One 1-pound frozen vanilla pound cake, thawed 10 minutes
3 tablespoons freshly ground espresso beans
6 tablespoons grated bittersweet chocolate
10 tablespoons coffee liqueur
2 cups coffee ice cream, slightly softened
1 cup chocolate ice cream, slightly softened
1 cup vanilla ice cream, slightly softened

Steps:

  • Line a loaf pan that the pound cake fits in with overhanging plastic wrap.
  • Cut the pound cake horizontally into 4 slices. Stir the ground espresso together with the grated chocolate in a small bowl.
  • Place the first slice of cake in the prepared loaf pan. Drizzle the cake with 2 1/2 tablespoons liqueur. Spread half of the coffee ice cream over the cake and top with 2 tablespoons of the chocolate and espresso mixture.
  • Repeat the process above, this time using the chocolate ice cream. Then again, using the remaining coffee ice cream. Repeat one final time, using the vanilla ice cream and garnishing the top with the remaining chocolate and espresso mixture.
  • Loosely cover the cake with the overhanging wrap. Place the cake in the freezer until hardened, about 4 hours.
  • Remove from the freezer and unfold the plastic wrap from the top. Remove the cake form the pan and peel off the remaining plastic wrap. Slice and serve.

1 tablespoon instant coffee granules
1 tablespoon hot water
2 packages (3 ounces each) ladyfingers, split
5 Heath candy bars (1.4 ounces each), crushed and divided
1 quart vanilla ice cream, softened
1 cup heavy whipping cream
3 tablespoons confectioners' sugar
2 tablespoons creme de cacao, optional

Steps:

  • Dissolve coffee granules in hot water. Cool to room temperature; set aside., Meanwhile, line the bottom and sides of a 9-in. springform pan with ladyfingers. Set aside 1/4 cup crushed candy for topping. Stir coffee mixture and remaining crushed candy into ice cream. Spoon into prepared pan. Freeze for 30 minutes., In a large bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Fold in creme de cacao if desired. Spread over ice cream. Sprinkle with reserved candy. Cover and freeze until firm. Remove from the freezer 30 minutes before serving. Remove sides of pan.

48 vanilla wafers, divided
1/4 cup brewed strong MAXWELL HOUSE Coffee, cooled, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1-1/2 cups cold milk
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 oz. BAKER'S Semi-Sweet Chocolate, grated

Steps:

  • Arrange 36 wafers on bottom and up side of 9-inch pie plate. Drizzle with 2 Tbsp. coffee.
  • Beat cream cheese in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mix; beat 1 min. Gently stir in COOL WHIP.
  • Layer half each of the pudding mixture and grated chocolate in crust; cover with remaining wafers. Drizzle with remaining coffee. Repeat layers of pudding mixture and chocolate. Refrigerate 3 hours.

  • Freeze 4 hours. Let stand at room temperature 15 min. before serving topped with remaining COOL WHIP.

2 cups finely crushed graham cracker crumbs
1/3 cup sugar
1/4 teaspoon kosher salt
8 tablespoons (1 stick) unsalted butter, melted
One 14-ounce can sweetened condensed milk
2 tablespoons grated lemon zest
3/4 cup fresh lemon juice
1/3 cup sugar
4 pasteurized extra-large egg yolks
Whipped cream, for serving
Candied lemon peel, for serving

Steps:

  • For the crust: Preheat the oven to 350 degrees F.
  • In a medium bowl, combine the graham cracker crumbs, sugar and salt. Stir in the butter. Transfer to a 9-inch tart pan. Evenly press across the bottom and up the sides to make a crust (I use a metal measuring cup to press the crumbs). Bake for 12 minutes. Let cool completely.
  • For the filling: In a large bowl, combine the condensed milk, lemon zest and juice, sugar, and egg yolks. Whisk until all the ingredients are completely blended. Pour the filling into the cooled crust. Freeze for at least 2 hours.
  • Top with whipped cream and garnish with candied lemon peel.

3 tsp instant coffee granules
3 tbsp coffee liqueur (or Camp Chicory & Coffee Essence)
250g tub mascarpone
85g condensed milk
1 tsp vanilla extract
4-6 sponge fingers
1 tbsp cocoa powder

Steps:

  • Mix the coffee granules with 2 tbsp boiling water in a large jug and stir to combine. Add the coffee liqueur and 75ml cold water. Pour into a shallow dish and set aside.
  • Make the cream layer by beating the mascarpone, condensed milk and vanilla extract with an electric whisk until thick and smooth.
  • Break the sponge fingers into two or three pieces and soak in the coffee mixture for a few secs. Put a few bits of the sponge in the bottom of two wine or sundae glasses and top with the cream. Sift over the cocoa and chill for at least 1 hr before serving.

  • In a large bowl (or mixer with paddle attachment or food processor), gently whisk together the flour, sugar and baking powder, create a well in the middle and add slightly beaten egg and yolk and butter cut into pieces. Mix together until almost combined then move to a slightly floured flat surface and gently knead the mixture to form a soft dough ball. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  • Beat together sugar and egg until frothy, then add the Mascarpone and cream, (if not using the egg then beat together the powdered sugar, mascarpone and cream), beat until thick. Refrigerate until ready to use.
  • Spread the baked pie dough with an even layer of Nutella, top with half the Mascarpone cream, dip the lady finger cookies, one cookie at a time in the coffee, be sure to turn them once and do it quickly you don't want the cookie soaking in the coffee, then place them on top of the Mascarpone Cream, top with remaining cream. Refrigerate at least 4-5 hours, or overnight is even better. Before serving sprinkle with cocoa. Enjoy!

  • You can do this in a food processor or by hand. I did it the easy way, in the food processor! First, in a small bowl whisk together the cream, egg, and vanilla until combined, set aside. In the bowl of the food processor add the flour, sugar, and salt. Pulse a few times to combine. Add the cubed butter 1/3 at a time, pulse between additions so it doesn't all stick together. Pulse a few times until the butter chunks are about pea-sized. Scrape sides and bottom as needed to ensure no extra large butter pieces.   • While the crust is cooling, make the filling by placing the mascarpone into a medium-sized bowl. Using a hand mixer whip on high for 1 minute until smooth. About 1 tablespoon at a time, add in the heavy cream and whip until smooth. Add the sugar, vanilla, and coffee extract and whip until smooth one more minute.
  • In a large bowl, add the heavy cream, with a hand mixer whip on high until soft peaks are formed. Add the powdered sugar and cornstarch a little at a time, whip between additions. Add the vanilla and whip until medium to stiff peaks form, do not overmix or you will have butter.
  • Mix together the Marsala wine and 1 teaspoon coffee extract in a shallow bowl. Place half of the mascarpone filling to the bottom of the pie crust and smooth out. Break the ladyfingers in half and dip the bottom into the Marsala mixture. Place on top of the filling, I placed them in a circle around the outside with one in the middle. With the remaining Marsala mixture, brush it on top of each cookie so it is all absorbed. Cover cookies with the remaining mascarpone filling. Place in the fridge for two hours to set.
