- Heat oven to 400°F.
- Separate biscuits; press each into 4-inch round. Spoon 1 Tbsp. barbecue sauce onto center of each biscuit; top with 1 sausage slice. Bring up edges of biscuit over top of sausage; pinch edges together to seal.
- Place on baking sheet.
- Bake 10 min. or until lightly browned.

MINI SAUSAGE & CHEESE BREAKFAST BISCUIT SANDWICHES
A vert easy recipe, posting as a request in a thread for brunch ideas. My great aunt from West Virginia used to make these for breakfast for her overnight guests at her beachhouse in North Carolina, along with home fries and stewed tomatoes. Stuff biscuits with scrambled egg, ham or bacon, if you wish.

MINI BISCUIT BREAKFAST SANDWICHES WITH SPICY FRITTATA

Steps:
- Position an oven rack in the top third of the oven and preheat to 450 degrees F.
- Prepare the biscuits according to the package directions, replacing half of the milk with buttermilk (this will amount to about 1/3 cup milk and 1/3 cup buttermilk for most mixes). Roll or pat the dough into an approximately 8-inch round about 1/2 inch thick. Use a 2-inch round biscuit cutter to cut biscuits out of the dough. You can reroll the scraps once and cut additional biscuits, making 14 to 16 biscuits total. Transfer the cut biscuits onto an ungreased baking sheet and brush lightly with the remaining buttermilk.
- Bake until the tops are golden brown, 6 to 8 minutes. Allow to sit at room temperature while you prepare the eggs.
- Change the oven setting to broil. Put the jalapenos on a small baking sheet and place under the broiler until charred all over, turning the jalapenos as needed, about 5 minutes. Transfer to a small bowl and cover with plastic wrap. Let sit for 5 minutes, and then peel the skin away from the jalapenos. Roughly chop into small pieces, removing the seeds if you do not want the eggs too spicy. Set aside.
- Whisk the cream, eggs and some salt and pepper together in a large bowl.
- Heat the canola oil in a 10-inch nonstick ovenproof saute pan over medium-high heat. Add the breakfast sausage and cook until browned, breaking up the meat with a wooden spoon, 4 to 6 minutes. Use a slotted spoon to remove the browned meat to a plate.
- Reduce the heat to medium, add the onions and cook until lightly caramelized, 4 to 6 minutes. Add the chopped jalapenos and browned sausage back to the pan and stir to combine. Pour the egg mixture into the pan and cook until the eggs just start to set, about 2 minutes. Sprinkle with the cheese and continue to cook until the frittata is almost set but the top is still runny, about 3 minutes.
- Place the frittata under the broiler and broil until lightly puffed and the top is golden brown, about 3 minutes. Let stand for 5 minutes.
- Meanwhile, turn off the broiler and place the biscuits back in the oven. The residual heat of the oven will warm the biscuits through. After 5 minutes, use a rubber spatula to loosen the frittata from the pan and invert it onto a cutting board. Cut into 14 to 16 pieces (depending on how many biscuits you baked). Split open the warm biscuits and sandwich a piece of frittata and some sliced green tomato between each biscuit.
SPICY SAUSAGE AND BISCUIT SANDWICH
This sausage-biscuit sandwich is a great option when you're on the go. The spicy honey mustard sauce is easy to make and complements the flavor of Jimmy Dean Premium Pork Sausage.

