1 pkg. (4 oz.) BAKER'S Unsweetened Chocolate
1/2 cup (1 stick) butter or margarine
2-1/4 cups sugar, divided
5 eggs, divided
1/4 cup milk
2 tsp. vanilla, divided
1 cup flour
1/2 tsp. salt
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Preheat oven to 325°F. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Add 1-1/2 cups of the sugar; mix well.
  • Add 2 of the eggs, one at a time, mixing on low speed after each addition just until blended. Add milk and 1 tsp. of the vanilla; mix well. Combine flour and salt. Gradually add to chocolate mixture, mixing after each addition just until blended. Spread evenly into greased and floured 9-inch springform pan. Bake 25 min.
  • Beat cream cheese, remaining 3/4 cup sugar and remaining 1 tsp. vanilla in large bowl with electric mixer on medium speed until well blended. Add sour cream; mix well. Add remaining 3 eggs, one at a time, mixing on low speed after each addition just until blended. Pour over brownie layer in pan (Filling will come almost to top of pan.)
  • Bake 55 min. to 1 hour or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Let stand at room temperature 30 min. before serving. Store leftover cheesecake in refrigerator.

Steps:

  • Heat oven to 325°F.
  • Line 13x9-inch pan with foil, with ends of foil extending over sides; spray with cooking spray. Prepare brownie batter as directed on package; pour into prepared pan. Bake 18 to 20 min. or until top is shiny and center is almost set. (Brownie layer will not be done.)
  • Meanwhile, beat Neufchatel, sugar and vanilla in large bowl with mixer until blended. Add sour cream; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended.
  • Spoon Neufchatel mixture over brownie layer in pan. (Pan will almost be full.)
  • Bake 40 min. or until center is almost set. Cool. Refrigerate 4 hours.
  • Remove dessert from refrigerator about 30 min. before serving; let stand at room temperature to soften slightly. Meanwhile, melt chocolate as directed on package. Use foil handles to lift cheesecake from pan; drizzle with chocolate. Let stand until chocolate is firm.

4 unsweetened chocolate squares
2 1/4 cups sugar, divided
2 eggs

  • BROWNIE LAYER:.

Nonstick cooking spray, for greasing the pan
One 18.4-ounce box brownie mix (plus required ingredients)
45 to 50 medium strawberries (about 2 1/2 pounds), stemmed
Two 8-ounce packages cream cheese, at room temperature
1 cup sugar
4 cups heavy cream
1 cup sour cream
1 teaspoon pure vanilla extract
Two 1/4-ounce packages unflavored gelatin
Warm chocolate fudge sauce, for drizzling

Steps:

  • Preheat the oven to 350 degrees F. Lightly spray the bottom and sides of a 9-by-13-inch metal baking pan with cooking spray. Line the pan with parchment, leaving at least a 2-inch overhang on all sides.
  • Prepare and bake the brownies in the prepared pan according to the package directions for a 9-by-13-inch baking pan. Let cool completely on a rack, about 1 hour.
  • Meanwhile, slice 5 to 6 strawberries into 1/8-inch-thick slices--you will need enough to fit around the edges of the pan; set aside. Leave the remaining strawberries whole.
  • Beat the cream cheese, sugar and 3 1/2 cups of the heavy cream in a large bowl with an electric mixer on medium speed until stiff peaks form, 3 to 4 minutes. Fold in the sour cream and vanilla until smooth.
  • Bring the remaining 1/2 cup heavy cream to a boil in a small saucepan, then whisk in the gelatin. Continue to whisk off heat until the gelatin is dissolved, 2 to 3 minutes. Fold the gelatin mixture into the cream cheese mixture until well combined.
  • Stand the sliced strawberries upside down around the perimeter of the pan with the flat/cut sides touching the side of the pan, cutting an extra strawberry or two if needed. Pour 3 cups of the cream cheese mixture on top of the brownies and use an offset spatula to spread and smooth it out. Press the remaining whole strawberries into the cream cheese upside down (pointed ends up); you should have about 8 rows of 5. Spread the remaining cream mixture on top of the strawberries and smooth out the top with an offset spatula. Chill until set, at least 2 hours and up to overnight.
  • When ready to serve, use the parchment overhang to remove the dessert from the pan and place onto a serving platter (trim the parchment from around the edges). Drizzle the top with chocolate fudge sauce and cut into bars.

