OVEN BAKED CRISPY BREADED SHRIMP
Crispy breaded shrimp are whole shrimp coated in panko breadcrumbs then baked to give you succulent juicy shrimp with a crispy coating. Ideal for appetizers and parties. An incredibly easy and quick recipe. Oh so good! No frying either!

- Preheat oven to 190 C or 375 F. Line a baking tray with foil and lightly brush a little olive oil (to stop from sticking later)
- Remove the shell from the shrimp. I like to leave a little bit of shell on at the tail end so they look nice and easier to handle when you eat them. Then devein by removing the black part along the centre back of each shrimp. Wash thoroughly and pat dry with kitchen paper. Sprinkle some salt and pepper on the shrimp.
- In a bowl, beat the egg. In a separate bowl, add the breadcrumbs.
- Dip the shrimp in the egg, and then the breadcrumbs. Push the breadcrumbs gently on each shrimp so it sticks. Then repeat, by dipping again in the egg and then the breadcrumbs. This is called double coating. When done, arrange the shrimp on the baking tray, and drizzle a little olive oil over the shrimp.
- Place in the oven and bake for 8 - 10 minutes or until you can see they have turned pink. (see the tails of the shrimp on my photos). If you cook them for too long, they can turn out a little chewy and rubbery, so keep an eye on the time and don't forget them!
- Serve hot with your favourite dips.

EASY CRISPY BREADED SHRIMP
This crispy fried shrimp recipe is breaded with a secret ingredient: Ritz crackers! Toss together this breaded shrimp for a simple family dinner.

- Pour about 3 inches of oil into a deep heavy-duty skillet or deep fryer. Heat the oil to 375 degrees.
- Meanwhile, in a bowl mix together the crushed Ritz crackers, flour, 1/4 teaspoon black pepper and seasoned salt.
- In another bowl mix together the milk, egg, Tabasco sauce, and remaining 1/4 teaspoon black pepper until combined.
- Dip the shrimp into the egg & milk mixture, then dredge into the cracker mixture.
- Carefully drop the shrimp into hot oil.
- Fry in batches for about 2-3 minutes or until golden brown.
- Drain the cooked shrimp on a wire rack with paper towels underneath. This will keep them crisp!

- Rinse shrimp under cold running water and pat dry.
- On a shallow plate, combine flour, cornstarch, salt, pepper, paprika, and garlic powder. Stir until evenly dispersed.
- In a large bowl, combine eggs, milk, and hot sauce. Whisk until well blended and frothy.
- In a deep, wide skillet over medium heat, heat about 3 inches deep of oil.
- Working in batches, lightly dredge shrimps in flour mixture, shaking off excess.
- Dip in the egg mixture and then dredge again in flour mixture, patting down flour onto shrimp.
- Gently add into hot oil one by one (to prevent clumping) and deep-fry, turning as needed, for about 3 to 5 minutes or until golden and crisp.
- With a slotted spoon, remove from pan and drain on a wire rack set over a baking sheet. Season with chili powder and drizzle with lime juice, if desired. Serve immediately.

Steps:
- Add flour(1 and 1/2 cup) to a deep flat container, season with salt(1 tsp), red chilli powder(1 tsp or substitute with old bay seasoning, sweet paprika).
- Shake and combine the flour with the seasoning.
- In a medium-sized bowl, beat eggs(2) and set close to the seasoned flour container.
- Add breadcrumbs(2cups) into a medium-sized bowl, and set close to the beaten egg bowl.
- Have an extra plate set to hold the floured and breaded shrimp.
- Since you will be coating the shrimp and this can be a little messy, you can always wear disposable gloves.
- Make sure the shrimp are dry, add them to the seasoned flour, and coat them well on both sides.
- Shake off any excess flour and then dip the shrimp in egg.
- Press each side so the shrimp is coated well with the breadcrumbs.
- Transfer to the plate.
- Coat each of the shrimp with flour, egg, and breadcrumbs and place them on the plate.
- Prepare a deep tray with paper towels to absorb excess oil.
- Add oil to a deep frying pan, bring the oil to a steady temperature. Drop a few bread crumbs into the oil and wait for them to sizzle. The breadcrumbs sizzling is a sign that the oil has reached the proper temperature.
- Begin with adding one breaded shrimp and fry it until it turns golden brown which will take about 1 minute and 30 seconds for both sides.
- Once you have a feel of the correct temperature and how long to fry the shrimp.
- Deep fry all the shrimp in batches of 3 or 4.
- Transfer onto kitchen towels to remove any excess oil.
- Serve with your favorite hot sauce and lime wedges.
