FRENCH ONION BREAD

French Onion Bread image

The idea for this loaf was born because I had an extra packet of dry french onion soup mix in my pantry that needed to be used. It was left over from a pot roast recipe I put together a few months ago. The idea is simple. Take the packet of soup mix and dump it into a standard bread dough. The soup mix really adds a great taste to the bread. I have to admit, I did feel a bit silly putting soup mix in a bread recipe. Adding soup mixes to recipes is a very Minnesotan thing to do. I'm not sure what I was going for with the shape of the loaf. I just felt like playing with my food. I wish I hadn't cut the cross in the top. My knife wasn't sharp enough to do it right. Replicating this look is simple. Use a third of the dough to make braids and shape the rest into a ball. Then ring the braids around the outside of the ball. I cut up the bread and served it with the Slow-Roasted Cumin and Garlic Pork that I made last night. The onion flavor in the bread worked so well with the pork. Major drool factor!

EASY FRENCH ONION SOUP

Easy French Onion Soup image

Provided by Georgia

Time 1h20m

Number Of Ingredients 12

4 large yellow onions, peeled and thinly sliced
3 Tablespoons olive oil
2 Tablespoons unsalted butter
1/2 teaspoon kosher salt
1/4 teaspoon freshly cracked pepper
2 cloves garlic, minced
1/2 cup Holland House White Cooking Wine or Red Cooking Wine
8 cups beef stock, (two 32 oz. containers)
2 bay leaves
4 teaspoons fresh thyme OR 1 teaspoon dried thyme
1 loaf French bread OR baguette, sliced into 1-inch thick rounds
1 1/2 cups grated Swiss or Gruyere

Steps:

  • To caramelize the onions: Set a heavy-bottomed pot (about 5 to 6-quarts) to medium-low heat; add olive oil. Add onions and toss to coat. Cover pot and cook onions, stirring often, until softened, about 15 to 20 minutes. Season onions with salt and pepper. Increase heat to medium-high and add butter. Continue to cook, stirring often, until onions begin to brown, about 20 more minutes. Add garlic and cook for 1 more minute.
  • Pour in cooking wine to deglaze pan. Scrape up browned bits on bottom and sides of pot with a wooden spoon.

  • Place a rack in the center of the oven and preheat the oven to 400 degrees F. For easy cleanup, line a large, rimmed baking sheet with aluminum foil, parchment paper, or a silicone baking mat.
  • Place the onions, bread cubes, and garlic cloves in a large bowl. In a small heatproof bowl or liquid measuring cup, melt the butter. Whisk the olive oil, mustard, and 1/2 teaspoon kosher salt in with the butter, then pour over the onion-bread mixture. Toss to coat as evenly as possible. Turn the mixture out onto the prepared baking sheet. Spread into an even layer.
  • Nestle the chicken pieces into the onion mixture. It can overlap the onions a little, but make sure it does not cover the bread. Sprinkle the chicken with the remaining 1 teaspoon salt and pepper.
  • Bake for 15 minutes, then remove the pan from the oven and carefully turn the bread cubes. Return to the oven and bake until the bread is deeply golden and the chicken registers 160 degrees F on an instant-read thermometer inserted at the thickest part, about 15 additional minutes for smaller pieces and 20 to 25 minutes for larger pieces. If some chicken pieces cook more quickly than others, remove the cooked pieces to a plate and cover to keep them warm, then return the pan to the oven and continue baking until all of the chicken is cooked through.