3/4 cups all-purpose flour
2 tablespoons unsweetened cocoa powder
1/4 teaspoons fine salt

Steps:

  • For the brownies: Preheat the oven to 350 degrees F. Spray a 10-inch springform pan with nonstick baking spray.
  • Whisk together the flour, cocoa powder and salt in a medium bowl. Melt the butter and chocolate in a medium saucepan over medium heat, stirring frequently, until completely melted, then let cool for 10 minutes. Stir in the sugar and eggs. Add the flour mixture, and stir to combine. Pour brownie batter into the prepared pan and tap the pan gently to ensure the batter is even. Bake until the top is set and the edges start to pull away from the sides of the pan, about 30 minutes. Remove from the oven and let cool completely on a baking rack.
  • For the cheesecake: Meanwhile, beat the cream cheese with an electric mixer until smooth. Add the sugar and beat until light and fluffy, about 2 minutes. Add the sour cream and mix until just incorporated. Stir in the eggs and vanilla extract by hand, one by one, taking care not to overmix or your cheesecake will turn into a souffle.
  • Wrap the bottom of the pan and up the sides with foil and place in a roasting pan. Pour the cheesecake batter on top of the brownie layer and spread it evenly on top. Fill the roasting pan with water until it reaches halfway up the side of the springform pan. Bake until the center is jiggly but the surface is set, about 1 hour. Turn off the oven and leave the cheesecake inside for 30 minutes.
  • Remove the cheesecake from the oven and run a sharp knife around the edges of the cake to release from the pan. Let rest on a baking rack until completely cool. Cover and refrigerate for 8 hours or up to overnight before serving.

  • BROWNIE:.
  • Preheat oven to 350°F (176°C). Line a 9-inch (23cm) spring-form pan with parchment paper in the bottom and grease the sides.
  • Combine the butter, sugar and vanilla extract in a medium sized bowl.
  • Add the eggs and mix until well combined.
  • In another medium sized bowl, combine the flour, cocoa, baking powder and salt.
  • Add the dry ingredients to the egg mixture and mix until well combined.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.
  • Cheesecake Filling:.
  • In a large bowl, beat the cream cheese, sugar and flour on low speed until well completely combined and smooth. Be sure to use low speed to reduce the amount of air added to the batter, which can cause cracks. Scrape down the sides of the bowl.
  • Add the sour cream and mix on low speed until well combined.
  • In a small bowl, combine the Kahlua and coffee granules and stir until the granules are dissolved.
  • Add Kahlua mixture and vanilla extract to the cream cheese mixture and mix on low speed until well combined.
  • Add the eggs one at a time, mixing slowly to combine after each addition. Scrape down the sides of the bowl as needed to make sure everything is well combined.
  • When the brownie is done baking, reduce the oven temperature to 300°F (148°C). Remove the brownie from the oven and pour the cheesecake batter evenly over the brownie.
  • Wrap the outside of the pan with aluminum foil, then place the springform pan inside another larger pan. (See my tutorial for preventing springform pans from leaking.) Fill the outside pan with enough warm water to go about halfway up the sides of the springform pan. The water should not go above the top edge of the aluminum foil on the springform pan.
  • Bake for 1 hour 15 minutes. The center should be set, but still jiggly.
  • Turn off the oven and leave the door closed for 30 minutes. The cheesecake will continue to cook, but slowly begin to cool as well.
  • Crack the door of the oven for 30 minutes to allow the cheesecake to continue to cool slowly. This process helps prevent cracking.
  • Remove the cheesecake from the oven and water bath wrapping and refrigerate until firm, 5-6 hours or overnight. Once completely cool and firm, remove from the springform pan.
  • Chocolate Ganashe:.
  • Place the chocolate chips in a small heat proof bowl.
  • Combine the heavy whipping cream and Kahlua in a glass measuring cup heat just until it begins to boil.
  • Pour the hot liquid over the chocolate chips and allow to sit for 2-3 minutes, then whisk until smooth.
  • Pour the hot liquid over the chocolate chips and allow to sit for 2-3 minutes, then whisk until smooth.
  • Pour the chocolate ganache onto top of cheesecake and spread evenly.
  • Kahlua Whipped Cream:.
  • To make the whipped cream, add the heavy whipping cream, Kahlua and powdered sugar to a large mixer bowl. Whip on high speed until stiff peaks form.
  • Pipe the whipped cream onto the top of the cheesecake.
  • Sprinkle the top of the cheesecake with cocoa powder, if desired.
  • Refrigerate until ready to serve. Cheesecake is best for 3-5 days.

(There is also a 2nd version in my Cheesecake Collection ckbk) Here is a dessert with 2 of my favorite things, brownies and cheesecake. Could you ask for anything more? Well, maybe a large ice cold glass of milk! When I saw this in the latest Food & Family from Kraft, I had to share it!

