2 tablespoon butter (unsalted)
1 pound chicken breasts (boneless and skinless, cut into 1 inch pieces, about 2)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)

2 cups ricotta cheese
1 cup heavy cream
2/3 cup Parmesan cheese (freshly grated, plus extra to serve)
1 tablespoon parsley (fresh, chopped, for garnish)

CHICKEN FETTUCCINE ALFREDO

Chicken Fettuccine Alfredo image

Classic and easy to make, this version of Alfredo doesn't use flour to thicken the sauce. Instead, it relies on a slight simmer and a heavy dose of cheese.

Provided by Food Network Kitchen

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 8

Kosher salt and freshly ground black pepper
12 ounces fettuccine
Olive oil, for tossing
12 ounces boneless, skinless chicken breast (about 2)
1 stick (8 tablespoons) unsalted butter
2 cups heavy cream
2 pinches freshly grated nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
  • Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
  • Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. Transfer the chicken to a medium bowl.
  • Reduce the heat to medium. Add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce just warm.
  • Whisk the Parmigiano-Reggiano into the sauce. Add the chicken and cooked pasta and toss well. Season with salt and pepper. Serve hot in heated bowls.

Chicken and Broccoli Alfredo Casserole Recipe image

Number Of Ingredients 12

2 1/2 cups uncooked pasta (not quite the entire box- I used shells, but any kind would work! Whole wheat works great too)
2 cups broccoli (fresh or frozen)
1 1/2 lbs chicken breasts, cooked and chopped into bite-size pieces
1 (16 oz) jar alfredo sauce
1/2 cup shredded Parmesan cheese
1 1/2 cups mozzarella cheese

1/4 cup shredded Parmesan cheese

  • If using fresh broccoli, cut into bite-size pieces and place in a microwaveable-safe bowl. Add 2-3 tablespoons of water and cover the bowl with plastic wrap. Microwave for 3-4 minutes or until it reaches your desired crunchiness. If using frozen broccoli, prepare according to directions on package. Once finished cooking, place broccoli in the bowl with the pasta.
  • Dump the chicken, alfredo sauce, 1/2 cup Parmesan cheese and mozzarella cheese into the bowl and mix with the pasta and broccoli. Season with garlic salt, basil, and salt and pepper.

DUMP AND BAKE CHICKEN ALFREDO PASTA CASSEROLE

Dump and Bake Chicken Alfredo Pasta Casserole image

You only need 10 minutes of prep and one dish for this easy Dump-and-Bake Chicken Alfredo Pasta Casserole. You don't even have to boil the pasta!

Provided by Blair Lonergan

Categories     Dinner

Time 48m

Number Of Ingredients 7

1 (16 ounce) package uncooked rotini pasta
22 oz jar Alfredo sauce (about 1 very large 22-ounce jar or 1 ½ 15-ounce jars) ((approximately 2 ½ cups total))
3 cups chicken stock
2 cups diced rotisserie chicken ((or other diced cooked chicken))
2 teaspoons minced garlic
2 cups shredded mozzarella ((or Italian blend cheese))
Optional: Parmesan cheese and fresh chopped herbs ((such as basil, oregano, and parsley for garnish))

Steps:

  • Preheat oven to 425°F (220°C).
  • In a large baking dish, stir together uncooked pasta, Alfredo sauce, chicken stock, chicken and garlic. Cover tightly with aluminum foil and bake for 30 minutes.
  • Uncover; give the pasta a good stir. At this point you should check the pasta to make sure that it is al dente (firm but with a tender bite). I have had good luck with the 30-minute cook time; however, some readers have noted that it required about 10 or 15 minutes longer. If it's still too hard after 30 minutes, just cover the dish and return to the oven until pasta is al dente. Then move on to the next step.
  • Sprinkle mozzarella over the top. Bake uncovered for 8-10 more minutes (or until cheese is melted and pasta is tender).
  • Garnish with freshly grated Parmesan or fresh chopped herbs, if desired.

CHEESY, CREAMY ALFREDO CHICKEN CASSEROLE - FOREVERMAMA

Cheesy, Creamy Alfredo Chicken Casserole - Forevermama image

Nothing says comfort like a good chicken casserole. Perfect for using left-over chicken or turkey! Hey ladies & gents, use it when you don't know what to do with all the leftover Thanksgiving turkey. I normally cut up the chicken and mix the sauce ingredients the night before. Next day - all there is to do is put everything together, stick it in the oven and voila, dinner is ready in no time for those rushed weekday nights! Note that this serves 10ish, therefore you may want to halve it depending on size of family.

