1 cup ketchup
1/3 cup French salad dressing
1/3 cup reduced-sodium soy sauce
1 tablespoon Worcestershire sauce
1 pound boneless beef sirloin steak, cut into 1-inch cubes
1 cup fresh baby carrots
2 tablespoons water
1 pound medium fresh mushrooms, halved
1 medium green pepper, cut into 1-inch pieces
1/2 medium onion, cut into 1-inch pieces
Hot cooked rice, optional

Steps:

  • In a small bowl, combine the ketchup, salad dressing, soy sauce and Worcestershire sauce. Transfer 1/3 cup to another bowl for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add steak. Seal bag and turn to coat; refrigerate for at least 1 hour. , Place carrots and water in a microwave-safe dish. Cover and microwave on high for 4 minutes; drain. Drain and discard marinade. On 10 metal or soaked wooden skewers, alternately thread beef, and vegetables. , Grill, covered, over medium-hot heat for 18-20 minutes or until meat reaches desired doneness, basting frequently with reserved marinade and turning once. Serve with rice if desired.

These are great either right off the grill or at room temperature - which makes them the perfect dish to pack up and take to the park on a hot summer night. The preserved lemon is a surprisingly good compliment to the beef tenderloin. Try them with a side of Cucumber-Yogurt Sauce.

2 pounds beef tenderloin, trimmed and cubed into 16 pieces
1 red bell pepper, seeded and diced large
1 green bell pepper, seeded and diced large
4 preserved lemons, halved (see Cook's Note)
8 white mushrooms, wiped clean and stems trimmed
1 red onion, diced large
2 tablespoons chopped Italian parsley leaves
1 tablespoon chopped garlic
2 teaspoons dried oregano
2 teaspoons onion powder
1 teaspoon curry powder
1 teaspoon ground cinnamon
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
1 cup olive oil
Cucumber-Yogurt Sauce, recipe follows
1 cup plain yogurt
1/2 cucumber, seeded and diced
1 tablespoon diced onion
1 lemon, zested
Pinch dried mint
Kosher salt and freshly ground black pepper

Steps:

  • Once your meat and veggies have been prepped let the skewering fun begin! Thread a piece of green pepper onto the skewer. Follow it with a cube of beef, then one half of a preserved lemon, a couple of pieces of red onion, another piece of beef, a piece of red pepper and cap it with a mushroom. Repeat the process with the rest of the skewers. Set all of the kabobs into a roasting pan in one layer and set aside.
  • Place the remaining ingredients in a medium sized bowl and whisk until well incorporated. Pour the mixture over the kabobs and refrigerate 1 hour.
  • Preheat an outdoor charcoal or gas grill to high heat. Place the kabobs on the grill and cook 3 minutes per side. Remove and serve immediately or let cool, pack 'em up and take them on a picnic.
  • Serve with Cucumber-Yogurt Sauce.
  • Combine all ingredients in a food processor and pulse several times to make a chunky sauce.

2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
1/8 teaspoon garlic powder

1 pound beef top sirloin steak, cut into 1-1/2-inch cubes
8 to 10 bacon strips, cut in half
1 sweet red pepper, cut into chunks
1 green pepper, cut into chunks
2 small zucchini squash, cut into chunks
8 medium fresh mushrooms
1 large onion, quartered, optional

Steps:

  • In a small bowl, whisk the first five ingredients. Place half of marinade in a large resealable plastic bag. Add beef; seal bag and turn to coat. Refrigerate 8 hours or overnight. 1 teaspoon dry mustard

1 dash hot sauce
2 pounds beef sirloin, cut into 1 inch cubes
½ pound fresh mushrooms, stems removed
1 pint cherry tomatoes

  • In a saucepan over low heat, mix the tomato juice, butter, onion, ketchup, mustard, salt, paprika, pepper, garlic, Worcestershire sauce, and hot sauce. Simmer for 30 minutes, remove from heat, and allow to cool.

2 lbs beef, cut into 1 inch chunks (blade "or" rib steak "or" outside round etc)
1/2 cup lemon juice, fresh
1/4 cup lite olive oil
3 tablespoons honey
1 tablespoon hot pepper, minced (Jalepeno "or" other hot pepper)
1 tablespoon fresh ginger, minced
1 tablespoon soy sauce
1 1/2 teaspoons allspice
1/2 teaspoon cinnamon

  • Whisk the marinade ingredients to gether.
  • Pour into a zip lock bag and add the meat.

1/3 cup A.1. Thick & Hearty Sauce
2 Tbsp. chopped fresh cilantro
2 Tbsp. honey
1 tsp. zest and 3 Tbsp. juice from 2 or 3 limes
1/2 tsp. grated fresh ginger
1-1/2 lb. beef flank steak, cut into 1/2-inch-wide strips

Steps:

  • Mix all ingredients except meat until blended.
  • Thread meat onto 6 skewers; place in shallow glass dish. Pour 1/2 cup steak sauce mixture over kabobs. Refrigerate 30 min. to marinate, turning occasionally.
  • Heat grill to medium heat. Remove kabobs from marinade; discard marinade. Grill kabobs 12 to 15 min. or until meat is done, turning occasionally and brushing with remaining steak sauce mixture for the last 5 min.

1 tablespoon caribbean jerk rub
1 (10 ounce) package couscous
2 cups boiling water

1 medium cucumber, sliced
4 tablespoons olive oil
2 tablespoons orange juice
1 orange, zest of

  • Meanwhile, in large bowl combine couscous and boiling water and 1/2 teaspoon salt; let sit 5 minutes. Stir cranberries and green onions into couscous.
