2 tablespoons fat drippings (from any type of roasted meat)
2 cups broth OR bouillon
2 tablespoons Argo® Corn Starch
¼ cup cold water

Steps:

  • Cook fat drippings and broth in a roasting pan or saucepan over medium heat, until hot.
  • Stir corn starch and water in a small bowl until smooth; add to pan. If desired, add a dash of poultry seasoning for chicken and turkey gravies, a sprinkle of thyme for beef or a pinch of rosemary for pork. Stirring constantly with a wire whisk, bring to a boil over medium heat and boil 1 minute. Season with salt and pepper.

½ cup all-purpose flour
1 clove garlic, minced
1 quart cold beef broth
¼ cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
salt and ground black pepper to taste

Steps:

  • Melt butter in a saucepan over medium-low heat. Add flour; cook and stir until mixture is golden-brown and smells like cooked pie crust, about 5 minutes. Add garlic; cook for 30 seconds. Whisk in 1 cup of broth.
  • Stir remaining broth, ketchup, Worcestershire sauce, and mustard into the mixture in the saucepan. Bring to a simmer, whisking, and reduce heat to low. Cook, stirring occasionally, until thickened, about 20 minutes. Season with salt and pepper.

Steps:

  • Melt butter in pan over medium heat.
  • Add flour, stirring constantly for 2 minutes, you want the mixture to turn light brown but not burn.
  • Add broth, salt and pepper and continue to stir for 3 minutes, sauce should be getting thicker.
  • Move to serving bowl.

1/4 pound (1 stick) unsalted butter
1 1/2 cups chopped yellow onion (2 onions)
1/4 cup flour
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Defatted turkey drippings plus chicken stock to make 2 cups, heated
1 tablespoon Cognac or brandy
1 tablespoon white wine, optional
1 tablespoon heavy cream, optional

Steps:

  • In a large (10 to 12-inch) saute pan, cook the butter and onions over medium-low heat for 12 to 15 minutes, until the onions are lightly browned. Don't rush this step; it makes all the difference when the onions are well-cooked.
  • Sprinkle the flour into the pan, whisk in, then add the salt and pepper. Cook for 2 to 3 minutes. Add the hot chicken stock mixture and Cognac, and cook uncovered for 4 to 5 minutes until thickened. Add the wine and cream, if desired. Season, to taste, and serve.

Steps:

  • Heat the butter in a saucepan (or in a roasting tin containing meat juices from your roast), then scatter over the flour. Stir until it forms a dark, sandy paste. Splash in the port, stir in the redcurrant jelly and cook down until sticky. Stir in the stock and simmer for 5 mins. Decant into a warmed gravy jug to serve.

4 rashers bacon , chopped
500g pack chicken wing
oil , for frying (optional)
1 onion , unpeeled and cut into quarters
1 carrot , roughy chopped
1 leek , roughly chopped
1 garlic bulb, unpeeled and halved
bunch herbs such as bay, thyme, parsley stalks (just use whatever you have, don't buy especially)
300ml white wine
1.2l chicken stock
2 tbsp butter
2 tbsp plain flour

Steps:

  • Dry-fry the bacon in a large pan until golden. Remove, then fry the wings (add a splash of oil if they start to stick), turning until browned all over. Tip into a pan with the remaining ingredients (apart from the butter and flour) and the bacon. Simmer, skimming off any froth, for about 2 hrs.
  • Strain through a sieve, then heat the butter in a saucepan and, when foaming, add the flour. Cook, stirring constantly, for 1 min. Gradually pour in the stock, stirring all the time, to get rid of any lumps. Simmer until you have a thin gravy, taste and season. Can be made up to 3 days in advance and kept chilled, or frozen for up to 3 months.

  • Place the pan drippings from cooking your meat (get every last drop and loosened browned drippings) in a fat separator, or through a mesh strainer. If you don't have 3 cups, add the remainder of beef or chicken broth.
  • First make the roux. Melt 3 Tablespoons of butter over medium-heat in a large saucepan. Allow to start to bubble. Whisk in 3 Tablespoons of flour and whisk until it has thickened and formed a paste. Cook for 3-5 minutes or until smooth and creamy. Wait to add any seasonings until after the broth has been added.
  • Then slowly whisk in the broth from the meat. Alternate whisking and adding liquid until you reach the consistency you like. Bring to a light simmer. Cook until it has thickened, about 3 to 5 minutes. If you'd like a thicker gravy, add less liquid. Add more liquid for a thinner gravy.
  • Season with salt and pepper (or additional seasonings), to taste. Add a dash or two of Worcestershire if desired. Serve over meat and mashed potatoes.
