SLOW COOKER CHICKEN AND RICE



Slow Cooker Chicken and Rice image

Tender, juicy chicken, fluffy white rice, and a thick, creamy gravy come together in this simple Slow Cooker Chicken and Rice recipe.

1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
1 (10.5 oz) can condensed cream of chicken soup, NOT diluted
1 cup chicken broth
½ cup finely-diced onion
½ cup finely-diced celery
1 teaspoon minced fresh garlic
¼ teaspoon dried oregano
¼ teaspoon dried thyme
¼ teaspoon paprika
8 bone-in chicken thighs, skin removed, trimmed ((about 3 ½ lbs. total))
Salt and pepper
1 ½ cups instant white rice ((such as Minute Rice))
Chopped fresh parsley

Steps:

  • Place condensed soups, chicken broth, onion, celery, garlic, oregano, thyme and paprika in a slow cooker; whisk to combine. Season chicken with salt and pepper and nestle into the slow cooker. Cover and cook until chicken is tender, about 2 hours on HIGH or 4 hours on LOW.
  • Transfer chicken to a plate and use two forks to shred the meat, discarding the bones. Stir rice into slow cooker, season with a touch of salt and pepper to taste (if necessary), and add the chicken back on top of the rice, along with any accumulated juices from the plate. Cover and cook on HIGH until rice is tender, about 20-25 minutes.
  • Use a fork to fluff the rice and combine with the chicken. Transfer to individual serving plates and garnish with fresh parsley.

1 ½ cups long grain brown rice
1 onion (diced)
2 carrots (diced)
2 cloves garlic (minced)
½ teaspoon salt
½ teaspoon ground black pepper
3 cups chicken broth
10.5 ounces cream of chicken soup (1 can)
2 boneless, skinless chicken breasts (diced into bite sized pieces)
1 cup frozen peas
2 cups shredded cheddar cheese (divided)
Fresh parsley (for garnish)

Steps:

  • Spray the slow cooker insert with nonstick spray. Add the rice, onion, carrots, garlic, salt, pepper, broth, cream of chicken soup, and diced chicken. Stir until well combined.
  • Cover and cook on high for 3 ½ to 4 hours until both the chicken is cooked through and the rice has absorbed all the liquid.
  • Add the frozen peas and half of the shredded cheese. Stir until well mixed.
  • Top with the remaining cheese, cover, and cook on high until the cheese is melted, about 10 more minutes. Garnish with parsley and serve.

This is a very creamy, rich chicken and rice recipe that uses a Crock pot. A friend brought this meal over to us shortly after our youngest son was born and we liked it so much we begged for the recipe.

4 -6 chicken breasts
1/2 cup butter
1 (1 ounce) package dried Italian salad dressing mix
1 (8 ounce) package cream cheese, softened
1 (10 3/4 ounce) can cream of mushroom soup
6 cups cooked rice

Steps:

  • Add chicken, butter, and seasoning to a Crock pot.
  • Cook on a low setting for 6-8 hours, high setting for 2-3 hours.
  • One hour before you eat, add cream cheese & soup.
  • Let melt, then stir to combine.
  • Pull chicken into smaller pieces using a pair of forks.
  • Serve over rice.

1 roasting chicken, without gibblets
1 whole onion, quartered
4 garlic cloves, cut in half
15 whole baby carrots
1/2 teaspoon dried sage
1/2 teaspoon sweet-hot paprika
1 teaspoon salt
1 teaspoon pepper
3 cups water
1 lime, juice of
1 cup rice

Steps:

  • Place the cleaned chicken in the crock pot.
  • Add the onion, garlic, carrots, sage, paprika, salt pepper, lime juice & water.
  • Cook on Low for 8 hours.
  • Turn heat up to high, add the rice and cook until tender. About 30 minutes.

  • Pat the chicken thighs dry with a paper towel and drizzle with 1 tablespoon of oil. Then, sprinkle with 1 1/2 teaspoon Kosher salt, 1 teaspoon pepper, garlic powder, onion powder, and rub all over to evenly adhere.
  • Add the remaining 2 tablespoons of oil to a large sauté pan over medium-high heat. Once it has come to temperature, add the chicken thighs skin-side down and sear 3 minutes. Then, turn the chicken and sear 2 minutes. Take care not to overcrowd the pan.
  • Add the chicken to the slow cooker and set aside. Reduce the heat to medium and the onion to the pan. Sauté until softened, about 3-4 minutes. Then, stir in the flour. Add the broth a splash at a time, whisking well after each addition. Once the mixture resembles pudding, you may add the broth and whisk to combine. Stir in remaining 1 teaspoon Kosher salt and 1/2 teaspoon pepper, and transfer the gravy to the slow cooker.