1 (20 ounce) package brownie mix (13x9 inch pan, but disposable foil casserole pan is best)
1/2 cup oil (to prepare brownie mix)
1/4 cup water (to prepare brownie mix)
2 eggs (to prepare brownie mix)
4 (8 ounce) packages cream cheese
1 cup sugar
1 teaspoon vanilla
1/2 cup sour cream
3 eggs
2 ounces semi-sweet chocolate baking squares, melted and cooled (optional)

Steps:

  • PLEASE READ ALL DIRECTIONS BEFORE BEGINNING. THE PROCEDURE IS A BIT OUT OF THE ORDINARY.
  • Heat oven to 350º.
  • Line 13x9 inch pan with foil. I use a disposable foil casserole pan.
  • Grease or spray w/ cooking spray.
  • Make sure PAN IS DEEP, as cheesecake portion of this recipe tends to puff up.
  • When they are cool, put them in the fridge and they "calm down".
  • I also line any pan I use with foil, extending the foil over the edges. This makes it easy to get the whole thing out for slicing.
  • Prepare brownie mix according to directions on box and pour into pan.
  • Bake 15 minutes or until top is shiny and center is ALMOST set. At this point it is only partially done.
  • Beat cream cheese, sugar and vanilla until well blended.
  • Add sour cream; mix well.
  • Add eggs, one at a time, mixing on low speed after each egg to mix well.
  • Pour over partially cooked brownie batter in pan. (Filling will come almost to the top.).
  • Bake 40 minutes or until center of cheesecake part is almost set.
  • Run knife/spatula around edge to loosen cake.
  • After cooling, refrigerate 4 hours or overnight.
  • Drizzle the melted chocolate squares over top. Let stand until chocolate is firm.
  • Remove from pan using the foil to lift it out.
  • Dip a knife in hot water to cut these.
  • Cut into 16 pieces, or more, to serve.

  • Prepare the brownie batter and pour into greased springform pan.

  • Stir together butter, sugar and vanilla in large bowl with spoon or wire whisk. Add eggs; stir until well blended. Stir in flour, cocoa, baking powder and salt; blend well. Spread in prepared pan.
  • Bake 25 to 30 minutes or until brownie begins to pull away from side of pan. Meanwhile make cheesecake layer (see below).
  • Immediately after removing brownie from oven, sprinkle milk chocolate chips, peanut butter chips and peanut butter cups over brownie surface. Spoon cheesecake mixture over chips. Turn down oven 325°.
  • Cheesecake Filling:.(makes extra).
  • Beat cream cheese in bowl of electric mixer until smooth.
  • Add eggs, one at a time, beating well after each addition.
  • Add sugar, peanut butter and cream; mix until smooth.
  • Stir in vanilla.
  • Pour filling into prepared crust.
  • IF SOME BATTER IS LEFT OVER, EITHER STORE OR PUT IN SMALLER SPRINGFORM PAN.
  • Double-wrap springform pan with aluminum foil to prevent water seeping inches.
  • Place springform pan into a larger baking pan.
  • Pour hot water into the larger pan so that the water comes 1 inch up the sides of the springform pan.
  • Bake at 325 degrees 1-1/2 hours, or until firm and lightly browned.
  • Remove from the oven and allow to cool on a wire rack for one hour.
  • Run a knife along the edge of the cake to loosen it from the pan somewhat.
  • Refrigerate for at least 4 hours before decorating.
  • Decoration- (makes a lot extra-try using it on individual slices after cutting).
  • Remove cake from pan and put on a pretty plate.
  • Bring whipping cream to boil in a small saucepan.
  • Remove from heat and add semi-sweet and peanut butter chips. Stir, stir, stir until melted and smooth.
  • Drizzle over cake and then add peanut butter cup halves around the edge of the cake.

3/4 cup butter
3 cups sugar, divided
6 eggs, divided
2 tsp. vanilla, divided
1 cup flour
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 oz. BAKER'S Semi-Sweet Chocolate

Steps:

  • Heat oven to 350°F.
  • Line 13x9-inch pan with foil, with ends of foil extending over sides. Spray with cooking spray. Microwave unsweetened chocolate and butter in microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted and mixture is well blended. Add 2 cups sugar; mix well. Stir in 3 eggs and 1 tsp. vanilla. Add flour; mix well. Spread onto bottom of prepared pan.
  • Bake 20 min. Meanwhile, beat cream cheese, and remaining sugar and vanilla in large bowl with mixer until blended. Add sour cream; mix well. Add remaining eggs, 1 at a time, mixing on low speed after each just until blended.
  • Pour cream cheese batter over partially baked brownie. (Cream cheese mixture will come almost to top of pan.) Bake 40 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool.
  • Refrigerate cheesecake 4 hours. Let stand at room temperature 30 min. before serving. Meanwhile, melt semi-sweet chocolate as directed on package.
  • Use foil handles to lift cheesecake from pan. Drizzle with chocolate; let stand until firm before cutting cheesecake into bars.
