CHICKEN KABULI PULAO (AFGHANISTAN)

2 lbs chicken, cut up
1 large onion, sliced
sea salt, to taste
1 1/2 pints hot water
1/4 lb white basmati rice
1 medium onion, thinly sliced
3 tablespoons butter
1/2 tablespoon ground cardamom
1/2 tablespoon ground cumin
fresh ground black pepper, to taste
healthy pinch saffron, soaked in 1 tbs broth
1 large carrot, cut into match sticks
1/4 cup dark raisin
1/8 cup chopped pistachios (optional, toasted in a dry frying pan)
1/4 cup blanched slivered almond (optional, toasted in a dry frying pan)

Steps:

  • Place chicken pieces, onions and hot water in a large pot.
  • Cover and simmer for about 1 hour.
  • Add salt to taste.
  • Remove chicken, reserving stock & discard cooked onions.
  • Preheat oven to 325°F.
  • Heat 2 tbs of the butter over medium high heat and fry chicken pieces containing bones, salting as needed.
  • Boil a large amount of water with sea salt and cook the rice in it for exactly 8 minutes. Set aside in a pot until ready to assemble.
  • Make stock sauce:
  • Brown onions in butter and remove from heat.
  • Add cardamom cumin, freshly ground black pepper & saffron liquid and mash with onion to form a paste.
  • Add about 1/2 pt of the chicken stock; simmer for 5 minutes and taste for seasoning.
  • Combine cooked rice, stock sauce as needed (I don't find it became a sauce so I added the onion paste with some broth as needed to finish cooking the rice) and chicken; place in a buttered casserole. Cover.
  • Fry carrot matchsticks in 1/2 tbs butter and add dark raisins to them at the very end.
  • Sprinkle partially cooked carrot matchsticks and raisins on top of chicken and rice and cover tightly with aluminum foil or cover.
  • Place in oven for 35 minutes.
  • Chopped toasted pistachios or slivered almonds may be added over the dish just before serving if so wished.
  • There most probably will be left over stock that is very good even as a soup on it's own and probably served that way in an Afghani household.

This mild and flavourful dish comes from Julie Sahni's 1980 book, Classic Indian Cookery. She adapted it from a dish served at the Akbar India Restaurant in New York City (which I think is now closed). I am posting this for some former exchange students who are going through severe Kabuli withdrawal. I often make this a day in advance. A few comments. I think Julie Sahni writes some of the clearest recipes on the planet -- and she does so without being patronising. Check out her books (and note that I have abbreviated some instructions slightly). Also, I wonder if Kabuli means the recipe is influenced by dishes from Kabul, Afghanistan. Finally, I have never timed this accurately, so the prep time is a bit of a guess.

4 large garlic cloves, peeled
3 tablespoons fresh ginger, chopped
3 medium tomatoes, quartered (about 375 grams/12 ounces)
250 g plain yogurt (8 ounces)
180 ml vegetable oil (6 ounces)
1 1/2 kg chicken breasts, boned, skinned and cubed (3 pounds)
1/2 teaspoon mace
1 teaspoon nutmeg
2 tablespoons blanched almonds, ground
1 teaspoon cardamom, ground
1 teaspoon cumin, ground
1 teaspoon coriander, ground
1/2 teaspoon fennel, ground
1 tablespoon salt
125 ml double cream (4 ounces)
2 -3 teaspoons black peppercorns, coarsely ground
4 -5 tablespoons cilantro, finely chopped (coriander)

Steps:

  • Buzz the garlic, ginger, tomatoes and yogurt in a food processor until they are a fine purée.
  • Combine the oil and the puréed mixture in a large heavy-bottomed pan, preferably one with a non-stick surface. Place the pan over medium-high heat, and cook -- stirring constantly to prevent sticking and burning -- until the mixture reduces to a thick sauce and the fat begins to separate (about 15 minutes). It splatters some toward the end, so stay alert.
  • Add the chicken pieces and cook, stirring rapidly, until they lose their pink colour and begin to sear slightly (about 5 minutes), but do not let them brown.
  • Add the mace, nutmeg, almonds, cardamon, cumin, coriander, fennel and salt, and mix well.
  • Reduce heat, cover the pan and let the chicken cook in its own juices for 15 minutes.
  • Uncover and continue cooking for another 15 minutes (or until the chicken is fork tender).
  • Stir in the cream, black pepper and cilantro/coriander leaves, and turn off heat.
  • Let the dish rest, covered, for at least 1 hour. When ready to serve, reheat thoroughly, check for salt and serve.

This recipe is from week two of my food blog, "Travel by Stove." I am attempting to cook one meal from every country in the world, and Afghanistan is my second stop. Kabuli Pulao has been called "The National Food of Afghanistan." It is a flavorful rice dish, usually served with lamb or beef.

