FROZEN CHOCOLATE PEANUT BUTTER PIE
This Frozen Chocolate Peanut Butter Pie is so delicious and nobody believes me when I tell them it's healthy! This no-bake pie uses no refined sugar, is gluten free, and can easily be made dairy free. It has no eggs so it can easily be made Vegan if you choose the dairy free route. It's the perfect dessert for anyone, and great for a group of people who may have food restrictions.

Steps:
- Start by putting 1 cup of dates into a bowl and pour boiling water over top of them. Let those soak for 15 minutes to use for your peanut butter filling.⠀⠀⠀⠀⠀
- Place all of the base layer ingredients in a food processor or high speed blender and pulse/blend until it resembles course sand.
- Place the filling in a parchment lined 9inch round or square pan and push down firmly into the pan.
- Strain the dates that have been soaking and place all of the filling ingredients into the same food processor/blender and blend until incorporated. Scraping down the sides as needed.
- Then pour the peanut butter filling on top of the base.
- Heat your milk (or coconut milk) just to a boil, then remove from heat (or you can heat it up in the microwave) and and then stir in your chocolate chips.
- All the rest of the chocolate topping ingredients and whisk until smooth.
- Pour chocolate topping on top of your peanut butter filling.
- To finish, add chopped peanuts and chocolate chips on top! (Optional).
- Transfer to your freezer until it's set. It will take at least 3 hours to freeze.
EASY FROZEN PEANUT BUTTER CHOCOLATE PIE (LOWER-FAT)
This tastes like a cold peanut butter cup and takes only minutes to make, not only is this a lower fat recipe it is extremely delicious, of coarse you can go the full-fat route but this tastes just as good! Magic shell is found near the ice cream cones in your grocery store, it hardens when drizzled on top of ice cream or anything completely frozen, make certain to purchase the ready-made 4-ounce containers of chocolate pudding for this. Cooking time is freezing time.

- In a mixing bowl using a wooden spoon mix together the chocolate pudding and peanut butter until well combined.
- Using a spatula fold in the thawed Cool Whip topping until completely blended.
- Transfer the mixture into the pie crust.
- Freeze until completely firm (about 4 hours).
- When to pie is frozen drizzle the Magic Shell over the top and return to freezer until ready to serve.
- Thaw slightly before serving to allow easier slicing.
- Place any leftover pie in the freezer (don't worry you won't have any leftover!).

- In bowl, stir wafer crumbs with butter until thoroughly moistened; pat onto bottom only of 9-inch pie plate. Freeze for 20 minutes.

- For the crust: Preheat the oven to 350 degrees F. Crush the cookies until they're fine crumbs. Pour the melted butter over the top and stir with a fork to combine. Press into a pie pan and bake until set, 5 to 7 minutes. Remove from the oven and allow to cool completely.
- For the filling: Beat the peanut butter with the cream cheese until smooth. Add the powdered sugar and beat until smooth. Add in the thawed whipped topping and beat until smooth, scraping the sides as needed.

- 1. This is an assemby recipe, easy as pie (wink, wink!) Soften the ice cream and layer out an amount into pie shell. Keep it a bit lumpy. Cut up the Reese peanut butter cups into chunks and toss them evenly into the shell. It is up to you how many to use, rule of thumb would be enough so each piece of pie has a few, but not too many. Add another layer of ice cream. Next layer on the magic shell. Let it pool in the crevices, creating little craters of chocolate here and there. I sometimes have used peanut butter magic shell along with the chocolate fudge magic shell in making this pie. Add another layer of ice cream and put in freezer. You can build as many layers as you want, heaping it up in the middle of the pie shell. There are no set amounts of ingredients, just to taste. If you love peanut butter cups, use alot...same with the other ingredients.
- 2. When ready to serve, take pie out of freezer and add a layer of peanut butter to the top of the pie. Accent top with chocolate syrup in decorative pattern. Around the edge apply whipped cream flowers.
- 3. Grab a fork, tell the kids "This piece is Mine" and gobble gratefully! Don't forget to wave the "remove calorie kitchen witch" over top...
- 4. When you dig into this piece of pie, you will enjoy peanut butter flavor all through, cool ice cream and chunks of chocolate. It is my Grandchildren's favorite pie at Grandma's house. A benefit to this pie is you don't have to eat it all in a few days. Keep it in the freezer and enjoy anytime! I would think maybe keep it frozen up to a month or so??? Anytime I have made it, it is gone quickly.
- 5. I have tried before to cut calories using low fat graham cracker pie shell and frozen yogurt. The shell was fine, but the frozen yogurt was good, just not as good as real ice cream. Low fat peanut butter would be fine also with no fat whip cream.
REDUCED FAT PEANUT BUTTER PIE

You can use a traditional, graham cracker or cookie crumb pie crust, but my favorite is a chocolate cookie crumb crust (that I will sometimes mix with some very well-dried and finely chopped maraschino cherries).

- In small bowl, combine 1 cup of confectioner's sugar with the butter on the low speed of a mixer until fluffy.
- Blend in the chocolate and vanilla.
- Then, on high speed, beat in the eggs, one at a time, beating thoroughly after each addition.
- Pour into the prepared pie shell and cover with plastic wrap.
- Freeze for at least 6 hours or until firm.
- For easier cutting, remove the pie from the freezer 10 to 15 minutes before serving.
- When ready to serve, remove the plastic wrap.
- Then, in a chilled bowl, beat the whipping cream and 2 tablespoons of confectioner's sugar until stiff.

- This pie should be thick, dense and creamy, and overbeating the eggs will give it a more mousse-like texture.

- Peanut Butter Filling: with a hand mixer or food processor, mix peanut butter, cream cheese and butter, and salt. Slowly add the sugar and then the 1 tsp vanilla until well blended. Add peanut butter mixture to the pie plate (or plates if making 2 small pies), pressing down on all sides to make flat.
