1/2 cup granulated sugar
3 tablespoons unsweetened cocoa powder
1/4 cup cornstarch
1/2 teaspoon salt
2 3/4 cups milk
2 tablespoons butter, room temperature
1 teaspoon vanilla extract

Steps:

  • In a large saucepan over medium-low heat, whisk together the sugar, cocoa powder, cornstarch, and salt. Gradually stir in the milk.
  • Bring the mixture to a boil, about 7 to 8 minutes, stirring occasionally with a whisk. Reduce heat to low and stir constantly, scraping the bottom and the sides of the saucepan to avoid burning. Do this for about 1 to 2 minutes, or until it's thick enough that the pudding coats the back of a metal spoon.
  • Remove from the heat and stir in the butter and vanilla.
  • Let the pudding cool to room temperature. Transfer the pudding into a bowl and press a sheet of plastic wrap directly over its surface.
  • Refrigerate for 1 to 2 hours. Serve either cold or at room temperature. Enjoy!

This healthy chocolate pudding is super easy and delicious, but feels indulgent. Whip up a batch to stay cool in the summer, or for a cozy winter treat!

8 cups of whole milk (see notes)
3/4 to 1 cup of sugar (I prefer it less sweet)
3/4 cup + 2 tablespoons of packed cornstarch
1/3 cup of dark cocoa powder (I prefer Hershey's Special Dark)
Pinch of salt
1 teaspoon of vanilla extract

Steps:

  • Place 7 cups of milk in a large saucepan on medium-low or medium until it's steaming but NOT boiling. Stir occasionally.
  • While the milk is cooking, place the other cup of milk in the blender with the sugar, cornstarch, cocoa, and pinch of salt.
  • Once the milk on the stove is steaming, add the cup of milk/cocoa from the blender slowly while stirring.
  • Continue cooking, stirring constantly to keep it from sticking or burning, until the mixture thickens and comes to a light thick bubbling boil (not an aggressive rolling boil).
  • Remove from heat and stir in the vanilla. You can serve hot with whipped cream, though I prefer it stone cold from the fridge all on its own.

1/2 cup sugar
3 tablespoons cornstarch
3 cups whole milk
5 ounces bittersweet or semisweet chocolate, chopped
Pinch of salt
1 tablespoon vanilla extract
1 cup heavy cream
1 tablespoon sugar
1/4 teaspoon ground cinnamon

Steps:

  • Make the pudding: Whisk the egg yolks, sugar and cornstarch in a large bowl.
  • Combine the milk, chocolate and salt in a saucepan over medium heat and stir until the chocolate melts. Gradually pour the hot chocolate mixture into the egg mixture, whisking constantly. Pour back into the saucepan and stir until thick, 12 to 15 minutes. Remove from the heat and stir in the vanilla, then divide among 6 to 8 dessert cups or dishes. Cover with plastic wrap and refrigerate until set, about 2 hours.
  • Meanwhile, make the cinnamon cream: Whip the cream with the sugar in a bowl until it just holds soft peaks; fold in the cinnamon. Serve with the pudding.

heaping 1/8 tsp salt
1/4 cup dutch cocoa powder
1/3 cup sweetener ((sugar, pure maple syrup, erythritol, or honey))
1/2 cup milk of choice + 3 tbsp cornstarch
optional 3 oz chocolate chips or broken-up bar
3/4 tsp pure vanilla extract

Steps:

  • Healthy Chocolate Pudding Recipe: Heat the 2 cups milk of choice in a saucepan with the salt, cocoa powder, and sweetener. Meanwhile, whisk the cornstarch and 1/2 cup milk in a small bowl until dissolved. When the 2 cups milk are warm, add the cornstarch mixture and bring to a boil. Once boiling, stir constantly for 2 minutes. Lower to a simmer for an additional minute, then turn off the heat. Once the heat is off, stir in the vanilla and broken-up chocolate pieces until the chocolate melts. Transfer the pudding to the refrigerator to thicken. It gets thicker the longer it sits and will be ready to consume after a few hours or overnight. *Note: I've not tried arrowroot and have only tried this recipe with Dutch cocoa powder so can't vouch for the taste if regular unsweetened cocoa powder is used in its place. ¼ cup cornstarch
⅓ cup white sugar, or more to taste
1 cup semisweet chocolate chips
1 pinch salt

