EASY HEALTHY BANANA PEANUT BUTTER NUTELLA SANDWICH SNACKS
These flawless little snack bites are delicious, healthy, and super easy! there is lots of good, nutritious fat in this, and it is so easy! Great for a pot luck etc.

Steps:
- Slice banana into little disks, about 1-1.5 cm thick.
- Mix the remaining ingredients, and dab the mixture onto half of the banana slices.
- Top each banana slice with a peanut butter mixture one, squishing together like a sandwich.
- Poke each mini sandwich with a tooth pick if you desire, or if you are serving at a banquet, pot luck or lunch-in.
- Fun Ideas: Pop these in the microwave for a couple of seconds to warm the peanut butter and nutella---heavenly!(though make sure not to put them in for too long -- they break apart) To make these kid friendly, poke the toothpick through a mini marshmallow (colourful ones are more fun!) before poking through the banana. or, you can melt some chocolate and add to the peanut butter nutella mixture or drizzle it on top! I've also tried sprinkeling the tops with cinnamon, or drizzeling with honey, they are great too!

- Preheat oven to 350°F and line the bottom of an 8 x 8 inch glass dish with parchment paper. (We also used our fingers to grease the sides of the dish with coconut oil.)
- Mash the bananas and mix together with oats and peanut butter.
- Spread the dough evenly in the prepared dish, then sprinkle with walnuts and chocolate chips. Lightly press the nuts and chocolate into the bars.
- Bake for 18-20 minutes or until an inserted toothpick comes out clean. Cool for 20 minutes in the pan, then slide a spatula under the parchment paper and carefully transfer the whole uncut bar onto a rack for further cooling. (You can cut the bars at this point, and eat them warm! The more time you give them to cool, the easier it will be to cut them.)

- In large bowl, cream butter, peanut butter and sugars. Beat in eggs one at a time, beating well after each addition. Combine the flour, soda and salt; gradually add to creamed mixture. Chill 15 minutes.
- Preheat oven to 350 degrees. Using a pastry bag fitted with a large star tube, pipe star shaped cookies onto sheet of aluminum foil cut to fit cookie sheets; placing cookies approximately 1 ½ï¿½ apart. Bake 6 to 8 minutes, cookies should just be set and should not brown.
- When done, slide foil off cookie sheet and leave cookies on foil until cooled. When cool, spread bottom of cookie with approximately 1 teaspoon of nutella and top with a cookie that is close in size to the bottom cookie. Place cookies on a rack. Meanwhile, place chocolate and shortening in a freezer bag. Place in hot water in the top of a double boiler, leaving the top of the plastic bag open. When chocolate has melted, holding the top of the plastic bag, gently squeeze, so check that all chips have melted and to ensure the shortening is mixed inches Cut a tiny hole in one corner of the plastic bag. Place cookies close together on the cookie racks. Squeeze plastic bag gently and make a back and forth motion, creating thin chocolate drizzles on all cookies. Let cookies stand a few hours, until chocolate sets. Store in an airtight container, up to one week. Makes approximately 5 dozen cookies.
- *Melted chocolate chips could also be used to fill cookies, just melt two cups of chocolate chips with one teaspoon of shortening and fill each cookie with approximately one teaspoon.

HEALTHY PEANUT BUTTER, BANANA SNACK
I just came up with this recipe while trying to figure out what to do with some wheat germ I had. I must say, it's pretty tasty (although I love peanut butter on just about anything!!). This would be a good, healthy snack for kids. Wheat germ is a good source of Vitamin E and Folic Acid. * edit - I've just tried it using Grape Nuts cereal instead of the wheat germ and it is really good as well, so I am listing it as an optional ingredient. Of course the Grape Nuts are a whole lot crunchier than the wheat germ.

- Smear the top of each slice with peanut butter.
- Dip the peanut butter top into the wheat germ.
- Enjoy!
- * Or you could do like I did and peel the banana most of the way, take a butter knife and smear the top with peanut butter. Then dip it into the wheat germ and bite.
- Repeat until all that's left is the peel. Hey, it's quicker that way. :).

- flip toasts to the other side (butter side down).
- spread the mashed banana on 2 piece of toasts.

- toast the sandwiches 1 min each side, or until golden.
- repeat opposite side.