Number Of Ingredients 13

1 (16 ounce) package elbow macaroni or 1 (16 ounce) package penne pasta
2 cups mozzarella cheese, grated
1 small rotisserie chicken, chopped into large chunks
2 (14 ounce) jars alfredo sauce
1 (8 ounce) container sour cream (I imagine yogurt can be used to save on calories, but because I haven't used it, not sure of results)
1 (15 ounce) container ricotta cheese
2 teaspoons garlic and parsley seasoning (or 2 cloves of garlic, minced)
3/4-1 cup grated parmesan cheese
2 tablespoons onion powder
3 teaspoons lemon pepper seasoning (optional)
freshly grated black pepper (to taste)
1/4 teaspoon cayenne
1 cup fresh parsley, chopped

Steps:

  • Cook pasta according to package directions (adding salt and oil to water); drain and set aside. Grate mozzarella cheese and set aside.
  • In a bowl, mix together all remaining ingredients. Pour alfredo cheese mixture over chicken and mix thoroughly. (if making the night before, store bowl with alfredo/chicken mixture, another separate bowl with pasta and another bowl with mozzarella in the refrigerator = total of 3 bowls).
  • Preheat oven to 350 degrees Fahrenheit. Grease a 9 x 13" casserole dish.
  • Mix alfredo/chicken mixture with pasta and distribute evenly. Place in a prepared casserole dish. Sprinkle evenly with mozzarella cheese over the top of chicken mixture.

KETO CHICKEN ALFREDO WITH BROCCOLI BAKE

Keto Chicken Alfredo with Broccoli Bake image

Provided by Kasey Trenum

Categories     Dinner     lunch     Main Course

Time 30m

Number Of Ingredients 14

3 tbsp butter, divided
2.5 lbs boneless skinless chicken breast, sliced
1/2 tsp salt
1/4 tsp pepper
2 tbsp chicken broth
12 oz steam bag of frozen broccoli
3 garlic cloves, minced
1 oz cream cheese, softened
1 cup heavy whipping cream
1/2 tsp Italian seasoning
2/3 cup parmesan cheese, grated
1/4 cup pepper jack cheese, grated
3/4 cup mozzarella cheese, grated
1/4 tsp basil

Steps:

  • Melt 1 tbsp butter in a 10.25 oven-safe skillet. (I use a cast-iron skillet)
  • Season sliced chicken with salt & pepper before placing the chicken in the skillet. Sear on both sides.
  • Cover the skillet with a lid and simmer on low until the chicken is no longer pink.
  • Remove chicken from the skillet and set aside.
  • Deglaze the pan by pouring 2 tbsp chicken broth into the hot skillet then scraping the bits off the bottom with a wooden spoon. Leave the bits in the pan as they are extra flavorful.
  • Pop the broccoli in the microwave and follow package directions to steam. Or, if you prefer, you can steam in boiling water on the stove.
  • While the broccoli is cooking, add 2 tbsp butter to the skillet along with the minced garlic. Saute for 2 minutes or until fragrant.
  • Add softened cream cheese, heavy whipping cream, and Italian seasoning to the minced garlic, then stir continuously with a whisk on medium heat until the ingredients are thoroughly combined.
  • Reduce to medium/low heat and allow the sauce to simmer gently boiling until the heavy whipping cream has reduced and thickened. Keep whisking so that it doesn't stick to the bottom of the pan. It will take a few minutes for the sauce to reduce and thicken.
  • Once it has thickened, add the parmesan and pepper jack cheese, then continue to stir until the cheeses melt and the sauce is smooth.
  • Drain steamed broccoli.
  • Add the chicken and broccoli to keto alfredo sauce and stir until thoroughly combined.
  • Sprinkle mozzarella cheese on the low-carb chicken alfredo broccoli mixture, then sprinkle basil on top.
  • Pop the skillet in the oven on the top rack under the broiler for 1-2 minutes or until the mozzarella cheese begins to bubble. While you could leave it on the stove to melt, I found that baking the cheese from the top in the oven produced the best results for this dish.

CHICKEN ALFREDO CASSEROLE

Chicken Alfredo Casserole image

This family-friendly casserole is great for a large gathering. You can make and assemble it a day ahead, just bring it back to room temperature before baking. We like boneless skinless chicken thighs because they cook quickly and stay moist and tender.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h10m

Yield 8 to 10 servings

Number Of Ingredients 16

4 tablespoons unsalted butter, plus more for the baking dish
Kosher salt
1 1/2 pounds skinless, boneless chicken thighs, cut into large chunks
2 1/2 cups low-sodium chicken broth
6 cloves garlic (4 crushed, 2 chopped)
3 wide strips lemon zest, plus 1 tablespoon lemon juice
2 sprigs rosemary
2 bay leaves
1 pound penne
6 cups small broccoli florets (about 1 pound)
4 tablespoons all-purpose flour
2 cups heavy cream
Freshly ground pepper
1 1/4 cups grated Parmesan cheese
1/4 cup chopped fresh parsley
2 cups shredded low-moisture mozzarella cheese

