With two busy boys who would rather move around than sit and eat, I needed a gluten-free, hearty, hand-held treat that could double as a quick breakfast, brunch, lunch or snack. This is a favorite of theirs, and I can change it up to accommodate ingredients I have on hand. -Susan James, Cokato, Minnesota

1/2 cup packed brown sugar
4 large eggs
1-1/2 cups mashed ripe bananas (3-4 medium)
1 cup peanut butter
1/2 teaspoon salt
6 cups gluten-free old-fashioned oats
1 cup gluten-free butterscotch chips
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, beat brown sugar and eggs until well blended. Add bananas, peanut butter and salt until blended. Stir in the oats, butterscotch and chocolate chips., Spread batter into a 15x10x1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until edges begin to brown. Cool completely on a wire rack. Cut into bars.

This recipe came from Mrs. Jaca. She made them for my neice's tea party. So yummy and then to find out they were easy to make was just kind of a bonus. She said the recipe came from a kids cookbook.

Number Of Ingredients 6

18 1/2 ounces white cake mix
2 cups uncooked oats
1/2 cup brown sugar
1 cup oil
1 egg
3/4 cup caramel ice cream topping

Steps:

  • Heat oven to 350 degrees.
  • Mix the cake mix, oats and brown sugar in a bowl. Carefully stir in the oil and egg. Stir until everything is mixed together.
  • With your hands pat down half the dough into a well greased 9x13 inch baking dish. The dough will be gooey.
  • With the back of a spoon spread teh ice cream topping over the dough. Now crumble the rest of the dough on top.
  • Bake for 30-35 minutes or until the top crust is a golden brown. They are easiest to cut about 5-10 minutes after you take them from the oven. Let them cool completely before you remove them from the pan.

  • Mix the first seven ingredients together in a stand mixer on low speed until it begins to form crumbs. Press half of this mixture into the bottom of an 8" square baking dish (you need to reserve half of this mix for the topping.) Bake at 350 degrees for 12 minutes. Sprinkle chopped nuts and chocolate chips over crust as soon as it comes out of the oven.
  • Combine salted caramel sauce and 3 tbsp gluten-free flour with a whisk. Drizzle over nuts and chocolate chips. Sprinkle remaining crumbs over the top and bake for 15-20 minutes or until golden brown. Cool and serve. *Chill for easy slicing.