- In a small bowl, mix together the spicy honey mustard ingredients. Set aside.
- Form the raw Jimmy Dean Premium Pork Sausage into 8 small patties about the size of your biscuits.
- In a large frying pan, heat oil over medium high heat for about 1 minute. Add patties and cook for 4 to 5 minutes on each side, or until they are cooked through. Remove from heat. Lay Swiss cheese slices on top and allow them to melt over the patties.
- On the bottom half of each biscuit, spread spicy honey mustard. Add the sausage and cheese. Top with the other half of the biscuit, and enjoy.
CHEDDAR BISCUIT BREAKFAST SANDWICHES
Steps:
- For the biscuits: Preheat your oven to 425 degrees F (220 degrees C) and line a baking sheet with parchment paper.
- Stir together the flour, baking powder, garlic powder and salt in a large bowl. Add the butter and snap and rub it in until the butter is pea sized. Stir in the Cheddar and chives, then make a well in the center and add in 1 1/4 cups of the buttermilk. Stir until just combined.
- Using a large tablespoon or a 1/4 cup ice cream scoop, scoop 9 biscuits onto your prepared baking sheet. Place the biscuits in the fridge while you prepare the eggs.
- For the eggs: Place a nonstick skillet over medium heat and add the sausage meat. Cook, breaking it apart with a wooden spoon, until golden brown and cooked through, 8 to 10 minutes. Remove the sausage from the pan and set aside.
- Lightly grease a 9-inch square baking pan with cooking spray. Beat the eggs and milk together in a large bowl. Season with the salt and pepper. Add the Cheddar and dill and pour into the prepared pan. Scatter over the cooked sausage and tomatoes.
- Retrieve the biscuits from the fridge and brush with the remaining 2 tablespoons of buttermilk. Bake the biscuits and the eggs for 15 minutes, then remove the eggs from the oven and set aside to cool slightly. Rotate the biscuits and continue baking until golden brown, 5 to 10 minutes.
- Cut the eggs into 9 equal pieces. If serving right away, split the biscuits in half and sandwich in the eggs. If prepping ahead, transfer the eggs to a resealable container and place in the fridge. Cool the biscuits to room temperature and transfer to a resealable container or zip top bag and place in the fridge. Both can be stored for up to four days. To reheat, simply reheat in the microwave. Biscuits can also be split and lightly toasted in the toaster.
MINI SAUSAGE PANCAKE SKEWERS WITH SPICY SYRUP

- Melt butter over medium-low heat in a small saucepan. Stir in maple syrup, red pepper flakes, and salt. Bring to a boil and cook, 3 to 4 minutes. Remove syrup from heat and set aside, stirring occasionally, for at least 30 minutes for flavor to fully develop.
- Meanwhile, prepare pancakes: whisk flour, sugar, baking powder, and salt together in a large bowl. Whisk buttermilk, egg, sour cream, melted butter, and maple syrup together in a separate bowl. Pour the wet ingredients into the flour mixture. Stir gently until just combined but slightly lumpy; do not overmix. Let sit for 10 minutes.
- Heat a large nonstick skillet or griddle over medium heat. Drop teaspoonfuls of batter onto the hot skillet to form 1-inch diameter pancakes. Cook for about 1 to 2 minutes, flip, and continue cooking until golden brown, about 1 more minute. Transfer cooked pancakes to a plate and repeat with remaining batter.
- Heat olive oil in the same skillet over medium heat. Form tablespoonfuls of sausage into 1-inch patties, the same size as the mini pancakes. Cook until patties are cooked through, about 3 minutes per side. Transfer to a paper towel-lined plate.
- Thread 3 pancakes and 2 sausage patties onto each skewer, starting and ending with a pancake. Repeat to make remaining skewers. Serve drizzled with spicy syrup.

MAKE AHEAD BREAKFAST SANDWICHES
I started experimenting with breakfast ideas for my husband who is too busy at work to sit down for long to eat. The seasonings, cheese, meat and bread I have listed are just suggestions (my husband's preference). Add veggies if you like! The possibilities are endless! If you want to cut down on the meat and save some money, replace part of the sausage with textured vegetable protein. It will take on the flavor of the sausage and make it a little lower in fat. Just follow the directions on the TVP package to prepare. TVP is usually in the health food section at the store.

- Bake biscuits according to package directions.
- While biscuits are baking start browning sausage.
- In a mixing bowl combine eggs dry mustard and pepper.
- Add egg mixture to the browned sausage and cook until eggs are done.
- After biscuits have cooled cut them in half and spread with butter.
- Sprinkle buttered biscuits with garlic salt (DON'T add the salt to the eggs while they are cooking, the salt will make the eggs rubbery).
- Cut cheddar cheese slices into fourths.
- Put one fourth of cheese slice on bottom half of biscuit.
- Spoon a small amount of cooked egg and sausage mixture onto the bottom half of each biscuit (on top of cheese).
- Place another fourth of a cheese slice on top of the egg and sausage mixture (putting the cheese on this way "glues" the sandwich together when it is reheated).
- Place top of biscuit onto sandwich.
- Wrap each sandwich in wax paper and put them in large freezer bags.
- Place them in the freezer.
- To reheat, leave sandwich in wax paper and microwave on high for approximately one minute to a minute and a half.
