfast I can make, besides cereal. It impresses guests like you wouldn't believe. My husband still brags about how his wife is such the gourmet...no one needs to know how easy it really is

Provided by Luvinmyfamily

Categories     Breakfast

Time 25m

Yield 1 pancake, 4 serving(s)

Number Of Ingredients 5

1 cup milk
2 tablespoons butter
4 eggs
1 cup flour
1 teaspoon vanilla (optional)

Steps:

  • Preheat oven to 425.
  • While oven is heating, pour all the milk into blender, and set on the lowest speed. Just let it run, the more bubbles the milk has, the puffier the pancake will be.
  • When oven is hot, put butter in large cast iron skillet and set into the oven, until the butter is bubbly in the pan.
  • Crack eggs in a separate cup, and pour one at a time into blender (while it's still blending).
  • Pour in the flour and the vanilla (if desired) and once it's mixed, pour immediately into hot cast iron skillet.
  • Cook for 20 minutes.
  • Now we're high altitude at 5000ft -- so if your lower, you may need to cook it longer. Just watch it, and when the edges are browned and it's all puffy, your ready to roll.
  • Eat it just like any pancake, or some I know like it with lemon juice and powdered sugar. But either way, you'll love it! =D.
  • Note: If you want to show it off, you'll have to make sure you have an audience as soon as it comes out of the oven, because it begins to collapse as it cools. It will keep some of its shape, but the real 'pow' is first thing out of the oven.

DUTCH BABY (AKA: GERMAN PANCAKE OR PUFF PANCAKE)

Dutch Baby (Aka: German Pancake or Puff Pancake) image

My sister Daralyn introduced this recipe to our family soon after she was married. Her recipe evolved from a favorite breakfast, to our families standard birthday breakfast. When served for a birthday we add candles and a round of "Happy Birthday" but it tastes just as good without those to amenities!

Time 25m

Yield 2 serving(s)

Number Of Ingredients 5

3 eggs
1/2 cup milk
1/2 cup flour
1/4 teaspoon salt
1 tablespoon butter

Steps:

  • Preheat the oven to 450°F Beat eggs with a wire whip until well aerated. Add milk and whip again. Add salt and flour and stir with a fork, until just blended.
  • Meanwhile, melt butter in a cast-iron skillet or a 8 x 8 baking dish with at least 2" sides. Run butter all over the pan bottom and up the sides so pancake can climb!
  • Bake for 15 minutes. Serve with butter, syrup and powdered sugar. It is also good when sprinkled with a little lemon juice or topped with fruit (blueberries, sliced peaches, sliced apples or mixed berries).
  • *Can be doubled and baked in a 9 x 13 pan with 2" sides.
