Steps:
- Sautee the onions, carrots (omit if strict keto), celery, and garlic in a heavy-bottomed pan over medium-high heat in the oil until translucent, about 4-6 minutes.
- Add the chicken stock and bring to a simmer. Simmer for about 10-12 minutes or until veggies are tender.
- Chunk the salmon and add it to the simmering pot.
- Add the cream and dill and season with salt and pepper. Add more to suit your taste.
- Serve with some of the chopped parsley on top.

- 1. Place spinach in a strainer, and using a clean kitchen towel (or paper towels) squeeze excess liquid out of the spinach. Season the salmon steaks with salt and pepper, and cook. I used the microwave to save time, but you can bake them. Allow to cool and then flake them using a fork.
- 2. In a medium-sized saucepan over medium low to medium heat, melt the butter. Add the onion and celery, and cook until softened, about 5-7 minutes.
- 3. Add the half and half, cream, flaked salmon, drained spinach, salt, thyme, and nutmeg to saucepan. Increase heat to medium, and cook just until heated through, about 6-7 minutes. Serve and enjoy!

Remove the salmon to a clean cutting board. Flake into bite-size pieces with a fork.
- Stir potato flakes (or leftover mashed potatoes), dill (or tarragon) and mustard into the soup until well blended. Return to a simmer. Add the salmon and reheat. Season with salt and pepper.