Steps:

  • Combine 1/2 cup milk and cornstarch in a small bowl. Whisk or stir with a fork until smooth and all lumps have been incorporated.
  • Combine remaining milk with sugar in a medium saucepan over low heat. Slowly whisk in the cornstarch mixture. Cook, whisking as needed to prevent lumps from forming, until mixture begins to thicken, 8 to 10 minutes. Add chocolate chips and salt. Continue stirring until chips are completely melted and pudding is smooth and thickened, about 7 minutes more.

2 tablespoons cornstarch

Steps:

  • Melt chocolate in a saucepan or in the microwave and allow to cool slightly.
  • Sift cocoa, corn starch, sugar and salt together in a large, heavy-bottomed saucepan.
  • Slowly whisk in the half and half, then the egg yolks, then the milk.
  • Stir in the chocolate (it will look curdled and clumped, but will melt together with cooking).
  • Bring mixture to a boil over medium-high heat, whisking constantly and scraping the sides and bottom of the pot.
  • A splatter screen might be helpful here if your pot is not very deep.
  • As the pudding reaches the boiling point it will darken and thicken.
  • When it boils, reduce heat to medium and stir with a wooden spoon for about two minutes, until it has reached the appropriate pudding consistency.
  • Stir in butter and vanilla.
  • Serve warm or chilled.

2 egg whites
2/3 cup unsweetened cocoa powder
2 tablespoons cornstarch
2 1/4 cups nonfat milk or 2 1/4 cups low-fat milk
1/2 cup Splenda granular or 1/2 cup sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
fresh strawberries, for garnish
mint leaf (to garnish)
unsweetened cocoa powder (to garnish)

Steps:

  • Lightly beat egg whites in a small bowl.
  • In a large bowl, mix together cocoa and cornstarch.
  • Add 3/4 cups of the milk and whisk mixture until it's smooth.
  • In a large saucepan, mix together the rest of the milk, the Splenda and the salt.
  • Bring to a boil over high heat, whisking continuously.
  • Remove from heat.
  • Whisk the cocoa mixture into the milk mixture.
  • Bring to a boil over medium-high heat.
  • Boil for 2 minutes while whisking continuously.
  • Remove from heat.
  • Slowly whisk 1 cup of the hot cocoa mixture into the egg whites.
  • Pour this mixture back into the pan and cook over medium-high heat, whisking continuously.
  • and being careful not to allow the mixture to boil.
  • Remove from heat.
  • Add vanilla.
  • Mix well.
  • Pour into 4 serving dishes.
  • Cool to room temperature.
  • Cover with waxed paper that has been cut to fit the serving dishes (this prevents the pudding from getting a skin).
  • Refrigerate for 1 hour.
  • Garnish with berries, mint leaves and cocoa.

3 tablespoons cornstarch
1/8 teaspoon salt
1/3 cup sugar
1/2 cup milk
1 1/2 cups milk
1 teaspoon vanilla

Steps:

  • Place cornstarch, salt, and sugar in mixing bowl, and mix well.
  • Add 1/2 cup milk, and stir until smooth.
  • Scald 1 1/2 cups milk in top of double boiler, and add cornstarch mixture slowly, stirring constantly.
  • Place over boiling water in bottom of double boiler, and cook slowly, stirring constantly until smooth and thickened.
  • Cover, and cook for 15 minutes longer, stirring occasionally.
  • Add vanilla and stir.
  • Pour into individual molds which have been rinsed in cold water.
  • Chill until firm.
  • Unmold and serve with maple syrup, cream, chocolate sauce, sliced peachs, or sliced apricots as desired.
  • Chocolate: Add 1 square unsweetened chocolate, melted, at the same time vanilla is added.
