1 recipe pastry for a 9 inch double crust pie
2 eggs, beaten
1 cup white sugar
3 tablespoons butter, melted
5 tablespoons dark corn syrup
1 teaspoon vanilla extract
1 cup chopped pecans

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease 8 3-inch tart tins.
  • Roll out pastry and cut 8 5-inch circles. Fit pastry circles into greased tart tins.
  • In a large bowl, combine eggs, sugar, butter or margarine, corn syrup, and vanilla extract. Mix well, then stir in pecans. Pour an equal amount of mixture into each pastry-lined tart tin.
  • Bake in preheated oven for 30 to 35 minutes until pastry is golden brown and filling is set.

This gorgeous dessert has a nutty tart shell inspired by pecan sandies, lemon curd-spiked whipped cream filling, and stunning fruit topping.

3 1/2 cups vanilla wafer cookies (about 55)
1 cup pecans
1/3 cup sugar
1/2 teaspoon kosher salt, divided
6 tablespoons unsalted butter, melted, cooled slightly
1 1/2 cups heavy cream
2/3 cup homemade or store-bought lemon curd
Berries, mango, and other fresh fruit (for serving)
Special Equipment
A 10" fluted tart pan

Steps:

  • Preheat oven to 350°F. Pulse cookies, pecans, sugar, and 1/4 tsp. salt in a food processor until finely ground. Add butter and pulse until dough sticks together when squeezed with your fingertips. Transfer dough to pan and press into bottom and up sides of pan. Chill until set, about 15 minutes.
  • Transfer pan to a rimmed baking sheet and bake shell until golden, 18-20 minutes. Let cool.
  • Using an electric mixer on high speed, whip cream in a large bowl until soft peaks form. Fold in lemon curd and remaining 1/4 tsp. salt, then whip on medium-high speed until medium peaks form.
  • Spoon lemon curd mixture into tart shell and top with fruit. Chill 15 minutes to set, then serve.
  • Do Ahead
  • Tart shell can be baked 3 days ahead. Let cool, tightly wrap with plastic, and store at room temperature.

4 cups frozen peaches, mostly thawed
1 frozen pie crust, thawed, rolled out
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 cup sugar
4 teaspoons flour
2 teaspoons lemon juice or 2 teaspoons rum
2 ounces milk
parchment paper

Steps:

  • Preheat oven to 375 degrees.
  • Place pie crust on a parment paper lined cookie sheet.
  • Put the remaining ingredients, except the milk, into a large zip-close bag and shake until peaches are coated.
  • "Dump" peach mixture into a mount in the center of the crust and "pat down" so the peaches are about 1 inch from the sides.
  • Fold the lip of the pie crust over the edge of the peaches.
  • Coat the edge of the crust with milk.
  • Bake 35 minutes or until mixture is bubbly and crust is golden brown.
  • Allow to set before serving.
  • (If your crust bakes faster than your peaches, just cover the it with some foil.).

1/2 cup pecans, lightly toasted (2 oz)
1/2 cup packed light brown sugar
2 cups all-purpose flour
1 cup cold unsalted butter, cut into tablespoon pieces
1 teaspoon cinnamon
1 teaspoon ground ginger
3/4 teaspoon salt
2 cups ruby port
1 1/2 cups concord grape jelly
3/4 teaspoon fresh lemon juice (or to taste)
5 lbs small red seedless grapes, stems discarded (12 1/2 cups)

Steps:

  • Tart shells:.
  • Preheat oven to 350°F
  • Pulse pecans with brown sugar in a food processor until finely ground (do not allow to become a paste). Add flour, butter, cinnamon, ginger, and salt and pulse until mixture begins to form large lumps. Divide mixture between tart pans and press evenly over bottom and up sides with floured fingers. Chill until firm, about 30 minutes.
  • Bake tart shells in lower third of oven until golden brown, about 25 minutes. Transfer shells in pans to racks to cool completely. Carefully remove sides of pans, keeping shells on pan base. (Tart shells can be made 2 days ahead and kept in pans, loosely covered, at room temperature. Remove sides of tart pans before filling.).
  • Make filling while shells cool:.
  • Simmer Port and jelly, stirring occasionally, until reduced to about 1 1/2 cups, about 30 minutes, then stir in lemon juice. (Port glaze can be made 2 days ahead and chilled, covered. Reheat before proceeding.)
  • Immediately toss grapes with 1 cup glaze in a large bowl until well coated, then mound in tart shells. (Tarts can be assembled 4 hours ahead.).
  • Just before serving, drizzle tarts with more glaze and serve remainder on the side.

20 pecan shortbread cookies, processed into crumbs (I'd say probably a good 2 cups of crumbs)
5 tablespoons melted butter

Steps:

  • Preheat oven to 350.
  • Process cookies into crumbs in a food prcessor or crush in a heavy plastic bag with a rolling pin.
  • Add melted butter and mix until combined.
  • Press into bottom and sides of a nine-inch pie dish.
  • Bake for 10 minutes; it will feel soft, but will firm up as it cools.
  • Cool completely before filling with your favorite filling.
