1 Store-Bought Chocolate Wafer Pie Shell
1 Cup Heavy Cream
1 Can Sweetened Condensed Milk (14 oz)
2 Teaspoons Pure Vanilla Extract
2 Cup Snickers Candy, Chopped & Divided
Caramel Sauce
Chocolate Syrup

Steps:

  • Whip together your heavy whipping cream.
  • In a large bowl, combine your whipped cream with the sweetened condensed milk.
  • Add vanilla, and 1 cup chopped snickers to the mixture. Combine well.
  • Pour into your store-bought pie shell. Place in the freezer for two hours. This is what will give it the creamy ice cream texture that you want!
  • Once ready, take it out of the freezer and add your toppings. Drizzle chocolate syrup and caramel topping on top of the Snickers Ice Cream Pie.
  • Lastly, add 1 cup more chopped Snickers candy to finish the pie. Serve immediately and place any extras in the freezer after cutting.

This recipe is more of a guide than something that needs to be followed exactly. Use either homemade brownies or a mix. Use as many Snickers bars as you like - any size will do. Use any type of nuts you want. If you like you can mush the chopped Snickers bars into the ice cream but that's more work. Make the base ahead and then assemble right before serving. The ingredient amounts can be changed - add as much or as little as you want of the hot fudge and caramel. Use another type of candy bar if you prefer. It's important to bake the brownies in a springform pan. Have fun!

brownie (baked in a 8 inch round or square springform pan, left in the pan)
1 quart vanilla ice cream or 1 quart chocolate ice cream, softened
6 (2 ounce) Snickers candy bars, chopped (or 12 ounces of any size)
1/2 cup caramel sauce
1/2 cup hot fudge
1/2 cup roasted peanuts
whipped cream

Steps:

  • Spread half the softened ice cream over the brownies making sure to spread to the edge o the pan. Sprinkle the chopped Snickers bars over the ice cream. Spread the rest of the ice cream on top.
  • Freeze for 4 hours or more.
  • Assemble: Remove the springform from the pan. Warm the hot fudge sauce. Cut out a piece of the pie and place on a plate. Drizzle with one tablespoon of caramel sauce and one tablespoon of hot fudge sauce. Top with a tablespoon or peanuts and a bit of whipped cream. Assemble the rest of the servings. Serve immediately.

1 reduced fat graham cracker crust
12 ounces sugar-free vanilla ice cream
1 (1 ounce) box sugar-free instant chocolate pudding mix
3 tablespoons reduced-fat peanut butter
1 cup Cool Whip Lite

Steps:

  • Using a large mixing bowl let the ice cream soften, with an electric mixer mix in the dry pudding mix and peanut butter.
  • With a spatula fold in the Cool Whip Lite. Pour into the pie crust.
  • Cover the pie with plastic wrap or the dome cover included with the pie crust and place in the freezer for at least two hours.
  • Remove from freezer 10 minutes before serving. This can be refrozen.
  • Diabetic Exchanges: 1/2 meat, 1 1/2 starch, 1 fat.

1 chocolate graham wafer pie crust, pre-made
6 cups vanilla ice cream
7 Snickers candy bars, regular size
2 tablespoons chocolate fudge topping
1/4 cup caramel sauce
2 tablespoons caramel sauce

Steps:

  • Take ice cream out of freezer and let soften for at least 15-20 minutes.
  • Chop up 4 Snickers bars into quite small pieces. Put ice cream in large bowl, and stir in Snickers Pieces and 1/4 cup caramel sauce.
  • Spread softened ice cream into prepared pie crust.
  • Cut up remaining 3 Snickers bars and sprinkle over ice cream pie. Lightly press down into ice cream. Then drizzle 2 tbl. of hot fudge and caramel sauce over pie.
  • Freeze for at least 4 hours, or until firm.

2 pints chocolate ice cream
1 cup chunky peanut butter
32 nabisco famous chocolate wafers
1 1/2 cups caramel sauce or 1 1/2 cups butterscotch sundae sauce

Steps:

  • Line a 9x5-inch loaf pan with plastic wrap, letting the ends of the plastic wrap overhanf the pan by 6 inches. Scoop the ice cream into a large bowl, then work to soften, Fold the peanut butter into the ice cream until uniformly mixed.
  • Working quickly, arrange 8 chololate wafers to cover the bottom of the pan, (some overlapping is fine). Spread one third of the ice cream mixture evenly over the wafers and smooth the top. Spread 1/2 cup of the caramel sauce over the ice cream. Repeat this layering process two more times. Finish by laying the 8 remaining wafers over the top and press them lightly. Wrap the pan tightly with plastic wrap and freeze until firm, about 6 hours.
  • To serve, unwrap and gently ttug at the overhanging plastic wrap to remove the loaf from the pan. (If necessary, dip the bottom of the pan into hot water). using the plastic wrap to handle the loaf, invert it onto a serving platter. Peel away and discard the plastic wrap. Allow the cake to sit at room temperature for a few minutes before slicing.
  • TO MAKE AHEAD: this ice cream cake can be assembled and held in the freezer, wrapped tightly in plastic wrap, for up to 1 week.

  • Mix cream cheese and 1 Tbls milk in a bowl with wire whisk until smooth.