1 cup basmati rice
1 lb lamb (I made a meatless version)
2 cups mutton broth (You can't find mutton broth?? Substitute beef broth.)
1/2 onion, chopped
1/3 cup golden raisin
1 small carrot, grated
2 teaspoons cumin
1 1/2 teaspoons cardamom
1 teaspoon cinnamon
1/2 teaspoon ground pepper
1 teaspoon butter
salt

Steps:

  • Saute the carrots and raisins in butter. Set them aside.
  • Heat about a tablespoon of oil in a medium sized pan and cook the onions until translucent. Then add the rice and broth, bring to a boil, cover and cook for 20 minutes until the rice is tender.
  • Add the spices to hot oil and cook for a few seconds, until fragrant. Then add the meat and saute until just done.
  • Place the meat in an oven-safe dish, then cover it with the rice and bake at 250 degrees for 20 minutes.

1 . set 7 cups basmati rice
2 . set 2 large onions, diced
3 . set 3 ounces pistachios
4 . set 3 ounces slivered almonds
5 . set 2 large carrots, scraped and julienned
6 . set 10 ounces raisins
7 . set 1/3 cup sugar, divided
8 . set vegetable oil
9 . set olive oil
10 . set salt and pepper

Steps:

  • Earlier in the day: Place the rice in a large colander and run cold water over it to rinse it well.
  • Now pour the rice in a large bowl and cover it with cold water to soak for 4 to 5 hours.
  • Pour 1/6 cup of sugar into a large, hot saucepan over medium heat and keep shaking the pan until the sugar caramelizes.
  • Add 1 cup of the reserved lamb stock, the RawSpiceBar's Afghan Pulao Spices, salt and pepper to taste, if needed. Bring to a boil, remove from heat and set aside.
  • Drain the soaked rice. Then, following the cooking directions on the package, boil it until just soft. Drain again and pour the rice over the caramelized sugar mixture and stir until the rice is well coated.
  • Using a frying pan, heat 1 tablespoon of oil over medium-high heat. Add the carrots and the remaining sugar and stir for 5 minutes or until caramelized and glossy. Add the raisins and cook for another minute. Remove from heat and set aside.
  • With the underside of a large wooden spoon punch holes all over the rice allowing the steam to escape. Drizzle rice with olive oil.
  • Now, top the rice with the carrot mixture and the prepared lamb.
  • Cover with a tea towel and the lid of the pan. Make sure the towel is under the lid so it doesn't burn. Now turn the heat to high and cook the rice mixture for 5 minutes. Reduce the heat to low and cook for another 10 minutes. Remove from heat and keep it covered for 10 more minutes.
  • To serve, cover a large platter with a layer of the rice, spoon the lamb over it, and then all the remaining rice. Top with the carrot mixture and finally with the almonds and pistachios. This serves a large family, as is traditional with Afghan communities.

MUR'MUR'YA C'A CHIWDA

Chiwda is a rather classic Indian puffed rice mix, and was included in the companion cookbook to the novel "Ten Thousand Tongues: secrets of a layered kitchen" (2018). In the novel, one of the character, Shanta, prepares a quick chiwda to accompany cups of tea for her husband, and his new friend. In most Indian kitchens, this dish is part of every snack platter, and is particularly popular at Diwali.

1/4 cup oil
1 teaspoon cumin seed
3 inches fresh ginger, grated
12 -15 fresh curry leaves
3 -4 whole dried red chilies, broken into small pieces
1/4 teaspoon hing (asafetida powder)
1/4 cup raisins
1/2 cup raw unsalted peanuts
1/4 cup store bought sev (spicy lentil noodles)
1/4 cup dried coconut, slices (optional)
6 cups Rice Krispies (unsweetened rice puffs)
1 teaspoon salt
2 tablespoons sugar
2 tablespoons lime juice

Steps:

  • Sift and pick through the puffed rice, discard discolored pieces. Dry roast the puffed rice until it is toasty but not colored. Spread over a paper towel to allow moisture to wick away. Let it cool.
  • Heat the oil in a large wok. Add cumin seeds, ginger and curry leaves. Stir vigorously to season the oil well, reduce the heat. Add dried red chilies, asafetida powder and turmeric powder; stir vigorously to avoid burning. Add the raisins and peanuts, allow them to cook. As the peanuts begin to roast, add the salt, sugar and lime juice; turn off the heat. While the oil and spices are still hot, add the cooled toasted puffed rice and sev in small batches. Toss with two flat spatulas with each addition until all the rice is mixed inches Return the wok to a medium-low heat and toss this mixture quickly. Remove from heat. Serve hot or allow to cool and store it in an airtight container for up to four weeks.