Steps:

  • Preheat the oven to 400˚ F. Butter an 11-by-14-inch or other 4-quart baking dish. Bring a large pot of salted water to a boil.
  • Put the chicken in a dutch oven or other large pot, then add the chicken broth, crushed garlic, lemon zest, rosemary sprigs and bay leaves. Partially cover and bring to a simmer over medium-low heat. Cook, partially covered, until the chicken is tender, 20 to 22 minutes. Strain through a fine-mesh sieve (you should have 2 cups liquid; if necessary, add a little water to make 2 cups). When the chicken is cool enough to handle, tear or shred into small pieces. Wipe the dutch oven clean.
  • Meanwhile, add the pasta to the boiling water and cook until just al dente, adding the broccoli during the last 2 minutes of cooking. Drain the pasta and broccoli in a colander and rinse with cold water to stop the cooking. Let drain in the colander while you make the sauce.
  • Melt the butter in the Dutch oven over medium heat. Add the chopped garlic and cook until sizzling, about 30 seconds. Sprinkle in the flour and stir to make a paste; cook until the flour is no longer raw, 1 to 2 minutes. Whisk in the reserved 2 cups cooking liquid and the heavy cream; season with 1 teaspoon salt and a few grinds of pepper. Return to a simmer, whisking to make a smooth sauce. Cook over low heat until thickened, 3 to 4 minutes.
  • Remove the pot from the heat. Stir in 1 cup Parmesan, the parsley and lemon juice. Add the chicken, pasta and broccoli and stir to coat. Transfer to the baking dish and sprinkle with the remaining 1/4 cup Parmesan and the mozzarella. Bake until the top is golden and the edges are bubbly, about 25 minutes. Let rest 5 minutes before serving.

CHICKEN ALFREDO BAKE

Chicken Alfredo Bake image

Creamy and cheesy, this Chicken Alfredo Bake is easy to make with a homemade alfredo sauce, cooked chicken, and frozen broccoli. A cozy casserole for dinner any night!

Provided by Amy

Categories     Main Course

Time 45m

Number Of Ingredients 15

2 tablespoons butter
4 cloves garlic ((minced))
3 cups low-sodium chicken broth
2 1/2 cups half-n-half
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon Kosher salt ((not table salt))
1/4 teaspoon black pepper
pinch of crushed red pepper flakes
4 cups uncooked fusilli pasta
2 1/2 cups cooked chopped chicken ((baked or rotisserie))
2 cups frozen broccoli florets ((thawed))
2 cups Parmigiano-Reggiano cheese ((freshly grated, divided))
2 cups mozzarella cheese ((freshly grated, divided))
1 handful fresh chopped parsley

Steps:

  • Preheat oven to 375 degrees F. Coat a 9x13 baking dish with nonstick cooking spray.
  • Add the butter to a large nonstick saucepan, over medium-low heat; whisk until butter has melted. Add in garlic and cook until fragrant, about 30 seconds.
  • Slowly whisk in the chicken broth and half-n-half. Stir in the garlic powder, Italian seasoning, kosher salt, pepper, and crushed red pepper flakes.
  • Add in the pasta and bring to a boil. (It will look like a ton of liquid with little pasta, but don't worry, the pasta will absorb a lot of it as it simmers.)
  • Reduce heat to a gentle bubbly simmer and cook for about 12-15 minutes until pasta is al dente, stirring every 5 minutes or so to prevent sticking and bubbling over.
  • Turn off the heat and stir in the chicken, broccoli, and 1 cup parmesan cheese until combined and well coated.
  • Pour half of the pasta mixture into the prepared baking dish.
  • Sprinkle evenly with 1 cup mozzarella cheese.
  • Layer the remaining half of the pasta evenly on top.
  • Sprinkle evenly with the remaining 1 cup of mozzarella and 1 cup Parmesan.
  • Cover with foil and transfer to the oven for 10-15 minutes until the cheese is melted and bubbly.
  • Remove foil and place under the broiler for 5 minutes until golden (watch it carefully, to make sure it doesn't burn.)
  • Sprinkle with fresh chopped parsley, serve, and enjoy!
  • NOTE: Avoid pre-grated packaged Parmesan since it won't melt properly and the dish will be overly salty.
  • NOTE: for questions about pasta variations, cooking it separately, and tips for success, please refer to the full article.
